Cut 5 chicken breasts. Separate the fillets from the bones.

Cut into 100 pieces (each breast into 20 pieces respectively).

Peel two onions (I have a white onion). Grind on a coarse grater.

Using the same grater, remove the zest from the lemon and squeeze out all the juice.

Add spices, a teaspoon of salt, two tablespoons of vegetable oil.

Stir and refrigerate for 2-3 hours.

Remove the skin from three legs with a stocking.

Separate the meat from the bones and cut into small pieces.

Pour the remaining bones from the legs and breast with water, salt and cook over low heat.

When the bones are well cooked, cool them. Then remove the remaining chicken from the bones. There will be enough of it.

Lettuce peppers are of two types. Two large red peppers, and 5 small green peppers.

Rinse the red pepper, cut in half and remove the seeds and stalk.

Finely chop half of the pepper at once.

With the other three halves, do this: cut the even pulp in large pieces, often chop the rest finely as at the very beginning.

Set aside the coarse pieces of pepper (25 pieces). And add small pieces to chopped meat from the legs.

Adyghe cheese. Separate 1/3 and set aside separately. Cut the remaining 2/3 into small cubes.

Mix together finely chopped chicken legs, Adyghe cheese, red salad pepper. Add one raw egg and a teaspoon of salt. Stir well.

Stuff the legs with the resulting filling, seal the holes with toothpicks.

Transfer the legs to a saucepan, pour cold water, lightly salt. Cook over low heat after boiling for another 40-45 minutes. Then cool it down.

Remove the toothpicks from the finished, cooled chicken legs and cut them into slices.

Cut the fish fillet into thin cubes. Add 2 teaspoons of ready-made adjika and stir gently.

Refrigerate the fish.

Knead the dough: half a liter of milk, two cups of water, salt, sugar, a pinch of baking soda, 2-3 tablespoons of vegetable oil and a pound of flour.

Fry 20 crêpes.

By the way, the best device for turning pancakes in a pan is a Chinese stick. Try it!

From hard cheese also separate 1/3. Save most of it for the salad.

Smaller piece of hard cheese and leftover piece Adyghe cheese chop on a grater.

Add finely chopped green onions(2-3 feathers).

Chop boiled chicken meat (with bones) with a knife.

Transfer to a bowl of cheese. Add a teaspoon of chili sauce.

Stir the filling.

Stuff the pancakes and roll.

Slice each pancake in half, diagonally.

I cooked "for export" so I packed everything at once in containers or under plastic wrap.

For the salad:

Cut green salad peppers into strips and steam with a little water.

Peel and boil the squid. Cut into strips. Add 2/3 of coarse grated hard cheese, 2-3 cloves of garlic passed through a press, finely chopped green onions, steamed salad peppers.

Season with mayonnaise and stir.

Then fill the tartlets with this salad. But just before serving.

String the pickled chicken breast onto 20 wooden skewers, 5 pieces for each skewer.

Place on a wire rack and bake in the preheated oven for 30 minutes. Not more. Do not expect the chicken to brown - otherwise dry the kebabs.

Pour some of the remaining half a kilogram of flour (about 4 tablespoons) onto a plate for breading.

Pour the rest of the flour into a deep bowl. Add two raw eggs, a teaspoon of salt. Pour in half a liter of light, weak beer.

Whisk the batter well.

From a whole liter bottle of vegetable oil, you should have more than 3/4 left. Pour the oil into a suitable saucepan or saucepan (mine is a wok). And heat to deep fat.

Breaded pieces of fish in flour, then dip in batter and deep-fry.

Remove from the oil with a slotted spoon. I got 40 pieces.

And the last thing is sandwiches.

Hard boil the remaining 5 eggs (out of ten).

Bake the lettuce, cut into large pieces, in the oven.

Two rye loaves, two fresh cucumber and cut almost 400 grams of semi-smoked sausage. You should end up with 25 pieces (slices). Cut each boiled egg into 5 pieces too.

Slices rye loaf grease with butter.

On top of the butter is a slice of cucumber.

Sprigs of parsley - so that they protrude slightly to the side.

Pieces of sausage.

Spread the baked salad peppers on top of the sausage.

Pierce the sandwiches with skewers with pitted olives strung on them.

I cooked from 8 am to 2 pm, slowly, with coffee breaks and chatting on the phone.

  • Cooked sausage (doctor's) - 0,5 small loaf;

Remember that you always want to drink at a plentiful table and 1 glass of compote or juice will not be enough for a guest (consider that everyone will drink 2-3 glasses).

  • Alcohol: wine, martini, vodka - whatever you like. We have 1 bottle each: white and red wine (dry and semi-sweet), martini bianco. We drank a little, but everyone had a choice. Focus on your company.
  • Juice - 2-4 liters(orange, grapefruit, apple, multifruit, tomato) - whatever you like. Can - three-liter jar homemade compote.
  • Mineral water - 2 bottles 1.5 liters each.
  • Tea - package... Perhaps coffee (we got by with regular Ahmad tea);
  • Sugar - package lump (refined) or 0.5 kg of ordinary bulk.

Hercules or semolina- it lies right next to it (you will need a couple of handfuls in cutlets). I took a package of rolled oats, then the owners will cook porridge from the leftovers.

Sweet

  • Cake - 1 piece(we had 800 g of honey-sour cream, the most common, similar to homemade).
  • Candies - 500 g... I bought by weight, 3 types - Gulliver (cool, large), Mishka (good) and some ordinary ones. You can just a box or do without the candy.

Bread

Take everything in slices, remember that we have no time.

Procedure

    Stewed cutlets

    Hard boil eggs- Cook 9 pieces, the tenth raw - into minced meat. Put in cold water, bring to a boil, cook for 10-12 minutes. Cool in cold water.

  • Prepare minced meat for cutlets: break 1 egg into minced meat, add rolled oats (1/2 or 2/3 cup), grate a couple of garlic cloves (fine grater) and 1 onion (coarse grater) into it. Add a pinch of basil. Salt. Knead. Let it stand while we peel the potatoes - the flakes will swell and absorb excess moisture.
  • Lightly salted cucumbers cook and then - peel potatoes(put in water, cook for 40-50 minutes before the arrival of guests). Fast cooking lightly salted cucumbers in slices: wash, cut off the ends. Cut each cucumber in half and cut the rugs into 4 slices. Throw the slices (as you cut them) into a container or jar and add some salt on top. Several sprigs of dill and 2-3 cloves of garlic - chop, add to the cucumbers. Close the lid and shake vigorously for 2-3 minutes. Then leave at room temperature before serving (under tight closed lid). From time to time you can shake (as you remember them - shake them, they will be salted better).

    Lightly salted cucumbers

  • Fry cutlets- heat oil in a frying pan, form cutlets and fry them on both sides until a small crust appears. Fried - put in a saucepan, at the bottom of which a layer of oil is poured. When all the cutlets are in the pan, add 2/3 cups of cool water, cover with a lid (or slightly open it if there is no hole in the lid for steam to escape so that the water gradually evaporates) and simmer over low heat until cutlet odors appear (30 minutes) ... Make sure not to burn.
  • Eggs stuffed with salad

    Stuffing eggs- Peel hard-boiled eggs, cut into halves. Take out the yolks, mash them with a fork. Add finely grated: processed cheese and 2 cloves of garlic, finely chopped onion (1/2 head). Mix. Season with a little mayonnaise. Stuff the eggs with the resulting salad (in 1 egg - 1 teaspoon with top). No need to ram, let them be with a slide. I decorated it with dill and a slice of sweet pepper (yes, we did not buy it, I found it in the owner's refrigerator, but this is not necessary). 4 eggs fit on a dessert plate (7 halves in a circle + 1 - in the center), I had 9 (18 halves), the extra one was squeezed somehow. Before serving, each plate can be placed in a plastic bag (so that the bag does not come into contact with the eggs on top, let air in there). And put in the refrigerator before serving.

  • Chop sausage and cheese... I cut the sausage loaf lengthwise into 2 parts and then - in thin semicircles across the loaf. You probably cut the same way. Put the slices on plates, put them in bags and also put them in the refrigerator so that the slices do not deteriorate and wither.
  • Make pineapple salad... Put pineapples in a bowl (pieces or cut into slices), grate cheese (hard, like Russian) - a coarse grater, garlic (2 cloves) - a fine grater. Stir closer to serving, season with mayonnaise.

Along the way, you need to set the table - entrust it to someone from your family or run yourself in between cooking. Put the table, cover with a tablecloth, arrange the plates, lay out the napkins (put additional ones in the napkin holder), forks. Put on glasses and glasses. Transfer drinks to the table. Put the bread on a plate (cover with a napkin or also put it in a bag for now).

  • Build a table: gradually lay out everything ready meals in salad bowls and plates and transfer to the table. You can immediately put bowls of olives and olives (they will not spoil); pickled tomato cucumbers; put the herring in the herring maker, add the onion chopped in semicircles to it (half of stuffed eggs). The cutlets will just reach, the potatoes will be boiled (drain the water, salt, add oil, heat). I also cut a lemon for tea (I sprinkled sugar on the circles to make it tastier, but whoever likes it). Take salads and cold cuts out of the refrigerator right before the arrival of guests so as not to spoil.
