1. "Rainbow" - one of a series of salads that are laid out in the form of food slides. For such a salad, you should choose products of different colors, but harmonious in taste. Cutting can be made in the form of strips or small cubes. For salad dressing, a thick mayonnaise or sauce is chosen, which is laid out in the center and in this form the salad is served on the table. Ingredients

- Crab sticks - 1 pack (240g)

- Canned corn - 1 can (380g)

Cut the cucumbers first. I try to choose young, small ones. Before cutting into cubes, I recommend peeling the skin if the cucumbers are purchased. If you take cucumbers from your own garden, then you can not be afraid of nitrates, and therefore not peel!

2. Pre-defrost the crab sticks, taking them out of the package. In principle, I do not buy this product by weight, as I believe that vacuum packaging provides the necessary antibacterial protection during storage. Cut the sticks into small pieces.

3. Then finely chop the Chinese cabbage. There is no additional need to crush it, otherwise it will lose juice and will not crunch pleasantly in the salad.

4. Next, combine all the ingredients in a salad bowl by adding canned corn. Season with mayonnaise and salt to taste. I prefer easy option of this salad, so I always take homemade low-fat mayonnaise. Who are cucumbers?

Scientists believe that the homeland of cucumbers is India, it was there that they were born over 6 thousand years ago and subsequently it was from there that they began their march around the world. By the way, in the same place, at the foot of the Himalayas, cucumbers still grow in natural conditions - a savage. Like weeds - not cultivated or cultivated by anyone.

In addition, it is curious to know that cucumbers are those few fruits that a person eats in an unripe form. If you let the cucumbers "come to readiness" in the garden, they will acquire a tough skin, large seeds and a dull, insipid taste and not juicy pulp at all. It is for this reason that the plant got its name: in Greek, cucumbers sound like "aguros", which literally means "unripe", "unripe".

Thirdly, such a salad is a convenient basis for winter improvisations: it can be mixed with cabbage and carrots, varied with radish and pomegranate seeds, and ennobled with blue sweet onions and olives.

Ingredients:
200 g odorless vegetable oil;
4 kg of cucumbers;
1 kg of onions;
200 g sugar;
8 tbsp. l. salt;
8 tbsp. l. table vinegar (6-9%).

Wash cucumbers, dry and cut into slices up to 4 mm thick. Cut the peeled onion into thin half rings. Put vegetables in a large bowl, mix with sugar, salt, vinegar. Add oil and leave the salad for 3 hours in a cool place, stirring occasionally.

After the indicated time, we lay out the cucumber salad in sterilized half-liter jars, fill it with the released juice from the bowl in which the cucumbers were pickled. Sterilize for 15 minutes, then close the jars with lids and cover with blankets. After a day, the cans can be rearranged for storage in the pantry.

Onion salad with cucumbers for the winter

Shift the focus to onions - and you will get an original winter snack that harmonizes wonderfully with boiled potatoes, wheat porridge and even a piece of the present rye bread... An absolutely simple food, but in this simplicity there is an abyss of taste! A special plus of the recipe - they are suitable for this salad large cucumbers, which the hostesses do not really like. In general, if you got a bucket of variegated green "comrades", feel free to select those that are larger, and start canning!

Ingredients:
2.5 kg of cucumbers;
1 kg of onions;

1.5 liters of water;

Wash cucumbers, dry them, peel off the skin if necessary and desired. Cut into circles, thickness - up to 5 mm (it is better to focus on 3-4 mm, large chunks cucumbers may not "reach" until winter).

Peel the onion and also cut into rings - thin and beautiful.

In sterilized jars, carefully lay out the cucumbers, alternating them with onions. Pour boiling water over the cucumbers - to the edge of the jar, cover with sterilized lids and leave for 3 minutes, then pour all the water into a saucepan, add sugar, salt, spices, pieces of hot pepper and bring to a boil. Turn off the heat and pour a bite into the marinade, after which we fill the jars of salad and immediately close the lids. Cover with blankets, wrap well and leave the salad in this form until it cools completely (at least a day). After that, the cans can be transferred to the pantry and stored there until the moment of use.

Cucumber salad with tomatoes

Oh, well, can there be something more beautiful than in winter, when a blizzard is sweeping outside the window and frosts creak, open a jar of cucumber salad and enjoy summer vegetables? Crispy cucumbers, sweet tomatoes, aromatic dill - no, this is not a salad, this is happiness in a jar!

Ingredients:
3 kg of cucumbers;
3 kg of tomatoes;
1.5 kg of onions;
300 g dill;
500 ml of vegetable oil;
5 tbsp. l. vinegar 9%;
5 tbsp. l. Sahara;
4 tbsp. l. salt.

Wash vegetables, dry them. Cut cucumbers into slices, tomatoes (ripe but dense) into slices, onions into half rings. We put everything in a large bowl (basin), add sugar, salt, vinegar, finely chopped dill, pour in oil and mix gently. We leave the salad for 10 minutes - the vegetables should let the juice flow, after that we lay out the workpiece in sterilized half-liter jars. Pour the released juice evenly. We put the jars in a large pot of boiling water (a piece of cotton cloth is placed on the bottom), bring to a boil and sterilize the salad for 15 minutes. After that, close the jars with lids boiled in boiling water and put them under the blanket for a day. After cooling, the salad can be transferred to the pantry.

Cucumber salad with zucchini

A natural disaster in the form of cucumbers, as a rule, is accompanied by another disaster - an invasion of zucchini. These comrades, as if by agreement, come at the same time. What to do, you need to take the bull by the horns or vegetables in your hands and preserve salads for the winter!

Ingredients:
1 kg of zucchini;
1 kg of cucumbers;
100 g red currant;
1 head of garlic;
4-7 currant leaves;
allspice black pepper;
1 liter of water;
1.5 tbsp. l. Sahara;
1 tbsp. l. salt;
1 tbsp. l. vinegar (9%).
Wash cucumbers and zucchini, dry, cut into slices. Peel the garlic, wash the currants.

We leave the salad in this form until it cools completely, then we transfer it to the pantry and wait for winter.

Overripe cucumber salad

Cucumbers are such comrades, somewhat mean: I didn't have time to catch the moment, and that's all - they have already outgrown. Huge, thick-skinned and awkward. Like a suitcase without a handle: it's a pity to throw it away, it's inconvenient to carry. In general, if the described problem echoes inside you with pain and unbearable suffering, here is a recipe for a salad of overripe cucumbers.

Ingredients:
1 kg of large cucumbers;
1 head of garlic;
1 small horseradish root;
1 liter of water;
20 g salt;
5 tbsp. l. table vinegar (9%);
4 tbsp. l. Sahara;
2 tbsp. l. mustard.

Wash the cucumbers, dry them, then remove the skin (very convenient with a knife for peeling root crops) and, cutting the vegetables in half, take out large seeds. After that, cut the cucumbers into cubes about 1 cm thick and up to 5 cm long, sprinkle with salt and leave in a cool place for 7-10 hours.

We drain the released juice and put the cucumbers in sterilized liter jars. Add garlic, horseradish chopped into pieces.

Prepare the marinade - mix water, sugar, mustard, bring to a boil, add vinegar and pour salad. Cover with sterilized lids, rearrange the jars into a large saucepan, pour boiling water over the "shoulders" and sterilize for 15 minutes. After that, close the lids and wrap the jars with blankets, leave for a day. We store cucumber salad in the pantry.

Cucumber salad with vegetables

Ingredients:
2 kg of cucumbers;

3 heads of garlic;

60 ml table vinegar (9%).

All vegetables should be washed and dried, peeled and cut if necessary: ​​cucumbers - slices, tomatoes - slices, peppers - strips, carrots - grate. Put the resulting blanks in a bowl, add the garlic passed through a press, finely chopped hot peppers... Mix with sugar, salt and vinegar.

After 2 hours, bring the vegetable oil to a boil, pour it over the salad evenly. We leave it for another 15 minutes, after which we put it in half-liter sterilized jars, cover it with lids and additionally sterilize it in a saucepan with water for another 15 minutes. After that, we close the salad, hide the jars under the blanket for a day, then store them in the pantry.

Cucumber salad with apples

Wow, what a delicious salad made from cucumbers and apples! Delicate, spicy, spicy-sweet and very original. Great option disposal of cucumbers.

Ingredients:
1 kg of apples;
2 kg of cucumbers;
a large bunch of dill;
a large bunch of tarragon;
50 g sugar;

If you are a fan of spicy flavors and if you like hotter snacks, you will appreciate this salad. It is beautiful without further ado - spicy, spicy, sweetish, and juicy. All in all, Korean-style perfection.

Ingredients:
0.5 kg of carrots;
2 kg of cucumbers;
0.5 cups of sugar;
50 g of salt;
1/2 tsp ground coriander;
