Beat eggs with sugar, salt and vanilla. Put cottage cheese in beaten eggs, grind it thoroughly with a fork. In addition, you can take a mixer and beat everything until a homogeneous liquid mass. We also sift the flour with baking powder separately.

Cast half of the curd and egg mass. Pour flour sifted with baking powder into it. With the same fork, grind the flour with the mass. It should be thick, like tough dough. This way flour lumps are kneaded better.

Pour milk and the remaining half of the egg-curd mass into the dough kneaded until smooth. It turns out batter, standard, as for pancakes. Pour in a few tablespoons of vegetable oil, mix everything well.

Previously, when the pans were without a non-stick coating, they were often greased with an ordinary piece of bacon before the first pancake. And also, while heating the pans, they were sprinkled with salt. It seemed that pancakes were baked better. But I add butter to the dough already. Pancakes with cottage cheese, recipe with photo step by step

    Homemade pancakes with cottage cheese are incredibly tasty! The recipe with the photo will not miss the slightest detail step by step, so it will become good help for inexperienced and novice cooks. Everything is done very simply and relatively easily.

    We will bake pancakes with a mixture of milk and water. Adding water will not spoil their taste, but the dough will not burn. Pancakes according to this recipe are tender, thin, but elastic, they do not tear and easily turn over. The first pancake will not be lumpy!

    We will not fry them too much, because after wrapping the filling we will additionally fry in butter. But if you like pancakes with cottage cheese without additional frying, you can bake them harder by increasing the heat under the pan.

    Since we will add vanilla to the dough, pancakes are only suitable for desserts, salty filling can no longer be added. The aroma will be incomparable - even if at first the vanillin is “lost” in pancake dough, then during baking it will open and float throughout the apartment.

    We will make the filling in pancakes with cottage cheese in two versions - the usual sweet curd and sweet cottage cheese with banana. And then let's compare the taste.

    The glasses in this recipe are 250 ml. From this amount of products, we will get 15 pancakes with a diameter of 18-19 cm.

    • milk, 1 glass
    • water, 1 glass
    • flour, 1 glass
    • cottage cheese, 200 g
    • sugar, 4.5 tbsp. l.
    • butter, 3 tbsp. l. + a piece for roasting
    • sour cream, 1 tbsp. l.
    • egg, 2 pcs.
    • banana, 1 pc.
    • vanillin, 2 pinches
    • salt, a pinch

    How to make pancakes with cottage cheese

    To get three tablespoons of butter, you need to cut off a 25 g piece. If the butter pack is 200 grams, divide it in half, then in half again and again. We send the resulting 1/8 pack into a cup and melt in a water bath.

    Whisk 2 eggs, 1.5 tbsp. l. sugar, a pinch of salt, 3 tbsp. l. melted butter and a pinch of vanillin until smooth.

    Mix a glass of milk with a glass of water. It is necessary that the mixture is warm, so that you can take hot boiled water. Pour the liquid into a bowl of egg mixture and stir well.

    Then pour out a glass of sifted flour without a slide, knead the dough, trying to break all the lumps. Now you need to leave the dough alone for half an hour so that the flour disperses well and the remaining lumps dissolve.

    The dough turned out to be liquid. That's right, no more flour is needed.

    Lubricate a non-stick or special pancake pan vegetable oil... We put on medium heat and let the pan warm up very much, after which we pour about half a ladle of dough (depending on the diameter of the pan) into its center, turn the pan on the weight, distributing the dough, put it back on gas and bake the pancake over low heat until browning. Turn the pancake over with a spatula, wait a few more seconds and remove.

    The less dough we pour, the thinner the pancake. Very thin pancakes are crispy around the edges. Many people like it, especially with jam or honey.

    A stack of 15 ready-made, fairly large pancakes. Since they are cooked in butter, you don't need to grease them. They are already soft and juicy.

    Let's get down to stuffing. 200 g dry fat cottage cheese, 3 tbsp. l. sugar, 1 tbsp. l. Scroll sour cream and a pinch of vanillin in a blender to a paste. If your cottage cheese is wet, you don't need to put sour cream, otherwise the filling will be too liquid.

    Here's a vanilla curd mass turned out. Very tasty!

    Put about a tablespoon of the filling on the edge of the pancake and wrap it up.

    Thus, 7 pancakes with cottage cheese are spun. A little less than half of the filling remains. Add a large ripe banana mashed with a fork.

    The filling of cottage cheese with banana turned out to be a little thinner than just curd and sweeter. It also smells enticingly like a mixture of ripe banana and vanilla curd.

    Fry the finished pancakes in butter over medium heat on both sides. We put them in the pan with the seam down.

    The top pancake is with cottage cheese, the bottom one is with cottage cheese and banana. This is not to say that some filling is better, and some is worse. They are both attractive in their own way. One - with the taste of childhood, the other - with a tropical note.

    Recipe for pancakes with cottage cheese "Austrian"

    Cooking the pancakes themselves is not a difficult process, you need to decide on a recipe, of which there are an incredible amount: with whey, water, milk, with flour, without it, or with protein. Decide which ones you need, but you should remember that the cottage cheese will be present inside, which means that you will need strong pancakes so that the filling is not separate from the base. There is one wonderful recipe thin pancakes with cottage cheese, which is suitable both for sweet dessert pancakes and for salty ones with herbs and salt. This miracle recipe is called "Austrian pancakes":

    • Flour - 150 grams.
    • Eggs - 3 pieces (2 whole and 1 yolk).
    • Salt and sugar - no matter whether you choose sweet or salty fillings, sugar is needed.
    • Vanilla - if the pancakes are with sweet curd.
    • Milk - 250 grams.
    • Sunflower oil - it is better to put in an adze, then it will not be needed for frying. So pancakes with cottage cheese will never be dry, even the next day, if they stay, of course.
    • Cottage cheese - 250 grams. It is better to grind it through cheesecloth, pass it through a blender / meat grinder before mixing cottage cheese with other products, so it will be much easier to mix everything.
    • Vanilla - sugar or powder (sugar 1 sachet, powder - on the tip of a knife).
    • Eggs - 3 pieces.
    • Sugar - 100-150 grams, to taste.
    • Butter - 70 grams.
    • Sour cream - 150 grams.

    As for sour cream: If you take low-fat or low-fat cottage cheese, sour cream is practically necessary - according to the rules when preparing the filling, if you use sour cream, sugar is not required, but it all depends on your desire and tastes. Cottage cheese, even if you bake the pancakes, will be dry and unsweetened, even if vanilla sugar you put a lot - everything to your own taste. It is better to take low-fat sour cream - 15%, add a few spoons (if the dish is dietary), and knead well with cottage cheese, and then add the rest of the products, including sugar. In general, it is better to beat sugar with eggs, so it will melt faster, and the eggs will beat better and thicker.

    • Lemon juice or zest - this is how the taste of the curd will be regulated, even if it is sour, it will become neutral.

    As for sugar: Sugar must be added to the curd (if you do not put sour cream, the filling will be too watery), but if you do not use a cheese mass, in which sugar is already present initially. Why is it better: it is more homogeneous, raisins or other dried fruits are already present in it, like sugar, it is as useful as simple cottage cheese, there is less work with it. Why it is worse: you cannot adjust the amount of sugar, it is drier, and even sour cream, cream or milk will not make it softer. And cottage cheese with sugar lets out its juice, becomes richer, even low-fat cottage cheese will not be dry in pancakes.

    • Dried apricots, raisins, dried pineapples or bananas, strawberries or peaches, other dried fruits and nuts - whatever your heart desires - 50 grams.

    Prepare pancakes, mixing eggs with sugar, adding milk, vegetable oil and vanilla, mix, add flour in a thin stream, knead the dough. When adding oil to the dough, you do not need to pour it into the pan. By the way, Americans, preparing their pancakes (American pancakes for breakfast), never pour oil on a frying pan.

    Pass the cottage cheese through cheesecloth, wipe in a blender or whatever you have on hand, add sour cream. Stir everything together, well. After that, wipe the eggs with sugar and vanilla (if there is no sour cream, but everything is as you wish), add to the cottage cheese. Butter needs to be softened a little and also added to the filling, grind until smooth. Drip citric acid or zest. Now stir everything, well, or beat with a mixer at medium speed, otherwise the mass for pancakes with cottage cheese will be liquid.

    Wrap the pancakes as follows: put the mass on the pancake with a spoon almost in the middle, make an envelope from the pancake. Then you can grease with yolk - it is indicated in the recipe, and put in the oven for 15 minutes at 150 degrees, so you get a wonderful and crispy golden brown crust. And if you need more tender pancakes with cottage cheese, put them in a frying pan with high sides, put on a small heat and simmer under the lid for 15-20 minutes.

    Another way to cook pancakes with cottage cheese soft and not dry... Make a gravy with milk, sour cream, yolk, and sugar. Beat all the products with a spoon or in a mixer, and when you simmer, pour the gravy into the pan - the taste is wonderful.

    Did you know? The pancake curd filling should not be too runny, so buy fatter cottage cheese, preferably from the market, and if it is too watery, wrap it in cheesecloth and let the excess liquid drain. In addition, milk can be replaced with purified water.

    Additionally:

    • 70 g granulated sugar;
    • 25 g creamy margarine;
    • 20 g butter.

    Important! If possible, make a powder out of granulated sugar using a blender or coffee grinder. In addition, quality margarine or lard can be used instead of butter.

    • cottage cheese (medium fat, fresh, better homemade) - 150 grams;
    • condensed milk - 1 tbsp. spoon;
    • sour cream (20%) - 1 tbsp. spoon;
    • sugar - 1-2 tbsp. spoons;
    • vanilla essence - 1 drop;
    • kiwi - 1 piece.

    The first thing to do when starting to cook is to mix cottage cheese and sugar in a convenient small container. Add condensed milk and sour cream. The choice of all dairy products must be approached very carefully, because from their taste and natural composition the overall taste of the filling and the usefulness of the dish as a whole will depend. It's good if you can use homemade products.

    So, mix cottage cheese, sugar, condensed milk and sour cream until smooth. Drip vanilla essence for the scent. In the curd filling made from homemade granular cottage cheese, graininess will be felt well. Therefore, if you do not like this taste, then you can beat the mass with a blender until smooth. I love the grainy texture of the curd filling and I just mix the filling well without beating it with a blender.

    Peel and cut kiwi into small pieces as in the photo. In addition to kiwi, in principle, you can use any fruit. But the taste of kiwi most subtly emphasizes the taste of the curd filling and they perfectly complement each other in color.

    When the curd filling is ready, the kiwi is sliced, it remains only to wrap everything in pancakes. For such a filling, most often I bake.
    You can wrap the filling different ways but my family loves it the most when I make rolls. To do this, just put the curd filling on the pancake in the center, sprinkle with kiwi slices on top and roll it up so that the filling is in the middle.

    Such a pancake roll then needs to be cut into small pieces and served sprinkled with powdered sugar or cocoa powder, or poured with condensed milk. You can decorate the dish with kiwi slices.
