Rinse lentils. Add 2-1 / 2 cups lentil water to a large saucepan. Bring to a boil, reduce heat, simmer with the lid on for about 35 minutes, stirring occasionally. After that, remove the lid and leave to cool, 15 minutes should be sufficient. This will thicken the lentils.
Preheat oven to 180 degrees.
In a small cup, combine the flaxseed flour and 1/3 cup of water and let sit for about 10 minutes, preferably in the refrigerator. Prepare finely chopped vegetables.
Fry the spices and vegetables in oil. Sprinkle with thyme. Cool it down.
In a food processor, chop / mash 3/4 of the lentil mixture until almost puree. Combine the puree in a bowl with the rest of the bread ingredients (sautéed vegetables, leftover lentils, ground oatmeal, soaked in flaxseed flour, pepper, and salt to taste).
Place the lentil dough in a greased, parchment-lined baking dish and lightly compress the dough.
It is better to leave the parchment "sticking out" around the edges for convenience.
Combine all the sauce ingredients in a small bowl. Spread the sauce over the top of our lentil bread.

● Butter - 70 gr.

Preparation:
Grate the cheese on a fine grater, mix with flour, add cold butter and grind everything into crumbs with your hands.
