Homemade sausages made from chicken breast and vegetables, delicious and extraordinary juicy dish suitable for even the strictest dietary restrictions. Minced meat for such sausages is not difficult to prepare, and if the sausages themselves require some effort, then other dishes from this minced meat are even simpler. This chicken mince with vegetables can be used for meatballs, meatballs, cutlets, it can be frozen both minced meat and in the form of ready-made semi-finished products, or finished products, and defrost if necessary without losing flavor. I have seen many recipes for such sausages, but I have not found a single one without dairy products. My first recipe of this kind that can be used to make sausages and sausages using cauliflower and chicken broth, I made for my e-blog. In the second recipe, I used onions and leeks as vegetables.

I cooked the prepared minced meat in the form of small sausages or homemade sausage, and also fried in the form of thin cutlets.

Both boiled and fried food were tasty and juicy, but the cooked products had a somewhat anemic color. Therefore, the following recipe, also with the addition of vegetables and without the addition of dairy products, I made using boiled organic beet puree.

Beets remain one of the few products that I only use in an organic (environmentally friendly) version. In the past, I was intolerant of some of the other common vegetables, fruits and berries, and had a severe reaction to raspberries, strawberries, tangerines, and sometimes mangoes. But now, for several years now, I have not had any reactions to berries, but I do not risk it with beets, especially since organic beets are a product available throughout the year. Chicken sausages with beets not only have a more appetizing color than ordinary sausages, but for my taste, they also have a more pleasant, absolutely homogeneous consistency. In their recipe, I abandoned the use of onions altogether, replacing the flavoring additives with garlic and a hot seasoning of garlic and 3 types of pepper, from sweet to very, very hot.

The sausages themselves do not contain dairy products, but I prepared my usual one for lunch. mashed potatoes in butter and sour cream, and served sausages with homemade mustard and sour cream sauce with horseradish and dill. Garlic for seasoning, lightly salted seed cucumbers and tiny tomatoes - all these organic vegetables my husband brought as a gift from our friends who grow such vegetables themselves.

  • 100ml chicken broth
  • 1 egg
  • a pinch of thyme leaves
  • 1 tablespoon olive oil for sautΓ©ing onions

  • 400g chicken meat (one large skinless chicken breast)
  • 2 medium-sized onions, sautΓ©ed with leeks until translucent
  • 1 leek, sauteed until soft, fried onion and leek weigh about 250g
  • 1 egg
  • 50ml water
  • a pinch of thyme leaves
  • 1 teaspoon salt (approximately)
  • 1/4 teaspoon ground black pepper
  • a pinch of fennel seeds for sautΓ©ing onions
  • 2 tablespoons olive oil, for sautΓ©ing onions and leeks
  • 1 teaspoon of hot seasoning

  • 650-700g chicken meat (two large skinless chicken breasts)
  • 2 medium boiled beets (200g mashed potatoes)
  • 3 cloves of garlic
  • 1 egg
  • 2-3 teaspoons of hot garlic, bell pepper, hot pepper and very hot pepper (I did not use parsley for this portion of the seasoning)
  • 1 and 1/2 teaspoons of salt (approximately)
  • 1/4 teaspoon ground black pepper
  • 30ml water

General remarks

Depending on the size of the chicken breasts, onions, leeks, and beets, it can be difficult to maintain the exact amounts of ingredients listed in the recipe. The same may apply to the pungency and salinity of the seasoning and the salt itself. Therefore, after cooking minced meat in a cup of a kitchen blender, I always make a small flat cutlet, fry it, let it cool slightly, and taste it. After this test, I decide whether to add more salt, spices and liquids. If the minced meat is very dense, then the products may turn out to be dry and not particularly juicy. V chicken breast there is practically no fat, and there is either very little or no fat in the ingredients. Therefore, juiciness is provided by vegetables and liquid, or in the form of broth, or just water. The dish itself is high in protein, and therefore for those who cannot tolerate eggs, the egg in the recipe can be replaced with an additional amount or vegetable puree(cabbage or beets, but not onions), or liquid.

Recipe 1

  • break the cauliflower into small pieces the size of a grain of rice
  • add onion and cauliflower and lightly fry / simmer until translucent
  • alternatively, you can steam the cauliflower separately until cooked and sautΓ© the onions separately

Recipe 2

  • heat up olive oil in a skillet, add fennel seeds
  • chop the onions and leeks, and lightly fry in a skillet until the onions are transparent and the leeks are soft

Recipe 3

  • boil the beets until tender, pour over cold water and let it cool completely
  • peel the beets, cut into small pieces and mash them with a hand blender (better to do this in a tall glass and take precautions not to sprinkle the entire kitchen with beet juice)
  • add the peeled garlic cloves to the beetroot puree and grind them together with the puree

minced meat

  • wash chicken breasts well
  • dry them with paper towels
  • cut the chicken into 1-2 cm cubes
  • place the meat and vegetables / vegetable puree according to the recipe in the blender bowl
  • add egg, prescription spices, salt, pepper, crush the contents
  • add liquids according to the recipe, finish cooking when the mass reaches the desired, sufficiently homogeneous consistency
  • fry in the form of a cutlet or boil a little minced meat in the form of a small meatball, check the taste and consistency, add salt, spices and liquid if necessary

  • for cooking sausages, spread cling film on the work surface
  • prepare string or food string
  • you can make each sausage individually

  • you can lay out a long and thin layer of minced meat, twist it, trying to avoid the formation of air bubbles
  • tie the resulting sausage in different areas with food twine
  • you need to get your hand in the preparation of such sausages, each time they turn out better and better, but I never managed to achieve completely the same size of sausages

  • put sausages in boiling water and cook - very thin for 15 minutes, a little thicker for 20-25 minutes, and thicker ones wrapped in the form of sausages for 45-50 minutes,
  • for a thicker sausage, I put a sheet of baking paper, wrapped the minced meat in baking paper first, tied the ends, then wrapped the sausage in cling film, wrapped it several times, and then wrapped the whole bag in a clean kitchen towel, for security, tied the ends again
  • let the sausage cool slightly before opening the bag, and immediately remove the sausages from the cling film

Sausages cooked with beetroot purΓ©e lose their dramatic color as they cook, but retain their residual pink color and look like regular sausages, the color of which is determined by the presence of nitrites, which are found in all cooked sausages and sausages, acting as a preservative. You can use meat to prepare such sausages. chicken drumstick and it can be assumed that they will be even tastier. The realization that you can feed your families, and especially children, who usually just adore sausages, with a healthy and high-quality product that contains nothing but natural ingredients, is simply priceless.

You can serve these sausages in a special dietary option, just with fresh vegetables or vegetable salads, but you can, as I like, serve sausages with mashed potatoes and vegetables, with homemade mustard (by the way, without sugar and additives) and sour cream sauce with horseradish and dill. Simple, but delicious!

Cooked minced meat can be used like any other minced meat. You don't have to complicate your life and not make sausages, but just fry the cutlets, steam the meatballs, cook the meatball soup, cook the meatballs in your favorite sauce, or bake the meatballs in the oven. Cooked chicken sausage can be stored in the refrigerator for several days and used on sandwiches like any other sausage.
