Cake history

It is known that the Honey cake was invented two centuries ago and initially it exquisite taste and the Russian nobility enjoyed the delicate honey aroma. And only in Soviet times, it became known everywhere, because it was prepared and sold in ordinary confectionery stores in every major city.

And the recipe for the classic honey cake was in the notebook, probably, of every housewife of the Soviet era. As a child, I loved leafing through such notebooks and imagining myself as a chef who prepares wonderful treats. Even then, I noticed that my mother had a honey cake in her recipe, Aunt Dasha had a creamy cake with condensed milk — Honey cake with condensed milk —, and grandmother Vera had so. All these classic recipes were combined with honey! Using their recipes as an example, we will analyze step by step how to make a classic honey cake at home.

How to choose the right ingredients

Everyone will not hesitate to name the main component of a honey cake honey... And this is true! The type of honey you use depends on how much honey taste and your cake will have aroma. Dark honey (for example, buckwheat or chestnut honey) is known to smell stronger. And of course, all the ingredients in your cake must be fresh and high quality.

Cooking honey cakes

  • Dark honey 4 tablespoons
  • Chicken egg 3 pcs.
  • White sugar ½ - 1 glass.
  • Baking soda 1 tsp
  • Butter 200 gr.
  • Wheat flour of the highest grade 4 cups.

Cream preparation

Sour cream

  • Sour cream 20% fat 400 gr.
  • Powdered sugar 200 gr.
  • Vanilla sugar 1 sachet.
  • Honey 1 tsp

This cream is being prepared very simple... Mix sour cream and powdered sugar in a blender bowl, add a bag of vanilla sugar and 1 teaspoon honey. Beat at maximum speed until a homogeneous, medium-thick mixture is obtained.

Creamy cream with condensed milk

  • Butter 200 gr.
  • Condensed milk 400 gr.

This cream cooking is even easier... Put the softened butter and a can of condensed milk into the blender bowl. Beat until a fluffy thick cream is obtained.

Custard

  • Granulated sugar 1 glass.
  • Chicken egg 2 pcs. (yolks only).
  • Vanilla sugar 1 sachet.
  • Flour 1-2 tablespoons
  • Milk 2 cups.

Mix sugar in a small saucepan, egg yolks, flour, vanilla sugar... Beat until smooth. Bring milk to a boil. Pour hot milk into the homogeneous mixture that you have obtained as a result of whipping, in small portions and stir continuously.

Important pour milk in small portions and continuously stir the cream, otherwise the yolks will cook in hot milk and the cream will not work. We put the saucepan on low heat and bring the cream to a boil, continuing to stir. Remove from heat, cool. Add soft butter to the cooled mixture and beat at high speed with a blender until the cream becomes fluffy.

Cake assembly and decoration

Honey cake is equally delicious with all that I have described. I will describe the assembly of the cake using an example butter cream, but with other creams, the steps for making a cake are exactly the same.

If you use a baking powder instead of soda, then you need to add it at the end of the batch, after mixing it with flour.

The appearance of the cake will be in harmony with its taste if, when decorating the cake, you use the same ingredients that were used in the assembly of the cake (for example, prune pieces between the cakes and in the decoration).

For the cream, use sour cream of high fat content from 25%, then it will turn out to be very delicate, fluffy. This cream will saturate honey cakes well.

We will need:

  • flour - 400 g;
  • sugar - 150 g;
  • eggs - 2 pcs.;
  • butter - 100 g;
  • honey - 120 g;
  • soda - 1.5 tsp;
  • sour cream 25% fat and more - 700 g;
  • sugar - 200 g

Preparation:

1. Put the pan on the stove with water to boil. Pour sugar, honey and butter into another saucepan or heat-resistant bowl. Place it on top of a pot of boiling water so that the bottom does not touch the water. In a word, we do water bath.

Stir all the time until the sugar is completely dissolved. Then the fire can be lowered to medium power.

2. Beat the eggs until frothy and pour them into the sugar-honey mass, without removing the bowl from the pan, and stir quickly so that the eggs are not brewed.

3. Now we introduce the soda. The mixture should begin to expand in volume.

4. Gradually add the pre-sifted flour, stirring constantly. We leave a little flour for kneading.

Then we remove our dough from the heat and start kneading it with our hands. Then we wrap it in plastic wrap and put it in the refrigerator for one hour.

As long as the dough is warm, it will stick to your hands.

5. After the dough is resting in the refrigerator, it will become tender and elastic. We roll a sausage out of it and cut it into eight identical parts.

Use a silicone mat or dust the surface with flour to keep it from sticking to the table.

6. Roll each piece into a ball, put them in a plate and cover with foil so that they do not wind up while we roll out the dough.

We take one ball and roll it out with a rolling pin. We transfer the rolled layer to a baking sheet covered with parchment paper. We put a plate of the required diameter on it (in this case, 20 cm) and cut off the edges, moving them away so that the parts do not stick to each other during the baking process.

We bake in an oven preheated to 180 degrees on an average level for 3-5 minutes.

7. As soon as we got the cake out of the oven, prick it with a fork, making holes along the entire surface. We leave the dough scraps, they will be useful for sprinkling the cake.

This must be done so that the cakes are well saturated with the cream.

8. We bake all the cakes in the same way.

9. For sour cream, beat sugar with fat sour cream until it is completely dissolved. The cream should be thick without grains.

10. We begin to collect our cake. Lubricate the substrate or dish with a small amount of cream, put the first cake on top, grease it with cream and so collect it completely.

The final layer will be the cake. Leave some cream on.

Putting the cake in the refrigerator by covering it cling film, for 8 hours, and preferably at night.

11. We take out the present dessert from the refrigerator and grease its surface and sides with the remaining cream.

12. Cut the cakes from the cakes with a blender and sprinkle them on the entire surface on top and on the sides. This is what a classic honey cake looks like.

You can also garnish it with berries or fruits.

The honey cake is incredibly tasty, whatever the recipe for its preparation, because it is prepared at home from natural products.

As you can see, making a honey cake at home is not so difficult, such cooking masterpiece will surely bring your loved ones together for a cup of tea. Bon appetit to you and your guests!

Despite the fact that for many people the Medovik cake is associated mainly with holidays and home celebrations, in my family this cake is baked at least once a month. The thing is that Medovik is my husband and father's favorite cake, so my mother and I pass this “culinary baton” to each other with stable regularity.

Cooking a honey cake includes not only baking cakes, but also making a cream. For this cake, I always use the same classic sour cream, which is best able not only to saturate the honey cake, but also to emphasize the taste of this homemade cake much more. For sour cream, fatty sour cream with a fat content of 25% is best.

Another important feature of the recipe is the cheapness of the cake. The ingredients for honey cakes that make up the Honey cake are not very expensive, and most of them are always available in the refrigerator of any housewife.

If you have never cooked this cake, and you are afraid of culinary failures, the main thing is to follow all the step-by-step cooking steps exactly and you will succeed the first time!

Ingredients:

For honey cakes:
  • 3 eggs
  • 1 tbsp. Sahara
  • 50 g butter
  • 2 tbsp honey
  • 1 tsp soda
  • a pinch of salt
  • 3.5 tbsp. flour
For the cream:
  • 500 ml sour cream
  • 1 tbsp. Sahara
  • 1 tsp gelatin

Cooking a dish step by step with a photo:

  1. Beat eggs with sugar into a homogeneous mass using a mixer.
  2. Then add the required amount of honey to the egg mass. Beat a little with a mixer again.
  3. We put the container with the mass in a water bath and keep it that way, stirring constantly for about 15 minutes.
  4. After a quarter of an hour, remove the container from the bath and let the mass cool. In several approaches, add flour to the honey mass and knead the dough for the cakes of the future honey cake.
  5. Ready dough roll it longitudinally, giving it a "sausage" shape.
  6. Roll each of the pieces of dough into a thin layer, from time to time sprinkle it with a little flour so that the dough does not stick. We shift the rolled layer of honey dough onto a baking sheet greased with vegetable oil.
  7. We send the dough to the oven preheated to 180 degrees. The baking time for each cake varies within 7 minutes.
  8. While the cakes are warm, put a plate of the required diameter on them and cut off the excess cake with a knife. Here it is important to do everything quickly, when the cakes cool down - they become hard.
  9. We do the same procedure one by one with all the cakes, of which we end up with eight pieces.
  10. Now let's move on to preparing the cream. Pour sugar into a deep bowl and add sour cream to it.
  11. Beat sour cream with sugar with a mixer. Then in a minimum amount hot water dissolve the gelatin and pour it into the cream in a thin stream, continue to beat.
  12. Knead the cakes into small crumbs by hand or grind them in a blender.
  13. Sprinkle the cake with the crumbs obtained from the scraps on all sides. As a result, we have such an appetizing homemade honey cake with sour cream.
  14. After the Honey cake is soaked, cut it into portions and serve the cake on the table.
Bon Appetit!

Put 2 eggs, 150 g of sugar, 120 g of honey (it is better to use buckwheat) and 85 g of good butter (not margarine and not a spread!) In a saucepan.

We put on medium heat and heat, stirring constantly, until the sugar is completely dissolved and the butter melts.

Add 1 full tsp. soda.

Mix quickly. The mass will slightly increase in volume and brighten.

Remove from heat and add 350 g of sifted flour.

Mix well.

At this stage, the dough is quite sticky. But it shouldn't be liquid! Now the dough needs to be left on the kitchen table for 10 minutes - "rest" and "ripen". If after this time the dough sticks strongly to the hands and table, add a little flour, no more than 50 g, otherwise the dough will turn out to be too dense and it will be very difficult to roll out.

The finished dough must be divided into equal pieces (or simply pinched off). I get 12 cakes 18 cm in diameter. You also need to prepare sheets of parchment (baking paper) in advance - according to the number of future cakes.

Roll out and bake!

Before starting rolling, turn on the oven. You need to bake cakes for a honey cake at 180 degrees. We take a piece of dough, knead it, put it on a sheet of parchment dusted with flour.

We roll it out.

Very thin! Approximately 3 mm, almost to the gaps!

And so - all future cakes. We prick them with a fork in several places. You can put them on top of each other right on the parchment, they will not stick together and will calmly wait for their turn.

We bake one or several cakes, depending on how much your oven allows. Mine bakes optimally only at the medium level, so I usually bake one cake at a time. Down, under a baking sheet with a crust, I always put a container with water, otherwise the bottom will burn. The cakes are baked very quickly, up to 5 minutes. Follow!

We take out the cake and immediately cut it on a plate (square or rectangular if you want a matching honey cake). Save the cuttings.

Warm, the cake is quite soft. Porous, light and delicate! Look!

So we baked all the cakes!

We remove them from the parchment. Usually I spread it on it after I cut it in shape, to be sure that the baked cakes do not stick to each other :) Here they are, our golden honey beauties!

Putting the cake together!

For this cake we need sour cream... You need to make it in advance, but how - I told in detail and showed in the post. A homemade honey cake can be assembled without a ring (if, for example, you rarely make cakes and took up a honey cake only because it does not need a special shape), but it is more reliable - after all, it is in it. I sincerely recommend: nothing will leak anywhere, and the cake is guaranteed to turn out smooth and beautiful! So, we take a ring (a special confectionery, a transformer or from a detachable baking dish), lay the walls with a film (I have an acetate one, but you can do anything, the main thing is dense, the other will be difficult to evenly distribute along the wall).

We put the cake. We put cream on it. Then another cake. Etc.
