For me, such a dough is a kind of magic wand - even if you just defrost it, cut it into small strips and sprinkle it with sugar and send it to the oven, after 15 minutes we get delicious pastries for tea. In general, from such a dough, you can make a lot of different sweets. I even have several cookbooks with puff pastry recipes, sweet and not sweet pastries.

But today's recipe for puffs is not from these books, but from the vast Internet spaces, in my opinion, with say7. The introduction turned out to be longer than the recipe itself)) Let's cook.

We need

I took about half a kilo of apples according to the recipe, but it seemed to me a lot, maybe I needed to put more filling ...

We clean from seeds, and cut into small cubes.

Melt the butter in a frying pan, this was not in the recipe, but it seemed to me tastier with butter. Put the apples in the pan, add a little water, washed raisins and honey. There was no honey either, this time I replaced it with sugar, it turned out delicious.

Simmer for 5-7 minutes. Cool it down. (I didn't have step-by-step photos because I had the filling left over from the first time, and the first time I didn't take pictures, I didn't know if it would turn out deliciously))).

Put on a rectangle of puff pastry apple filling, cover with the second rectangle and pinch the edges.

For cooking, you will need: half a kilogram of dough, five large apples, 2 tbsp. tablespoons of granulated sugar, 30 grams of butter, two teaspoons of cinnamon, lemon juice.

The initial stage of cooking will be the preparation of the filling. Any with apples requires the filling to be chopped finely enough. Apples will need to be cut into very small cubes or strips, sprinkled lemon juice... The next stage is frying apples in butter with the addition of cinnamon and granulated sugar.

While the apples are fried, you need to prepare the puff pastry. Recipes assume that the dough will be rolled out in a fairly thick layer. Apples give a lot of juice when cooking, so the dough shouldn't creep in the process. One piece of dough can be divided into four or six large pieces. Roll out each part a little.

Cooled fried apples with cinnamon are laid out on a piece of dough and wrapped in an envelope or triangle. The process is pretty quick. Puff pastry with apples will be fried for about 15 minutes. Many recipes suggest preheating the oven to 220 degrees, but experts say that 180-190 degrees is quite enough for the dough to come up and brown.

For cooking you will need: 200-300 grams of puff pastry, two large apples, 2-3 tbsp. tablespoons of granulated sugar, a little cinnamon, a small bag of vanillin, the juice of half a lemon.

As always, preparation begins with the preparation of the filling. This recipe uses apple cubes about half a centimeter thick. Pie is a pastry made from puff pastry with apples, which implies a fairly large amount of filling. Therefore, if two apples are not enough, add more. Remember that the filling is sticking out of the pie. It will be both juicier and tastier. Apples will need to be seasoned with vanilla, granulated sugar (powdered) and cinnamon, after sprinkling with lemon juice.

Apple filling

For the filling, wash the apples, peel them with a sharp knife or vegetable peeler. Cut into small diamonds and sprinkle with granulated sugar. Stir. As soon as the apples let out juice, gently drain it. For the filling, use only dry, well-squeezed pieces, otherwise the puffs will soak and stick in the oven.

There is another 100% way to make the filling so that the puffs do not flow in the oven. Put a teaspoon of butter in a skillet and add apples and sugar. For flavor, you can mix apples with vanilla sugar rather than the usual. Simmer apples and sugar over the fire for 10 minutes, stirring constantly with a spatula. During this time, sugar and juice from apples will turn into thick syrup, and the fruits themselves will become soft and give off excess liquid.

We form puffs

Puff pastry is usually not rolled out so that the finished products from it are fuller and more layered. Therefore, you can roll it out only slightly so that the final thickness is at least 0.5 cm. Cut the layer into quarters (about 10 -20 cm). Each part of the dough will be a puff.

If you decide to make as many layers as possible by quantity, in this case, roll out the dough thinly. But ready-made baked goods it will turn out not so voluminous.

Place 1 tbsp on each part of the dough. l. apples. There should be enough space from the filling to the edges of the dough. Remember that the dough is no less tasty than the filling, you should not put too much in order to avoid leakage of the filling.

You can form puffs directly on the baking sheet to avoid carrying them off the cutting board.

From above, you need to cover the puff with exactly the same size with a layer of dough. I have a curly knife roller that makes it easy to make a mesh. That is, you need to roll over the dough plate, leaving a pattern that is not completely cut.

Use a knife to open the mesh.

Cover the filled puff with a mesh dough piece.

If there is no curly roller, closed puffs can be made. In this case, cover the apples with exactly the same size layer of dough.

There is another option to make cuts with a regular knife. At a distance of 1 cm from each other, make slits, excess steam will come out through them, and the appearance of the puffs will become more interesting.

I squeeze the dough around the edges, I press it tightly. You can squeeze the edges with a fork: you get a beautiful curly rim. Squeeze as tight as possible so that the puffs do not open in the oven.

Put the blanks on a baking sheet covered with parchment.

To make the puffs have an appetizing and crispy crust, brush with a mixture of yolk and milk. Break the egg into a small bowl, catch the yolk in a separate cup.

Add 1 tbsp. l. milk and stir the mixture. For crunchy puffs, you can lightly salt.

Using a pastry brush, coat each puff with this mixture.

To make the treat get a caramel crispy crust in the oven, use the following trick: combine 0.5 tsp. cinnamon and 1 tsp. Sahara.

Stir dry mixture.

Now sprinkle the puffs on top. The sugar will stick well to the egg grease and the puffs will get a wonderful crust.

Now another secret of delicious puff pastry in the oven. Using a spray bottle, sprinkle the puffs with regular cold water... So the puffs will become even tastier, the dough will rise and reveal its layers much better.

After 20-25 minutes in the oven, the puffs will be ready. Be sure to cool the puffs before serving. The filling is so hot that it can burn!

We wash the apples, dry them and cut them into 4 parts. We take out the core and cut them into thin slices.

Now let's boil apples in syrup. To do this, boil filtered water in a saucepan, dissolve granulated sugar in it, and then add cinnamon and cloves. Put the apple pieces in a saucepan and cook over low heat for five minutes. They must become transparent.

Remove the apple slices from the syrup with a slotted spoon and put them in a colander. We are waiting for all the excess liquid to drain.

Juicy baked apples in a thin layer of crispy dough.

  • 100g butter
  • 100g sour cream (I have 15%)
  • 130g flour
  • 4 apples
  • 200g granulated sugar (you may need a little less or more)
  • 1 egg
  • ½ tsp baking powder

From this amount of ingredients, I got 7 apples in the dough. If you wish, you can add cinnamon, raisins or nuts to the apple halves in addition to granulated sugar. Apples for this recipe are best taken with sourness. Especially tasty with a seven or a ripe Antonovka.

Mix softened butter with sour cream.

Recipe 5: apples with a rose in ready-made puff pastry

  • Finished puff pastry 300 g
  • Natural vinegar (or lemon juice) 2 tbsp. l.
  • Fresh apples 2 pcs
  • Sugar 30-40 g
  • Chocolate sauce (or jam, jam)

  • flour 200 g

  • apples (medium size) - 4 pcs.;
  • kefir - 4 table. spoons;
  • eggs - 2 pcs.;
  • wheat flour - 4 tablespoons. spoons;
  • butter - 60 g;
  • sugar - 2 tablespoons. spoons;
  • soda - 1 tsp;
  • salt.

Cut the apples (it is better to take sour varieties) in half, cut the core in each half and cut into round pieces no more than 5 mm thick. Arrange the apple slices on a platter, sprinkle a little with granulated sugar and leave for 20 minutes.

The recipe is very simple and fast enough. It takes literally 20 minutes to prepare.
The main problem is to stop on time and not eat the entire prepared batch of dessert at once.

For the apples in the dough, we need:

- puff pastry - 500 g (I have purchased, as it was said from the very beginning);
- red apples - 4 pcs. (the variety of apples is not as important as their exterior, although there were some problems with imported apples);
- granulated sugar - 6 tablespoons;
- drinking water - 300 ml.

Here are all the ingredients you need to make this dessert.

Recipe

For starters, puff purchased test you need to give time to defrost, it took me 20 minutes at room temperature.

In the meantime, you need to prepare the apples. When choosing, it is best to give preference to domestic apples hard varieties with soft red skin. I tried to make from imported red apples, but I didn't like the result. After baking, the skin turned out to be hard, actually rubbery, and the apples themselves remained damp inside. Then I read the advice that it is necessary to remove the peel from imported shiny fruits, since it is covered with a special wax, to increase the shelf life of apples and is by no means useful for the human body.

So, wash and core the apples. I did it special device, but you can also use a simple knife, after cutting the apple into two halves. Do not remove the skin from apples!

Cut the prepared apples into thin slices, approximately 3-4 mm thick.

Now you need to cook the syrup in which we will slightly boil the apples. Thanks to the syrup, the apples will become soft, pliable and nourished with sweetness. They will be very easy to wrap in dough and will not break.



Apples should be dipped in portions in boiling syrup for 2-3 minutes, depending on the variety, no more, otherwise they will become boiled and will not keep their shape.

Put the finished portion of apples into a prepared container using a slotted spoon. Then repeat the procedure for adding the next batch of apples to the boiling syrup.

The apples are ready, now they need to be allowed to cool.

In the meantime, the puff pastry has melted and must be rolled out into a layer 3-4 mm thick.
According to the rules, puff pastry must be rolled in one direction so as not to violate the layering, this is quite difficult to do. Therefore, I rolled it out so that the dough just kept the shape of a square. Actually, the dough itself in this dessert is secondary, the main thing is that it holds the roses from apples.

Cut the rolled puff pastry into long strips 4-5 cm wide.
If you are not sure that your dough strips will turn out to be even and straight, use a ruler or just a clean sheet of paper. These high-tech innovations make the dough strips even and uniform.

The cooled apple slices should be plastic, but not boiled!

Visually divide the dough strips in half lengthwise, put the cooled apple slices on one of the halves with a slight overlap. One strip of puff pastry fits about 6-7 apple slices... If you want to make the dough roses lush, add more apple slices.

Now, the puff pastry with apples must be rolled tightly.

The roses are almost made from our apples.


Pinch the free end of the dough to secure the entire structure.

So it turned out a real rose of apples in puff pastry, or just puff pastry with apples, in the form of a queen among flowers.

Grease a baking tray with butter and put the shaped apple roses in the dough.

Such beauty is obtained from the usual purchased puff pastry and apples from your site.

Bake apples in puff pastry in the oven at 200 degrees for 15 minutes on convection mode. If this mode is not available, just set it to 200 degrees and bring the products to the readiness of the test.

It turns out that for such apples it is necessary to increase the cooking time in syrup and the amount of granulated sugar, since the apples, for my taste, did not have enough sweetness. In principle, one can adapt to imports, although it is better to support our "import substitution".

One more note - try alternating green and red apples, puff pastry roses will only be more beautiful.

- It is not necessary to take apples in the form of filling. If there are pears or large peaches, then they are perfect. The main thing is that the peel on the fruit is not too dense, otherwise it simply will not have time to bake and will remain tough.
