It so happened that in our family everyone loves sweets, and they eat vegetables only in salads. So I always have to come up with something compromise. This is how we got sweet zucchini pancakes. They always leave with a bang, just have time to fry. Very few products are needed:

We peel the zucchini (preferably young without seeds, if the seeds are already large, remove them) and rub it on a coarse grater. Add eggs, salt, sugar and stir well.

Now add a little flour and extinguish the soda. The exact amount of flour cannot be said: both the zucchini may not be exactly a pound, and the eggs are always of different sizes. Therefore, see for yourself: the dough should be like thick sour cream in consistency.

  • zucchini - 1 pc.;
  • white wheat flour - 4 tablespoons;
  • chicken egg - 1 pc.;
  • salt - a pinch;
  • granulated sugar - 1.5 tablespoons;

  • vegetable oil - 40-50 ml.

Preparation

Wash the zucchini and rub on a coarse grater. If it is not very young, then remove the seeds inside and cut off the skin (in mature zucchini it is dense).

Now you need to get rid of excess liquid, because of it, the squash dough may not be thick enough. To do this, you can squeeze the juice out of the shabby mass by hand, or transfer it to a fine colander (sieve), and leave it for some time to drain.

Beat the egg into the prepared zucchini mass and add the sifted flour.

Add sugar. You can adjust its amount at your discretion, if your family loves sweets, then put more. Throw in a pinch of salt, it is absolutely necessary, despite the fact that the dish is prepared sweet (salt is always added to enhance the taste of sugar).

Add baking powder for the dough as you wish, in principle this component is not required, but with it the finished pancakes will turn out more magnificent.

Now mix everything thoroughly so that a homogeneous mass is obtained, and the flour does not get anywhere in a lump.

Fry sweet zucchini pancakes in a non-stick pan (you can use a cast iron). Pour vegetable oil into it and heat it up. Soak a tablespoon in water, scoop up a portion of the courgette mass and put it in a frying pan. Bake on both sides until golden brown.

When the pancakes are ready, transfer them to a paper towel or napkin first to drain off excess oil after frying.
