Combine baking powder with flour in a separate bowl. Gradually pour the flour into the liquid mass and knead the dough of medium thickness. So, if you decide to please your household with this dish, then take care of having at hand 80 milliliters of milk, one chicken egg, 175 grams of sugar (75 grams for the dough and 100 grams for the filling), 60 grams of margarine, 250 grams of flour, a teaspoon of dry yeast, a packet of vanillin, a pinch of salt and 0.5 kg of plums.

Cooking

We melt the margarine in the microwave or use a water bath for this purpose. When it cools slightly, mix it with sugar and egg. Before diluting the yeast in milk, it should be warmed up. Then pour the milk and yeast into a bowl of margarine, sugar and eggs. We mix. We fall asleep vanillin. We interfere again. After that, sift the flour and combine with the resulting mass.     Sift about 300 g of flour, add the rest gradually, in small portions, and later. Mix with a pinch of fine salt, if you like, enhance the crumb flavor with vanilla sugar, but the main note is set by cinnamon. Add 40-50 g of regular sugar, drive in one egg, pour in melted and cooled butter. Hot oil, just removed from the fire, will curl both egg white and flour, which will make the dough not homogeneous, but with coarse inclusions. Knead, grind into flakes.

    Pour out the rest of the milk, the bubbling yeast dough and proceed to a rather long kneading. We dump the still sticky flour mass onto the countertop and gradually increase the dosage of wheat flour, add and roll the lump, press and stretch. As soon as plasticity appears, we mimic without dusting with flour - the less flour is poured and the better the dough is “worked out”, the tastier and more luxuriant the crumb. Try not to bring the dough to hardness and toughness.

    We roll up the bun, put it in a bag, but do not pull it tight, but leave free space. We remove the semi-finished product on the refrigerator shelf and leave it to "doze" overnight. It is convenient to knead the yeast dough in the evening, pack it, keep it growing in the cold, take it out in the sun or warm the next day, distance an hour and a half until the volume increases and proceed to forming the products.

    And here is the same kolobok in a new size, after a night "sleep" in the refrigerator and two hours of proofing in a warm place under cling film. Soft, swollen, filled with air and tripled its own volume. You can make plum pies!

    Divide the dough into the desired number of equal parts by weight / size. Hungarian or another variety of my plums, dry, cut into cubes or slices, sprinkle with sugar (about 50 g) and ground cinnamon, which is successfully combined with all stone fruits. In addition to cinnamon, lemon peel, vanilla sugar, and cloves are good.

    When molding, I do without a rolling pin. With this dough, you can easily sculpt anything. Large and portioned products, braids, "braids", "lattices". Stretch and press down round cakes 0.5 cm thick, spread the sweet filling in the center. If the plums are very juicy, sprinkle with a little starch.

    We firmly squeeze the opposite edges of the base, connect the joints, give the blank pies a round or oval shape. Transfer at a distance to a baking sheet with parchment or a thin layer of flour. Throw in a towel or film and let stand for 20-30 minutes in the warmth. Before sending to the oven, cover with egg yolk shaken with a spoonful of water or milk - for the sake of the sparkling shine of the crust. Lubricate with vegetable or loose butter, then the shell will come out matte, velvety, also picturesque and tasty.

    We bake in a pre-heated oven at a temperature of 180 degrees for 40-45 minutes. Cool the glossy pies with plums before serving under a woven towel on a baking sheet.

For breakfast, we serve homemade pies with plums next to a cup of coffee or tea, and in the afternoon we enjoy a bite with compotes, fruit drinks, milk or fermented milk drinks.
