"Dream" APPLE PIE FROM SAND PURSE - STEP-BY-STEP RECIPE

First, let's prepare the dough.

Put soft butter in a bowl and lightly beat it with a mixer or rub thoroughly with a whisk.

Add a pinch of salt, sugar and mix.

Then add the egg yolks in 2 doses, while continuing to stir, you do not need to beat much.

Mix dry foods separately.

Since the flour is different for everyone, I took a little more than according to the recipe and put it aside right away, perhaps it will not be needed.

Add to the sifted flour baking powder, vanillin and mix dry foods.

Add part of the mixture to the bowl and knead the dough.

While the mass is soft, you can mix with a mixer, then add the remaining flour, quickly knead shortbread dough hands.

As soon as the dough has gathered into a lump, transfer it to the work surface, sprinkled with flour, and knead for about a minute more.

The shortbread dough is ready, it is very tender, we are trying to carefully roll it into a layer according to the size of your shape, taking into account the height of the sides.

Carefully wrap the dough on a rolling pin and transfer it to a mold, I have an oval shape, 22x32 cm in size.

The dough is very soft and crumbly, don't let that scare you.

Our task is to line the bottom and sides of the mold with dough, but you can do this without rolling it out, simply distributing it in an even layer over the entire inner surface, setting aside about 1/4 of the dough in advance, it will come in handy a little later.

I have this lump of dough left after I aligned the edges of the mold.

We collect the remaining dough into a ball, put it in a bag and send it to freezer, and the form itself with the dough in the refrigerator.

Let's prepare the filling.

Pour squirrels into the bowl, I have room temperature, add vanillin and beat until fluffy.

Continuing to beat, add sugar in several steps, I added 150 gr., But if the apples are very sweet - 100 gr. will be sufficient.

Beat the whites with sugar until dense, stable peaks are formed.

Now let's prepare the apples.

We peel them and rub them on a coarse grater, discarding the core.

Sprinkle the grated apples with lemon juice so that they do not darken and mix well.

The filling products are ready.

We take out the form with the dough from the refrigerator, put the grated apples into it, distribute evenly over the entire form and slightly compact.

Spread the whites whipped with sugar on top of the apples.

We take out a frozen lump of dough from the freezer, and rub it on a coarse grater.

Spread the resulting crumb evenly over the cake.

We send the prepared form to the preheated oven, the temperature in which is 160-170 ° C (320-338 ° F) and bake for 40-50 minutes.

You can cook this pie not only with apple filling, any not very juicy fresh fruits and berries will do, and if you plan to use frozen ones, I recommend defrosting them first, otherwise the filling will flow.

For ease of extraction finished cake it is better to use a split form.

My cake was baked for 50 minutes at 160 ° C (320 ° F), it's completely ready, we take it out of the oven.
