  • 600-700 g of sour apples (I baked with Snow Calvin, I took a little more than 800 g of unpeeled apples, after peeling the right amount was obtained. You can take less - 50-600 grams, since 700 g of apples, even instead of 750, indicated in the original recipe, - back to back, they need to be tamped well. But after baking, the filling decreases in volume);
  • 3 tablespoons of sugar;
  • 1 teaspoon of cinnamon (no top)
  • 2 tablespoons of rum (or cognac, it adds flavor);
  • Juice and zest of half a lemon;
  • 1 tablespoon of semolina, full with top.

How to bake:

First, let's prepare the dough, as it needs to be cooled in the refrigerator for half an hour. Sift flour into a bowl, cut soft butter into pieces, add sugar and yolk, salt and knead soft dough. If the dough does not stick together, crumbles, add 1 spoonful of cold milk and continue kneading until an elastic consistency is obtained.



You don't need to knead the shortbread dough for a long time, it sticks together - and that's enough for it to turn out not hard, but crumbly.


Roll it into a bun, put it in a bag and put it in the refrigerator for 30 minutes. This is necessary so that the dough rolls out easily: when the oil contained in it cools, the dough sticks less to the table and rolling pin.

In the meantime, the dough is in the refrigerator, let's make the apple filling. Wash the apples, cut them into halves or quarters, peel them to the cores and peel them, and then cut them into cubes one and a half to two centimeters.


Pour the apples with lemon juice, add cinnamon, sugar, semolina (it is needed to absorb moisture from the filling), cognac, lemon zest and mix. The filling is ready.




Put a parchment circle on the bottom of the mold, grease the walls with vegetable oil. We turn on the oven to heat up to 200C. And it's time to get the dough out of the refrigerator. We divide it into two parts, approximately 2/3 and 1/3.


Sprinkle the table with flour and roll most of it into a circle, 2-3 mm thick, 2-3 cm larger in diameter than the shape.


We cut the cake to size, it is convenient to do this by placing a form on it.


Gently wrap the cake on a rolling pin and transfer to the mold.


Unwind and lay flat, forming a bottom cake with high (2-3 cm) sides.


Pour the filling onto it and distribute it evenly. And don't think that there are a lot of apples :)


Roll out a smaller part of the dough and cut out a circle equal to the diameter of the mold. Also, using a rocking chair, transfer it to the cake and cover it on top. Slightly lubricating the edges of the bottom cake with water, we blind the top and bottom together - this turned out to be the most difficult moment, I pried the bottom edge with the handle of a spoon :) But the difficulties are over, and we can move on to the most exciting part - decorating the cake!


From scraps of dough we make leaves, apples, flowers and, lubricating with water, place them on the top cake. Be sure to make several holes for the steam to escape - from wet apples, but when the heat is in the oven, steam forms a lot, and you need to give it a way out, otherwise the cake may crack.


We put the pie in the oven and bake from 50 minutes to 1 hour, at 200-180C, this is different for different ovens. For example, I baked it for 1 hour, first at 200C, then I reduced it to 170-180C and moved it from the middle level to the upper one, and placed a ladle of water on the bottom of the oven so that the bottom did not burn, then I smeared the cake with milk and I sprinkled it with sugar, and added the fire again to 200C-220C, so that it turned brown.

What a golden, beautiful pie! And how fragrant!

Let's start cooking

First you need to separate the whites from the yolks. While the whites can be removed, for example, in the refrigerator, well, the yolks should be ground with 100 grams of sugar.

Cut the butter into small cubes, mix with flour and baking powder. Then add the whipped yolks here, mix everything until you get a dense fatty yellow dough.

It needs to be put in a bag and sent to the refrigerator for 30-35 minutes. Better even in the freezer.

Sprinkle the surface of the pie with dough (which was in the freezer all this time). We rub this piece of dough on a grater and place it on the surface of the cake. My filling is not completely covered in the dough, but if you want a thick coating, you can leave more of the dough to cool.
