Moldovan cuisine is delicious and varied. Vegetable dishes in this country, it is more often prepared from eggplant, cabbage, bell peppers and, of course, corn. From corn flour make delicious hominy. Zrazy is cooked with potatoes and meat. Bryndza, cheese and cottage cheese are made from milk. All of these dairy products are used as a filling for tortillas, placinas or twirls. It is the twirls that we will cook today.

The main rule of this baking is to roll out the dough very thinly, until it is translucent. The dough for vertuta is made very simply using the most common ingredients.

Since this dish was invented a long time ago, the recipe has changed over time. Each housewife brought something of her own into it, and as a result, many options for both the dough and the filling came down to us. I will present some of them to your attention.

It is advisable to take natural butter for the dough, that is, from cream. But if you do not have the opportunity to purchase it, it is permissible to replace it with margarine.

Only the highest grade flour should be used for baking.

Choose sweet varieties of apples, then less sugar is needed for the filling. Firstly, the vertuta will be more useful, and secondly, for her unleavened dough you need a filling with a rich taste.

  1. Put in a bowl butter, sift the flour there along with the baking powder.
  2. Stir the ingredients until you get a crumb.

  3. Add beer and remaining flour, knead the dough. It should roll out well and not stick to your hands. Then cover the dough with a kitchen towel and forget about it for a while.

  5. Divide the dough into two parts (or 4, if you want the product to be smaller). We roll out one of them as thin as possible, but so that the dough does not break.

  6. Put half of the filling on the dough and sprinkle with sugar.

  7. We wrap the dough in the form of a roll. Do the same with the remaining dough and filling.

  8. Cover the baking sheet with special baking paper. Put the twirls on a baking sheet and put in the oven. It needs to be heated to 180 degrees.

  9. I bake for 50 minutes, but it may bake faster or slower in your oven.


    Did you know? The twirling dough remains rather pale during baking, it may seem that it is not ready. Therefore, from time to time you need to take out the baking sheet and determine its degree of readiness. If you want the Wertuta to have golden brown, before putting in the oven, brush it with egg yolk.

This vertuta cooks a little faster than with apples, because it doesn't take a long time to prepare the filling.

  1. Combine flour, water and salt. We knead the dough, it needs to be kneaded for about 15 minutes to make it elastic. We leave it for 15 minutes, the dough should "rest".

  2. The dough can be rolled out thinly, or you can stretch it with your hands. It will be faster and easier to roll out, since stretching requires skill. If you still want to learn how to stretch the dough, then divide it into two parts.
  3. Roll both parts separately into small cakes, brush one cake with vegetable oil, and put the other on top. Let them crumble a little, about 10 minutes.

This vertuta takes about 2 hours to cook., almost half of this time will be taken to prepare the filling.

water - 160 - 170 ml

vanilla sugar - 1 sachet
sugar - to taste
cinnamon to taste

yolk + milk - 20-30 gr


How to cook Moldavian twirls from stretched dough:

1. Let's prepare all the necessary ingredients. In the photo I captured everything for the stretch dough and the apple filling. The rest appeared during the preparation process).

2. Pour water into a deep bowl (or any other deep dish) room temperature... Salt. We measure and add sunflower oil. We mix everything.

3. Measure out the flour and sift it through a sieve into a bowl of water. Stir gradually, adding flour little by little. The dough should be elastic, soft, but not sticky to your hands.

4. Divide the resulting dough into 5 equal parts (you can also divide into a smaller amount, but the dough needs to be further stretched more and the final product will turn out to be larger. I like small twists, as we usually cook and serve in coffee and restaurants) ... We make even balls out of them.

5. Cover the resulting balls with a towel and leave to rest for 20-30 minutes.

6. While the dough is resting, prepare the apple filling. Peel and core the apples and cut them into four parts. Grate the apple on a coarse grater and sprinkle with lemon juice so as not to darken.

7. Let's start a rested test. We take the ball, put it in the middle of the table. Roll it out a little with a rolling pin. Now pour sunflower oil in the middle, on each side. We grind well, distribute it around the entire perimeter of the cake, both on one side and on the other. Roll out the oiled dough further, until thin pancake a couple of millimeters.

8. Now let's start stretching, pulling the dough. The position of the hands, as in the photo (it's easier and more convenient to stretch), as if you were holding an apricot or a peach in your hands (well, so that it was clearer). We cover our "bathes" from our hands with dough and turn it so gently in a circle, stretch the dough a little on the sides. Just do it very gently and carefully, do not overdo it, so that the dough does not crawl and break. Then we lay it flat on the table and help it stretch thinly. We make sure that the edges are thin, we do it with our fingers.

9. Here we have such a transparent, even stretched dough. Do not forget, the dough must be very thin, like papyrus, through which you can read !!! And one more thing - do not forget that the dough should always be oiled. If, after pulling and stretching it on the table, it has lost a little oil, we coat it again - pour it and distribute it by hand.

10. Let's get down to stuffing. Squeeze out the grated apple, remove the excess liquid. Sprinkle our stretched dough with our hands around the entire perimeter. We try not too much, but as in the photo. Rinse the raisins, dry them with a paper towel and sprinkle them on top of the dough. We also sprinkle sugar evenly over the filling, do the same with vanilla sugar and cinnamon. The filling is ready.

11. Now we turn off the twirl. Bend the edges from the right and left. Then fold the dough on top. Now gently roll the resulting dough with filling into a roll, rolling with both hands from the top of the palm to the fingertips. Here we have such a vertuta with apples.

12. We put the oven to preheat to 200 gr. Cover the baking sheet with parchment paper and put the twirls on it.
13. Begins to vertuts with feta cheese. Chop finely salted solid feta cheese into a bowl with our hands. Stretch the remaining dough and sprinkle it with chopped feta cheese evenly. Without bending, we roll up the tourniquet with our hands. It turns out a long tourniquet. Now we turn the snail out of it. Press it down a little with your hands and put it on a baking sheet too. So stretch and fill the remaining dough.

I bring to your attention Moldavian twirls with cottage cheese and herbs. These twists are prepared from stretched dough with the addition of vegetable oil, which makes the dough unusually elastic and due to this, it can be pulled to a thin layer.

The filling will be from cottage cheese and herbs and there will be a lot of it. We love it so much when there is a lot of filling and little dough. Try it too, I'm sure you will like it.

Let's prepare the ingredients for the dough. The water should be warm. You may need more or less flour, depending on the quality of the flour.

Pour salt into a bowl and add oil.

Then add water.

Stir with a whisk.

Add the sifted flour in portions.

Knead a soft elastic dough, cover it with a towel and leave on the table for 40 minutes to rest.

Let's prepare the ingredients for the filling.

Finely chop the greens.

Add salt to the curd to taste, 2 eggs and 1 white (leave 1 yolk for lubrication with a twirl) and grind with a fork.

Add chopped herbs and stir.

Let's go back to our "rested" test. We no longer need flour, but we need to grease the table a little with rust oil, knead the dough well.

Divide into 6-8 equal pieces and roll into balls.

Roll out each ball.

It is necessary to roll very thinly.

Grease the surface with vegetable oil and spread the curd filling.

Roll up and then snail. Do the same with the rest of the dough pieces and filling.

Put on a baking sheet lined with parchment and brush with a beaten egg with the addition of 1 tbsp. water or milk.

Bake at 180 degrees for 40-45 minutes.
