How to choose the right ingredients

  • Choosing delicious and juicy oranges is not difficult at all. From experience I will say that fruits are most delicious in winter, then in their homeland it is the harvest season. Oranges from Spain and the USA are sweeter, but this is a subjective opinion.
  • Weigh the fruit in your hand, it should be quite weighty, which means there is a lot of juice in it. If the citrus looks large, but in fact is light, then perhaps it began to dry from the inside.
  • And, of course, the color. Delicious oranges come in all shades of orange, as long as the color is uniform. In the cold, you will not be able to fully appreciate the smell, but at home the aroma will fully unfold, and this is another sign of ripe oranges, green ones do not smell so much.

Step by step cooking

  1. Beat with a mixer 150 g of soft butter and the same amount of sugar.
  2. Drive in 4 eggs one at a time and continue to beat.

  3. Rub the zest of one orange on a fine grater. Add it to the butter.

  4. Cut the orange in half and squeeze the juice out of it. One fruit makes 70-80 ml.

When buying citrus fruits, do not chase too large fruits, give preference to medium-sized fruits. Pay attention that the skin is not too bumpy and too thick, this may indicate that the orange was picked not ripe. Pour the juice into the dough and mix well with a mixer.

  5. We extinguish a teaspoon of baking soda with vinegar and add to the rest of the ingredients.

  6. Add 250 g of sifted flour to the dough. But not all at once, but a couple of spoons, mix each time.

  7. The dough is ready. It is not very liquid, its consistency resembles thick sour cream. Grease a detachable baking dish with butter and fill with dough.

  8. We put the pie in an oven preheated to 180 ° C for 30-40 minutes. After a while, we check the readiness of the cake with a toothpick or wooden skewer.
  9. Sprinkle the slightly chilled cake icing sugar.

Quick orange pie (video)

Pastries with oranges are rich in variety, as well as tasty and aromatic. Preparing such desserts is easy, it takes very little time, especially if you use various kitchen appliances that facilitate the process: blender, mixer, multicooker. Pastries with oranges are worth pampering yourself and your loved ones.

Pour boiling water over oranges, then wash thoroughly. So it is much easier to wash off the paraffin layer, which often covers citrus fruits. Remove the zest from two oranges using a fine grater.

Peel the oranges and cut into slices about 5-6 mm thick.

In a small saucepan, mix sugar with three teaspoons of water, put on medium heat until the sugar dissolves. Stir occasionally, but not very often. If the sugar does not melt well, you can add some more water. When the syrup boils and darkens slightly, remove the ladle from the heat.

Pour the syrup into a mold with a diameter of 20 cm, distribute over the bottom. I used silicone mold, the easiest way to get the cake out of it. Place the orange slices on the caramel so that they are slightly fanned over each other. You can also use a slightly larger baking dish, but the cake will be slightly lower and may not be as juicy.

In a clean bowl, beat the eggs until fluffy, add fine sugar and beat again.

I just ground the sugar in a blender, but you can do it in a coffee grinder too. Add the zest. The mass should be thick.

In portions, we introduce flour sifted together with baking powder into the air mass. Mix gently, grabbing the dough from the bottom of the mold. The most important thing in this process is to keep as much air as possible in the dough.

Pour the dough over the oranges, level with a spatula. We bake for about 30 minutes at 180 degrees.

We check the readiness of the cake with a toothpick, if it is dry, you can remove it. Gently turn the pie over onto a dish, and the impregnation process starts immediately. Be careful as the syrup is very hot. The syrup penetrates the delicate biscuit making it juicy and tender.

Do not leave the cake in the pan, otherwise it will soften and fall apart. It is better to serve drinks with such a cake without sugar.
