Caramelized oranges

Small oranges are required for this dessert. This time I took a little larger than necessary. The biggest pieces ended up being not very pretty, as it was difficult for them to keep their shape. But this did not affect the taste in any way, and they were also eaten with appetite.

V classic version this recipe is used Brown sugar... But I replaced it with a regular white one. I don’t know about brown, but it’s delicious with white.

Ingredients:

  • oranges - 3 pcs.
  • sugar - 500 g

Cooking time: 2 hours 45 minutes

I cut oranges into thin rings, diameter 0.5 cm.

I put orange rings in a saucepan and fill with water. I put it on fire and bring it to a boil. I boil for 3 minutes to remove the bitterness from the skin

I take it out of the water and spread it on a towel so that the excess liquid is absorbed.

Pour a third of the total amount of sugar into a saucepan with a thick bottom.

I put half of the orange circles on top.

I fall asleep with the second third of the sugar.

Then - the remaining oranges and the remaining sugar. I fill it with water so that it slightly covers the oranges.

I put it on fire and bring it to a boil. As soon as the water boils, I reduce the heat and simmer for about two hours, until the skin is completely soft.

Gently put the oranges in a colander and let the syrup drain.

I put the orange circles on the parchment and put them in the oven to dry. The temperature should be around 150 degrees.

Drying will take half an hour.

I used such orange circles just like a dessert for guests. Tasty and better than any candy. But they can also be used as an ingredient for desserts.

And when preparing this delicacy, a delicious syrup remains. It can also be used! For example, I poured oatmeal and cottage cheese on them for breakfast.

Caramelized oranges with brown sugar

A slightly modernized recipe for caramelized oranges: use brown instead of regular sugar.

Would need:

  • 1 kg. oranges
  • 400 g brown sugar
  • 100 g of water

Better to take medium-sized oranges. Cut the fruit into slices 0.5 cm wide.
Take a deep frying pan, put brown sugar on the bottom, lay out a layer of oranges.

Repeat the procedure: a layer of sugar and a layer of oranges. Top it off with a layer of sugar.
Fill with water.

Simmer under a lid over low heat for 2 hours.
Add water if necessary.

Oranges appeared rather late in Europe, around the beginning of the 15th century. In their homeland, in China, they were bred long before the beginning of our era. Vasco da Gama, returning with his companions to Europe, enthusiastically reported how in one of the harbors of the east coast of Africa they were treated to a miracle fruit - oranges.

According to another version, the Europeans got acquainted with the orange tree and its fruits thanks to the crusaders who took them out of Palestine at the same time as lemons. The word "orange" in translation from German means "Chinese apple" ("apfel" - apple, "sina" China). For the delicate "Chinese apples" that do not tolerate frost, in many places the climate turned out to be unsuitable. Therefore, for their cultivation, they began to build special premises - greenhouses.

At the beginning of the 18th century, the fame of oranges reached Russia. In 1714, Prince A. Menshikov built a palace with large greenhouses, in which overseas fruits were grown. Some time later, Catherine II ordered to name this palace together with the settlement Oranienbaum (German "orange tree") and dedicated a coat of arms to it: an orange orange tree on a silver background.

The history of the Latin name for orange is quite interesting. It turns out that in ancient Greece, people fought moths with the help of cedar plants (cedr), which had a specific aroma. The combination of dark chocolate with the tart sweetness of caramelized oranges ... mmm, this is incredible! They just melt in your mouth, leaving behind a unique sensation. At this moment, you want to forget about everything around and just enjoy the taste ... The most important thing is that making this dessert at home is not at all difficult - though you need to be patient, because cooking this deliciousness will still take a couple of hours, but at the same time there is absolutely no fuss!

Cooking time: 2-2.5 hours

4-5 regular or 6-8 red oranges (depending on size)

Ingredients:

  • 550 g of sugar (you can use regular sugar for a lighter color of circles or brown for more flavor)
  • 10 g vanilla sugar or vanilla pod
  • 300 ml of water
  • 200-250 g dark chocolate
  • At will and taste - cinnamon, cloves, star anise, ginger and other spices

Cooking method:

Cut the oranges into beautiful circles about 5 mm thick.

We put them in boiling water for 2-3 minutes to get rid of the bitterness. We drain the water, and put the circles on a paper towel, cover it on top with it and gently blot it to absorb excess moisture.

Then put the oranges on the bottom of a deep dish (it is better to take a large diameter so that the oranges are stacked in fewer layers). In a separate bowl, heat 300 ml of water with brown and vanilla sugar until it dissolves. If we use vanilla from a pod, just cut the pod in half, remove the seeds and send everything together in syrup. You can also add your favorite spices there - cinnamon, cloves, star anise, ginger and so on. Fill the orange circles with the resulting syrup. And we begin to cook them exclusively on low heat for about 1.5-2 hours - until the orange peel becomes almost transparent, well soaked sugar syrup... If the syrup evaporates during the process, it's okay, just add a little more water. But as a result, it practically will not remain. Flip your oranges a couple of times so that they soak on all sides. And watch out for those at the bottom - so as not to burn. In general, they do not require close attention - just glance occasionally.

Carefully take out the mugs, let the liquid drain a little and put them on a baking sheet lined with culinary foil. We send the baking sheet to the oven to dry our miracle circles a little at a temperature of 90-100 ° C, 20-25 minutes is quite enough. Make sure that the oranges are never burnt!

Let the oranges cool. By and large, at this moment we already have a full-fledged dessert - caramelized oranges! By themselves, they are very tasty and they can not only be eaten with coffee or tea, but also used as a filling for a variety of pastries ...

But, as you understand, we do not stop there! In a water bath or in microwave oven melt the dark chocolate (you can use both milk and white, but the combination of dark chocolate with a sweet orange creates an incredible explosion of taste). We wrap a plate, tray or board cling film so that later there will be no problems with scraping the oranges from the surface. Dip each circle of orange in half of the chocolate and put it on the film. By the way, some people prefer to dip the oranges completely, you can try both :)

We leave the circles for a while to freeze the chocolate. The temptation to eat them earlier is great, but your patience will be rewarded! If you are in a hurry, you can put it in the refrigerator.

You can store such oranges in a cool dry place by placing them in a tightly closed jar or container. They will easily lie for a couple of weeks, have not tried it longer - they are always eaten faster.

Caramelized Oranges: Brown Sugar Recipe

To prepare this dessert, you will need the following ingredients:

  • medium-sized oranges - 1 kilogram;
  • brown sugar - 400 grams;
  • water - half a glass.

Rinse the fruit and cut into slices no more than half a centimeter wide. For the process itself, we need a deep frying pan. We alternate the sequence again. Sprinkle the second layer of oranges again

Now all this fruit and sugar splendor must be filled with water. Spread the water evenly over the edges of the pan. Turn on the gas and simmer the dessert, covered, over moderate heat for two hours. Remember to check the condition of the caramelization. If you think the water has completely boiled away, you can add some liquid. Cooking method

First, cut the oranges into thin slices. Again, you can use a vegetable cutter or the Small Circles slicer, better not to use it. If you do not like the bitterness of the zest, you can pour boiling water over the finished slices for a couple of minutes. This time is enough to give hot water characteristic bitter taste. However, do not forget to dry thoroughly after this procedure. Line a wide plate with a towel, place the orange slices on top of it, and cover the top with the towel again.

It's time to prepare the syrup. To do this, take a deep saucepan or stewpan of the appropriate diameter. As you already know, you can use a frying pan for this purpose. Pour in sugar, add vanillin, and also water. Stir the resulting composition with a wooden spoon or spatula. Heat until the sugar crystals are completely dissolved.

It's time to lay out the citrus circles. Simmer the composition over moderate heat for an hour and a half. Do not forget to check the condition of the bottom of the dish with a wooden spoon. Also remember that the wedges cannot simmer on one side, so turn them over using metal cooking tongs. The readiness of oranges can be judged by the white layer between the zest and the fruit pulp. If it has become translucent, then it's time to remove the slices from the vessel.

We send the circles to the oven

Next, according to this recipe, the caramelized oranges should spend some time in the oven. Carefully put the circles on a lined baking sheet and send them to a slightly preheated oven for 20 minutes. The temperature in the oven should not exceed 110 degrees. In fact, the caramelized circles are sent to dry.

We drown chocolate in a water bath

In the meantime, take two deep enameled or tin containers of different diameters and put them in each other. Pour a small amount of water into the lower (wider) container, and fill the upper one with dark chocolate wedges. Turn on a slow fire. You will soon see how the chocolate began to melt. You can stir the chocolate from time to time until all the slices are melted.

Registration

Remove the baking sheet from the oven, grab a pair of tongs and dip each circle exactly halfway into the melted chocolate. Place the finished wedges in one layer on a plate lined with baking paper. There is nothing difficult in this procedure, just be patient. When the wedges are completely cool, the chocolate will harden. To speed up the cooling process, you can place the dish with oranges in the refrigerator.

If you feel like it, you can experiment with white chocolate. The result is original caramelized oranges. They can also be used for cake decoration.
