Most delicious pies, of course, our grandmothers baked. Remembering my grandmother's pastries, I decided to bake yeast apple pies butter dough ... To make it even tastier, I added some raisins and cinnamon to the apple filling. And soon after that, the apartment was filled with the wonderful smell of baking muffins, cinnamon and apples. Ingredients:

  • a pinch of salt

For filling:

  • 600 gr. apples
  • 3-4 tbsp. l. sugar (more is possible, depending on whether your apples are sour or sweet)
  • Optionally you can add: 1 handful of raisins or sliced ​​nuts, cinnamon or vanilla sugar, 1/2 tbsp. l. starch (so that apple juice does not flow out of the pies)

Preparation:

  1. Heat the milk until warm, add salt and 2 tbsp. l. Sahara. Add mashed live yeast (or add dry). Stir gently. We put to wander in a warm place until foam forms.
  2. Melt butter or margarine, cool. Pour into the yeast that has come up - stir.
  3. Beat the eggs with a fork with the remaining sugar and also add to the yeast - stir again.
  4. Pour the sifted flour into 1 glass, stirring well each time. Add flour until the dough stops sticking to your hands. Put the dough in a deep bowl or saucepan and cover with a towel (if the dishes are not deep enough, the dough that has come up to the towel may stick). We put the dough in a warm place for 20-30 minutes.
  5. If we want to add raisins to the filling, rinse it and soak it in hot water... After 10 minutes, drain the water.
  6. Wash apples, cut into 4 parts, remove the core. Cut them into small cubes (approximately 0.5 × 0.5 cm). Mix with sugar and cinnamon (or vanilla sugar). You can add raisins or nuts, starch.
  7. The matched dough should increase in volume by 2.5-3 times.
  8. Knead the dough again, adding a little flour if it sticks to your hands. Roll out a little on a floured surface, cut out circles with a glass, set the trimmings separately. You can roll out not all of the dough at once, but part of it. Then we also roll out the cuttings, cutting out circles from them, until a small piece of dough remains, from which we roll out 1 circle.
  9. Put the apple filling in the middle of the circle.
  10. Immediately close up the pie, connecting the opposite edges and pinching, like. If you want a lemon-shaped pie, simply place it on a greased baking sheet (or lined with oiled baking paper) with the seam down. If we want the pies to be rectangular, we connect the corners of the pinched pie under the seam. We spread it with the seam down. We spread all the pies on a baking sheet and put them in a warm place for 15-20 minutes.
  11. When the pies come up, grease their surface with an egg, beaten with a little water. We put the baking sheet in hot oven and bake at 180º for about 20 minutes, remembering to watch them not to burn.

  4. When the dough comes up and grows in size, it's time to act. The ball must be rolled into a sausage and cut into equal pieces. We roll each one into a cake - this is the basis.
  5. About a tablespoon of the filling is laid out on the base, and the edges are fixed in any convenient way. Then the finished pie is poisoned on a greased baking sheet. You do not need to put the dish in the oven right away, it is better to give a little time for the dough to rise.

In a separate bowl, mix kefir, salt, 1 tbsp. l. sugar and sunflower oil... Heat the mixture to 40 degrees (slightly warm).


Mix yeast with kefir and stir well.


Then add flour in parts and knead the dough for 10-15 minutes. You may need a little less flour or more, depending on its quality and on the kefir. As soon as the dough only slightly sticks to your hands, stop adding flour. The dough should not be heavily hammered or tight.


Leave the dough warm for an hour, no more. Be sure to cover the bowl with a towel. In order for the yeast to work actively, the container with the dough can be placed in a steam bath (on a bowl with warm water). Dough in a multicooker works well with the Yogurt / Dough setting on. This program maintains the optimum temperature for raising yeast dough (+ 36-40 degrees).

So let's take necessary ingredients and proceed to kneading the dough for pies. We measure the sour cream and immediately transfer it to a large container. Pour the chicken egg to it, stir these ingredients well with a whisk.
