After that, the sauce should boil for another five minutes, after which it can be removed from the heat.

    We pour into the bottom of each jar prepared by us, 2 tbsp. l. hot sauce. Place a layer of eggplant on top. They, in turn, pour the sauce on top. Thus, we fill the jars to the very top. We cover them with lids, and then sterilize. To sterilize, take a large pot and line the bottom with a towel. Then fill this saucepan with water (the water should reach the middle of the jar placed in the pan in height) and send it to the stove. When the water heats up, place the filled vegetable salad jars. Reduce fire to minimum. Leave the workpiece in this form for 40 minutes.

    At the end of the sterilization process, jars of eggplant "Ogonyok" should be immediately sealed with lids. After that, turn the blanks upside down, wrap something warm and leave to cool completely. Then the jars can be sent to the kitchen cabinet for storage.
