Ingredients:

  • Sour kefir of any fat content - 1 glass;
  • eggs - 2 pcs;
  • wheat flour - 250 gr;
  • sugar - 2-3 tbsp. l;
  • salt -1/3 tsp;
  • soda - 1/3 tsp;
  • table vinegar 9% - 0.5 tbsp. l.
  • vegetable oil - how much will it take for frying.

How to cook pancakes on sour kefir

Beat the eggs until bubbles and foam appear. You can add sugar and salt right away, or add these additives along with flour.

You need to heat sour kefir over a barely noticeable fire, otherwise it will instantly exfoliate, curdle. Pour out fermented milk product in a small saucepan or bowl, set on low heat. Stir continuously, driving away from the walls. As soon as it warms up to room temperature, we stop heating. Pour the warmed kefir to the eggs. Whisk.

Sift flour, adding it to the dough in parts. Its amount may differ insignificantly and depends on the thickness of the kefir and on what kind of pancakes you want to make from sour kefir - lush or more tender, soft. For low-fat or low-fat flour, it will take about 230-250 grams, for thicker 2-3% fat, 200 grams is enough.

Add sugar and salt, if not done when beating eggs. For sweet fritters, you can add vanilla sugar or a little ground cinnamon.

Stir. At first, you will get a rough, lumpy mass, but as you beat it, it will become homogeneous and not as thick.

Having achieved a homogeneous, smooth consistency, we introduce slaked soda into the dough. For conventional recipe you need more of it, pancakes on sour kefir are lush with a minimum amount of added soda.

You do not need to make the dough very thick. The main thing is to achieve uniformity so that no lumps of dry flour come across. The consistency is about the same as homemade thick sour cream or condensed milk. Leave it to brew for 10 minutes.

Pour oil into a frying pan, completely closing the bottom by 1-1.5 cm. Heat over medium-high heat. Reduce flame, lower heat to medium. We collect the dough, put it in hot oil. To see how well it is warmed up, drop a couple of drops of the dough and see if bubbles appear around. If there are a lot of bubbles, the temperature is normal, you can fry the pancakes. If there are almost no bubbles, the heating is insufficient. Fry the pancakes for two or three minutes on one side, until bubbles begin to burst on the surface.

Prying with a fork or spatula, gently turn over, brown the bottom. After flipping, the pancakes will rise and look like flatbreads.

Put the hot pancakes on a paper towel, remove the excess oil. To taste, pancakes from sour kefir are obtained even better than from fresh products. They have a pleasant sourness, but at the same time there is no foreign aftertaste. They can be served with any additives from condensed milk to melted butter or sour cream. Bon Appetit!
