  • premium flour - 180 g (1 whole glass +1/3 tbsp.)
  • milk - 230 ml
  • eggs - 2 pcs.
  • granulated sugar - 100g
  • salt - ¼ tsp
  • vanillin - 1.5 g
  • baking powder - 1 tsp.

Preparation

  1. Crack the eggs, separating the whites and yolks. Grind the yolks with sugar.
  2. Add milk to this mixture and mix.
  3. Gradually add all the flour and the rest of the ingredients, except for the protein and salt. The butter must be melted. We mix. The dough is semi-thick, like a pancake.
  4. Now you should beat the whites and salt into a foam. Add proteins to the dough and mix everything.
  5. Ready dough for Viennese waffles bake in portions in a waffle iron for a few minutes until golden brown.
  6. You can serve such a delicacy with fruit jam, ice cream, condensed milk, whipped cream. Tea, coffee or just milk are suitable as drinks.

Belgian

Ingredients:

  • butter - 270 g
  • flour - 1 glass + ¾ glass
  • sugar - 100 g
  • salt - a pinch
  • eggs - 4 pcs.
  • vegetable oil for lubricating the mold - 2 tsp.

Brussels-style crispy waffles

Ingredients:

  • light beer - 1 tbsp.
  • flour - 1 tbsp.
  • vegetable oil - 2 tbsp. l.
  • vanilla sugar - 1 tsp
  • lemon juice - ½ tsp.
  • egg - 1 pc.
  • salt - a pinch
  • grated lemon zest - 2 tsp

Preparation

  1. Combine flour with vanilla and salt. Add lemon zest.
  2. In another bowl, combine lemon juice with beer, egg, and butter.
  3. Add dry mixture from another bowl to liquid ingredients. Knead the dough with a spoon or using the mixer attachments.
  4. Leave the dough to “ripen” for two hours.
  5. Then bake the waffles in portions, 3 minutes each.

Corn flour dough recipe

Ingredients:

  • eggs - 2 pcs.
  • butter (margarine) - 50 g
  • corn flour - 150 g
  • milk - 200 ml
  • liquid honey - 4 tbsp. l.
  • baking powder - 1 tsp.
  • cognac or rum - 1 tsp
  • chopped almonds - 2 tsp

Preparation

Melt the butter, combine with the rest of the ingredients, knead the dough and let it brew for 15 minutes. Then we bake our dessert.

Yoghurt waffles

Ingredients:

  • eggs - 3 pieces
  • sweet yogurt (vanilla or fruit) - 1.5 cups (375 g)
  • wheat flour - 1.25 cups (150 g)
  • baking powder - 1 teaspoon or baking soda - 1/2 teaspoon
  • salt - 1/4 teaspoon
  • butter - 100 g.

Preparation

  • Beat eggs in a large bowl, then add yogurt, flour, baking powder, baking soda, salt, melted butter, mixing until smooth.
  • Pour a small amount of dough onto the hot waffle iron. The dough will disperse slightly under the lid.
  • Bake for about 5 minutes.

Gas waffle maker dough

If you have preserved a baking dish for gas waffle cookies on your shelf since Soviet times, then this recipe is for you. The inner surface of such a waffle iron can be in the form of a solid disc for frying round wide waffles. And some devices inside have divisions in the form of cells for baking small triangular or curly wafers. The disadvantage of old-style waffle makers is that, unlike modern units, they do not have a non-stick coating. Because of this, the first portions of the dough often stick, so it is very important to pre-grease the mold with vegetable oil.

Ingredients:

  • sour cream - 1 glass
  • sugar - 1 glass
  • eggs - 2 pcs.
  • butter, softened - 200 g
  • baking powder or soda - 1 tsp.
  • flour - 2 cups.

Preparation

  1. Combine all ingredients and knead the dough (thick as pancakes).
  2. Brush the inner surface of the mold with vegetable oil. Place the mold on the stove, turn on the gas and heat the mold for a few minutes.
  3. Open the top half of the mold, pour a portion of the dough onto the bottom, close the mold tightly. Bake on one side for a few minutes. Then turn the mold over and bake the waffles on the other side until golden brown. The fire should be slightly less than average.
  4. After opening the tin and making sure the waffle cookies are browned, open the waffle iron completely, pick out the waffles with a knife and pour them out of the pan onto a baking sheet.

On a note

In some waffle dough recipes, some of the wheat flour is replaced with potato starch.

For making ice cream waffle cups as well as crispy thin wafer cakes, use the recipe unleavened dough... It includes 1 tbsp. flour, 1 tbsp. water, a pinch of baking soda and 1 egg.

Sometimes kefir is added to the waffle dough.

Lean waffles cook without eggs, put vegetable oil or lean margarine instead of butter.
