To prevent the apple from bursting, you need to chop it. We do this with all the ranetki. Pour into boiled syrup. We make the highest heat and quickly bring to a boil. We collect the foam, turn off the jam in a minute. Cool it down.

After complete cooling, put the jam on the stove again, add citric acid and a cinnamon stick. Bring to a boil quickly, then reduce the heat to a minimum. We warm up for about half an hour, but no longer let it boil.

We lay out transparent jam with paradise apples in sterile jars, roll up, after cooling down, you can lower it into the basement or put it in a cool pantry.

Apple jam is a very appetizing, tasty and healthy delicacy. Cook this wonderful dessert it can be from both cultivated apple varieties and from the wild. Wild apples differ from garden apples, perhaps, only in their small size, while in taste and useful properties these fruits are almost identical.

How to make wild apple jam?

First of all, you need to prepare the ingredients needed for our jam:

  • wild apples - 1 kg;
  • granulated sugar - 1 kg;
  • purified water - 250 ml.

Preparation:

Wildlife should be cleaned of stalks, washed under cool water, discarded in a colander and allowed time so that excess liquid can drain from them. Then you have two options to choose from - you can make jam from whole fruits (for example, if you use wild ranetki) or from apple slices.

If you choose the first option, then you should not peel off the peel from the apples, since during the cooking process it will become very soft, and there will be no trace of the former hardness. If you prefer the second option, then the wild apples should be cut in half, cored and cut into slices.

In enameled dishes, you must put the prepared fruits (whole or in slices), pour purified water and cover with granulated sugar. Apples should be simmered over the lowest heat. As soon as the fruits let the juice go, and there is a significant amount of sweet syrup in the container, you can detect 30-40 minutes, during which the cooking of our delicacy should continue. All this time, the jam should be continuously stirred and the resulting foam should be removed.

Wild apples are much tougher than garden apples, and therefore the time for making jam from them increases significantly. If unripe fruits were plucked, then the duration of their cooking is recommended to be extended to 1 hour.

To prepare glass jars for jam. To do this, they must be carefully washed with baking soda, pasteurized, and then thoroughly dried. Hot apple jam pour into jars and seal them with metal lids using a seaming wrench. Store the containers cooled at room temperature in a cool place.

Apples, especially if they are whole in such a jam, are unusually sweet, well-soaked in sugar syrup. Having bored through them, you will feel a piquant sourness, which gives this dessert a pleasant incomparable forest aroma.

  6. After a day, add the lemon cut into slices to the apples and put the basin on the fire again. Bring the contents to a boil, mark for 10 minutes, and remove the basin from the stove. Remember, you can't stir the jam! Only shake slightly. Otherwise, you risk damaging the integrity of the fruit;

Whole small apple jam with cinnamon

Ingredients for cooking:

  • Small apples "Paradise" - 1 kg;
  • Granulated sugar - 1 kg;
  • Apple juice - 1 tbsp.;
  • Cinnamon - if in powder 1 tsp, if with whole sticks - 1 pc.;
  • Oranges - 2 pcs.

Step-by-step description of cooking:

  1. Cooking jam from small apples is very convenient because the fruits do not require special processing and preparation. They do not need to be peeled and coreless and then cut into wedges. Everything is extremely simple - you just have to take away good apples(without damage, wormholes and the presence of rot), wash them thoroughly, dry them and prick them in several places with a toothpick or skewer. Then the chopped fruits are dipped in boiling water for 2-3 seconds and immediately transferred to a bowl filled with cold water.
  2. Cut the washed oranges together with the zest into slices, pour over apple juice and boil until soft. Then add granulated sugar to them and stir until it is completely dissolved.
  3. After the sugar has dissolved, dip the prepared apples into the orange syrup, bring to a boil and remove from heat after 10-12 minutes. Leave it overnight.
  4. The next day, put the future jam on the stove again, boil (certainly over low heat) and cook for about 10 minutes. Remove from heat again and leave to infuse overnight.
  5. At the last stage of preparation, after a day, cinnamon is added to the apples, the mass is slightly mixed by gently shaking the container and boiled again at low boil for 10 minutes.
  6. Put the finished jam in sterile jars, roll up and, turning upside down, leave to cool. Store in your basement or pantry room.

To make the delicacy transparent, jam from heavenly apples with tails should be cooked only over low heat. Since intense boiling contributes to a change in the characteristic amber shade to a darker one. And besides, the taste of jam from intense boiling is lost and becomes caramel-viscous (like burnt sugar).
