Sift the flour into a deep bowl so that the dough is airy, make a depression in it, into which we break the egg, add kefir and other products, and then mix into a homogeneous mass. Then we knead it by hand on the table until the mass stops sticking, and, wrapping it in plastic, put it in the freezer.

To make the dumplings tasty, you need to know a few secrets:

  1. Do not roll out the dough too thin.
  2. Roll out better in a cool room.
  3. To prevent the mass from weathering, cover it with a clean towel or bowl.
  4. It is advisable to prepare the filling so that it does not release liquid when heated, which will spill through the dough shell.
  5. The cherries should be separated from the seeds, keeping the berries in sugar for a long time, and drain the released juice several times. After this procedure, not a single dumpling will ever tear or fall apart.

There is one secret: cold water has a better effect on the mass - it is more elastic when sculpted and does not dry out.

But the milk for the dough should be slightly warmed up, then the dumplings will be fluffy, although the dough does not have a calorie content. Vegetable oil will add elasticity, and a little plasticity boiled water... For a milk test, we need:

  • Flour - 3 cups

  • Egg - 1 pc.
  • Oil - 1 tbsp. l.
  • Water - 0.5 cups
  • Salt - 1 tbsp spoon
  • Sugar - 1 tsp

Stir flour, salt, sugar, then pour in milk and then mix until smooth. Then add the egg, vegetable oil, chilled water, stirring again. Until a soft mass is obtained, add a little flour and knead until it stops sticking, then cover it with a towel and wait half an hour until the dough "rests". For the dough, we will take flour (3 cups), an egg (1 pc.), Water (1 cup), salt, sugar. For the filling, we need 700 g of fresh, canned or frozen cherries.

So, we offer a step-by-step recipe:

  • Wheat flour - 200 gr
  • Kefir - 100 ml

  • Egg - 1 piece

  • Cherry - 300 gr
  • Starch - 1 level tablespoon

Kneading the dough for dumplings... I make the dough according to the recipe of the famous chef Pokhlebkin. It is kneaded in hot water, but not boiling water. Such dough does not stick to hands and table at all.

Pour flour into a bowl.

Add salt and sunflower oil.

Pour hot water but not boiling water.

Kneading the cool elastic dough and let him "rest" for 10-15 minutes.

Then we cut the dough piece by piece and roll it into a thin layer. Cut out circles with a glass.

We put cherries in each circle.

We form all the dumplings in this way.

Cooking sauce for dumplings, but in fact - thick jelly... To do this, you need to take cherry juice and sugar (add to taste).

Bring the cherry juice and sugar to a boil and pour in the mixture of starch and a little cold water... Cook until thick. This will take 3-5 minutes.

Cook dumplings. Pour water into a saucepan, bring to a boil and send the dumplings into it. Cook for at least 10 minutes. If you are told that as soon as the dumplings come up, then they are ready, do not believe it. They will pop up almost immediately, but will still be soggy. Cook until tender.

Serve ready-made lean dumplings with cherries with a special cherry sauce. Very tasty!
