But this does not mean that it is worth stopping at what has already been achieved, that is, on the already familiar and beloved unpretentious soups and no longer trying new ones. I was hooked on this recipe for lean rice soup by the fact that it contains tomato juice, and from the experience of making kharcho soup, I already know that rice plus tomato juice is a very tasty combination. And also surprised by the bright green spots of peas, it seemed very appetizing to me.

Lean rice soup turns out to be easy and simple to make. Even frying, and that is cooked in the same saucepan in which the soup is cooked in the future. Everything will take you no more than 30 minutes. Here we go?

Ingredients:

  • 1 large carrot
  • 2 medium potatoes
  • 1 glass of tomato juice (250 ml)
  • 3 glasses of water
  • 4 tablespoons rice
  • 20 ml sunflower oil
  • Bay leaf
  • 100 g frozen peas
  • 0.25 tbsp ground paprika
  • fresh herbs for soup
  • salt, pepper to taste

Lean rice soup recipe step by step

Let's start our lean rice soup by peeling and slicing potatoes and carrots. Cut the peeled potatoes into medium cubes, the carrots into smaller cubes.


Add a little sunflower oil and diced carrots to the saucepan in which the soup will be prepared. Fry the carrots over medium heat, stirring often, for about 3-4 minutes.


Then add potatoes and bay leaves to the carrots and continue to fry the vegetables for a couple of minutes.


Next we need tomato juice. I have a homemade one, but I rolled it up. We measure out 250 ml of juice (one glass). You can also use store-bought tomato juice or homemade fruit drink, or canned tomatoes in its own juice.


Pour a glass of juice into a saucepan with vegetables.


Add water. I needed 3 glasses of water for this amount of ingredients. Then the lean soup with rice will be medium thick.


Add a quarter tablespoon of ground paprika to the saucepan, it will add spice and aroma to the soup.


Add 4 tablespoons of rice and cook the soup over low heat over low heat closed lid until the rice is fully cooked, that is, about 20 minutes from the moment the liquid boils.


Five minutes before the end of the preparation of the lean soup with rice, put about 100 g of frozen green peas in a saucepan.


At the end of cooking, salt and pepper the soup to taste (about 0.3 tablespoons of salt), and season it with finely chopped fresh herbs.

Ingredients:

  • We cook vegetable broth - put vegetables that are at hand in a saucepan of the required volume: a piece of celery (root or stem), a couple of carrots, parsley root, a little cabbage, unpeeled onion, two or three bell peppers, pumpkin, green beans, fill with water, bring to a boil, reduce heat and boil at a minimum temperature of 40-60 minutes. Turn off the heat, leave the broth under the lid - brew. After 2-6 hours we filter the broth, it is ready for further use.
  • We cook the soup directly. Peel the onion, cut into small, small cubes. Pour vegetable oil into a saucepan, put onion, fry until light golden brown over minimal heat.
  • Peel the carrots, rub on a fine grater. We spread it to the onion.
  • Peel the potatoes, cut into cubes. Add to the pan. We mix.
  • Pour well and very well washed rice into a saucepan.
  • Fill with broth. Bring to a boil, then reduce heat and cook soup until tender - about 25 minutes. We pour and serve.

After 10-15 minutes of boiling the potatoes, the dressing is added to the soup pot, as well as bay leaves and pepper. Also at this stage, the dish needs to be salted to taste.

Now the soup will cook over low heat for about 10 minutes. Ready soup is poured into bowls. When serving, you can add a sprig of parsley to it.

Lean Rice Soup with Vegetables

Required Ingredients:

  • potatoes - 4 pcs.;
  • rice - 100 g;
  • celery stalk - 1 pc .;
  • water - 2.5 l.;
  • ginger root - 40 g;
  • canned corn - 50 g;
  • vegetable oil - 100 ml.;
  • carrots - 1 pc.;
  • onions - 1 pc.;
  • a mixture of peppers - 0.5 tsp;
  • table salt and some lean mayonnaise.

Cooking process:

So, to prepare such a soup, it is poured into the pan cold water which must be brought to a boil. Further, the heat is reduced to medium and the already washed rice is poured into the pan.

While the rice is cooking, you need to prepare the rest of the vegetables. To do this, cut ginger, onions and carrots into small squares.

Raw potatoes must be rinsed in water, then peeled and cut into small cubes, and then immediately sent to the rice pot. The soup will now cook for about 15-20 minutes.

The next step is to lightly fry the onion with ginger root and carrots together until half cooked. In this case, the ready-made soup dressing will be added to the dish about 10 minutes before it is fully cooked.

So, at the end, 3-5 minutes before the soup is fully cooked. You need to put in it canned corn and celery, as well as pepper and salt to your liking. If desired, you can add any spices to the dish.

  4. The soup is cooked until the potatoes are soft and salted.

You can add any spices to the dish, as well as dried herbs.

Ingredients: a piece of pork for 350-400 g, 4-5 tbsp. l. white rice, fresh parsley, salt, 130 g potatoes, dried vegetables for the soup.

Rich chicken soup with rice

Ingredients: 4-5 wings, 2 tomatoes, 230 g potatoes, half a glass of white rice, medium carrots, onions, 3 liters of purified water, salt.

  1. Broth is cooked from the wings. Then the meat is removed from them and returned to the water, and the bones are thrown away.
  2. Vegetables (onions and carrots) are finely chopped and sautéed in any oil - they should turn golden.
  3. The potatoes are cut into strips and sent to the broth. When the vegetable has softened, about 6-7 minutes before the dish is ready, washed cereals and slices of tomatoes along with the skin are poured into it.

Delicious to serve chicken soup with rice along with sour cream and croutons.

With meatballs

Ingredients: 420 g mixed mince, 2 pcs. onions, turnips, carrots, 4-5 potatoes, large egg, half a glass of round rice, table salt, freshly ground pepper.

  1. Chopped vegetables, except for potatoes, are fried in hot oil until tender.
  2. The groats are moved from the spoiled grains, washed to clean water and, together with the potato strips, are sent to boil in salt water.
  3. After 15 minutes, meatballs can be added to the broth. They are made from minced meat mixed with salt, egg and pepper. The balls should be about the size of a walnut.
  4. The meatballs are sent to the pan along with the fried vegetables.

After another 15-17 minutes, the meatball and rice soup will be completely ready.

Soup kharcho

Ingredients: 430 g of beef on the bone, 4 tbsp. l. white rice, 3 pcs. onions, 3-4 tomatoes, a head of garlic, salt, a mixture of fresh herbs (cilantro, dill, parsley).

  1. Beef is cooked for 100-120 minutes. You can add lavrushka and black peppercorns to the broth for flavor. The finished liquid is filtered and returned to the pan.
  2. The meat is removed from the bone, finely chopped and fried with onion cubes. When the ingredients are browned, a little broth is poured out of the saucepan. The mass is stewed for 8-9 minutes.
  3. After adding slices of peeled tomatoes, stewing continues for the same amount of time.
  4. The strained broth is brought to a boil and the contents of the pan are transferred to it. Washed rice is poured into the future soup, salt is added. You can immediately add the crushed garlic and chopped fresh herbs.

After a couple of minutes of cooking, the beef kharcho soup with rice is turned off, covered with a lid and left to infuse for 20 minutes.

Tomato soup with groats

Ingredients: large chicken fillet, carrot, 2-3 potatoes, onion, 3 tbsp. l. white rice, 2 tbsp. l. tomato paste, 2 liters of purified water, rock salt.

  1. Fillet is poured with cold water and cooked until tender.
  2. After 17 minutes, washed rice and potato cubes are laid out to the chicken. The ingredients are cooked until the vegetable is soft.
  3. The remaining chopped vegetables are fried in heated oil. Then tomato paste is added to them and cooking continues for a couple of minutes. The mass is salted and transferred to broth.

The soup is cooked until tender and served hot for dinner with fresh dill.

Fish first course with rice

Ingredients: large potatoes, 1 pc. onions, carrots, medium young zucchini, 330 g of hake, 90 g of steamed cereals, salt, bay leaves.

  1. The fish is cleaned of all that is superfluous (head, fins, tail, scales), after which it is cut into pieces and sent to cook with salt and lavrushka leaves.
  2. After 10-12 minutes, you can move all peeled and finely chopped vegetables into the pan. If there is no need to count calories, onions and carrots can be pre-fried on butter .
  3. When the vegetables are almost ready, the washed rice is poured into the soup.

After another 10-12 minutes of cooking, you can pour the treat in portions and serve it for dinner.

Milk rice soup

Ingredients: 330 ml whole cow's milk and the same amount of filtered water, 2 tbsp. l. sugar, ½ tsp. fine salt, a piece of fatty butter.

  1. Milk with water is brought to a boil, salt and sugar are poured into it. Dry components must completely dissolve in the liquid.
  2. Then cereal is poured into the milk, washed to clean water. After that, the soup is cooked for 15-17 minutes.
  3. If the consistency of the treat turns out to be too thick, you can dilute it with hot milk.

In ready milk soup add butter to taste with rice.

Classic pickle

Ingredients: slightly less than a pound of beef on the bone, 2 large carrots, turnip onions (2 pcs.), Salt, 280 g barrel cucumbers, granulated garlic, 2 tbsp. l. white rice, a couple of potatoes, a slice of butter, half a glass of pickle from cucumbers.

  1. Cook beef with 1 carrot and onion for 110-120 minutes. You can immediately add salt to the broth. The onion must be pierced in several places with a knife and only then straightened into the pan.
  2. The finished broth is filtered. The meat is removed from the bones, the latter are thrown away.
  3. Leftover onion cubes, straws raw carrots and pickles are fried in butter. Then minced meat, brine are added, and all the components are simmering for several minutes. You can immediately salt them and sprinkle with garlic.
  4. Washed rice and potato cubes are sent to the broth.
  5. After 6-7 minutes, fry can be added to it

The soup is immediately turned off, covered with a lid and left to infuse.

Mushroom soup

Ingredients: 4 l chicken broth, half a glass of long rice, 280 g fresh mushrooms, 4 pcs. potatoes, tomatoes, 1 pc. onions, carrots and bell peppers, 2 large eggs, a pinch of powdered saffron, 2 tsp. spicy adjika, salt.

  1. Cut fresh mushrooms into medium pieces and lightly fry in hot oil.
  2. Other chopped vegetables sprinkled with salt and saffron are fried separately. Tomatoes are pre-peeled.
  3. Mushrooms are laid out for frying and the stove turns off immediately.
  4. The potato strips are sent to boil until soft. Together with it, washed rice is poured into the pan.
  5. When the potatoes are half ready, frying, salt and adjika are added to the future soup.
    1. The potato sticks and rice washed to clean water are sent to the pan to boil.
    2. When both products are half cooked, frying made from chopped garlic, carrots and onions is added to them.
    3. The contents of the pan are sent to the future soup along with green peas... You do not need to defrost it beforehand.
