Preparation

Let's start our Ducan cake with the preparation of chocolate cakes.
We will bake two cakes separately, so it is better to prepare the dough for the cakes separately.
For one cake we need 2 tbsp pudding, 3 eggs, 2 tsp. baking powder, sugar, a pinch of salt.
Separate the yolks from the proteins and mix them with the rest of the ingredients until a homogeneous consistency is formed. Mix the yolk mass until smooth. Beat the whites until they are strong peaks with a pinch of salt.
You should get VERY strong peaks - the spoon should be standing.
We carefully introduce the proteins into the yolk mass so that they do not fall off. Pour into a suitable form (I have 18 cm in diameter) and bake at 180 C until "dry stick".

We take it out of the oven, cool it on a wire rack.
We also prepare the dough for the second cake and bake it.
Cut the cooled cakes with a sharp knife in half lengthwise. We get 4 cakes.

For the cream, mix up all the ingredients. If you had a thick curd, add milk or yogurt until the mass becomes like a cream in consistency.
We collect our cake, greasing each cake with cream. Do not grease the top of the cake with cream.

Cooking the icing. To do this, mix all the ingredients very carefully so that no lumps remain. Cover the cake on top.

A little about diet

The Ducan Diet is a dietary principle based on eating a lot of protein and cutting back on carbohydrates. It was developed by the French doctor Pierre Dukan and gained high popularity, first abroad, and then throughout the entire post-Soviet space.

The diet helps to quickly lose excess, but at the same time do not limit yourself in the amount of food eaten. It is only important to adhere to certain rules and follow all the recommendations. First of all, it is worth knowing that the Ducan Diet consists of 4 stages:

  1. Attack. The most difficult stage, which lasts 2-7 days (depends on the initial weight). You only need to eat proteins and completely eliminate carbohydrates.
  2. Alternation. The longest stage, which lasts until you see the desired numbers on the scale. At this stage, protein and protein-carbohydrate days alternate. You can choose the scheme yourself, options from 1/1 to 5/5 are allowed.
  3. Anchoring. This is a stage that is calculated individually and is necessary to consolidate the result. For every kilogram lost, you need to go through a 10-day consolidation stage. At this time, there are some indulgences, for example, in the form of "Feast" - a day when you can eat whatever you want.
  4. Stabilization. A stage designed for a lifetime, if you want. Stabilization implies a slight dietary restriction, but generally permits the consumption of almost all foods.

Of course, this is just a general description of the Ducan diet. There are many nuances that need to be learned before "sitting" on it. One thing is for sure - by sticking to the Ducan System, you will not starve. Moreover, you will eat cakes and lose weight at the same time! It is amazing, but there are thousands of recipes for various sweets that can be cooked "Ducan style". And one of the most popular desserts is definitely chocolate cake.

Cooking recipes

Many do not believe that you can eat cakes and not only not gain weight, but also lose weight. But numerous followers of Dr. Ducan's diet have proven that this is possible. And you will be surprised when you try to cook one of these recipes - the chocolate cake turns out to be really delicious. No one will even understand that it is not prepared from ordinary products, has a low calorie content and is useful.

Of course, to make the cake as "real" as possible, you will need special ingredients that are often used in the preparation of pies, cakes or desserts. Some of them can be purchased at a regular grocery store, but some are quite specific, so you will have to order them online or look for specialized diet food stores.

Separately, it is worth mentioning cocoa, which is an indispensable ingredient in the preparation of chocolate cakes and pies. On the Ducan diet, you can consume fat-free cocoa without restrictions with mass fraction fat up to 2%, which can be purchased only in specialized stores.

If this is not possible, then look for cocoa on the shelves up to 11% fat. It can be used as an additional product (supplementary product) up to 14 g per day (3 tsp).

Important! It should be remembered that, starting from the Alternation stage, 2 DOPs are allowed per day. At the Attack stage, DOPs are prohibited, so chocolate cakes and pies are not suitable for this stage.

Pie

If you are not a cake lover or just want to start with a simpler recipe, then chocolate pie according to Ducan will become excellent option(in the photo you can see how spongy and airy it turns out). The calorie content of the whole dish is 600 calories.


To prepare it, you need the following products:

  • 150 g soft fat-free cottage cheese;
  • 4 eggs;
  • 20 g of COM (skimmed milk powder);
  • 40 g starch (corn or potato);
  • 1 tbsp. l. fat-free cocoa (up to 2%);
  • 1 tsp baking powder;
  • 10 tablets of sweetener;
  • vanillin, salt.

How to cook:

  1. It is necessary to separate the whites and yolks. Whisk the proteins with a mixer until they reach stable peaks (when the cup is turned over, the proteins remain in place), this takes 7-10 minutes.
  2. The yolks are mixed with the rest of the ingredients, stirring thoroughly so that no lumps form.
  3. The whipped whites are gradually mixed into the resulting dough, gently stirring with a silicone spatula from bottom to top.
  4. Fill the mold 2/3 and put in the oven (180 degrees). The cake is baked for about half an hour, the exact time will depend on the characteristics of your oven.

With hazelnuts

Ducan's diet allows for a variety of nuts at the rate per day. Therefore, you can make a delicious chocolate-nut cake with hazelnuts, the calorie content of which for the whole dish will be 1250 calories. Considering that you will get a large cake, the calorie content of each bite will be quite low.


For a biscuit you will need:

  • 30 g starch;
  • 30 g COM;
  • 20 g fat-free cocoa;
  • 6 eggs;
  • 10 tablets of sweetener;
  • a pinch of salt.

For the cream:

  • 400 g fat-free soft curd;
  • 50 ml skim milk;
  • 20 g fat-free cocoa;
  • 15 sweetener tablets.

For decoration - 40 g of hazelnuts.

Preparation:

  1. Separate the whites from the yolks and beat with a pinch of salt until stable peaks (this will take about 10 minutes).
  2. The yolks are mixed with all the ingredients for the dough, whisking thoroughly to prevent lumps from forming.
  3. The proteins are carefully combined with the dough so that they do not fall off.
  4. The resulting dough is poured into a mold and then baked at 180 degrees for about 30-40 minutes.
  5. At this time, you can prepare the cream. To do this, mix all the ingredients and beat with a mixer until smooth.
  6. The finished biscuit is cooled (preferably on a wire rack), and then cut into three cakes. Each of them is greased with cream, the finished cake must also be smeared with cream on the sides and on top.
  7. The final stage will be decoration. To do this, you need to chop the hazelnuts and decorate the cake with it on top.

Cooking the dough. Divide the egg into whites and yolks. Mix the yolks with yogurt, and beat the whites with a pinch of salt until persistent peaks. Add slaked soda to yogurt. Mix all dry ingredients and add to the yolk-yoghurt mixture. Bake 3 small thin cakes at 200 degrees. I do this on a silicone mat, after having smeared the circle on the backing. What is good about a silicone mat? The fact that the dough does not creep on it, but retains its shape. Dukan cake without bran is prepared very quickly.

While the cakes are baking, we make a cream: just beat all the ingredients. You can add a pinch of gum to thicken the cream. But personally, I like this option less.


For example, in order for baked goods to be tasty, it is better to mix all dry ingredients together, and only then add to the liquid, and not separately, as is usually done. Perhaps, not in all the recipes, I don’t know yet, as far from everything is baked, but basically this rule works.

If the recipe does not require whipping products, then it is better to mix by hand.

When baking, do not open the oven door or knock it, otherwise the dough will settle.

    1. The oat bran should be ground into flour using a coffee grinder.
    2. We mix the resulting flour, egg and milk. We insist the mass for five minutes.
    3. Then mix the cornstarch with baking powder and add them to the bran dough.
    4. Now we take the carrot, peel and rub it on a fine grater. Put the resulting mass into the dough, mix.
    5. To prepare the cake, we heat the oven to 180 ° C. Bake the biscuit in silicone mold 20 minutes.
    6. To prepare the cream, you must first grind the lemon zest on a fine grater. Then beat the curd with a mixer and add the rest of the ingredients to it. Mix the resulting cream thoroughly.
    7. Cut the cooled cake into four parts with a knife.
