Brewing equipment. Beer production line

Nowadays, beer production is almost the most demanded type of business. A huge number of large enterprises for the production of beer and the supply of various equipment for breweries are located on the territory of our country.... There are several reasons for this. The most basic of them is that beer is the most favorite drink for the population of our country. The second, no less significant reason for the popularity of the beer business is the fact that a mini brewery can be opened practically without costs if there is a franchise.

Today beer is one of the most beloved drinks of the Russian people, especially in the hot summer time. As a result, making and earning a variety of beers is also a seasonally lucrative business. However, if sales are organized correctly, then income can be received all year round.

Where to start a brewing business?

You can certainly buy a mini brewery. Moreover, there are companies for the production of turnkey breweries in Russia. So, if you decide to open your own small brewery, then in order to avoid problems, you need to know and understand the specifics of such a business. In general, today the opening of our own mini-brewery for bottling beer is possible of two types:

  1. micro brewery (daily production volume 50 - 500 liters);
  2. mini brewery (daily production volume 500 - 15,000 l).

At the same time, it is better to choose the brewing technology through an agreement with a restaurant or cafe. It is better to choose a shorter brewing type. Firstly, this type is very easy to cook in a small area, which completely eliminates the additional costs of renting a large room. In addition, in this case, there is no need to use filters, which is a cost savings. It must be said that the steeped cooking technology takes place only with the use of malt extracts. And this is a completely ready-made raw material for fermentation.

How much can you earn from brewing beer?

With the correct organization of the production process and marketing policy, your own mini-brewery can bring profit, which will allow you to return your investment in a maximum of 2-2.5 years after the start of operations.

Small Brewery Monthly Performance:

  • The gross income of the enterprise is 10 thousand dollars.
  • Monthly costs, including taxes, $ 7.5 thousand
  • Net profit 2.5 thousand dollars.

These figures are based on industry averages, taking into account seasonal changes in sales volumes.

The amount of financial injections required to organize the production of beer

If you decide to start producing beer on a small scale (up to 100 liters per day), then it is quite possible to invest in the amount of 7-10 thousand dollars. 40 thousand dollars.

One-time financial investments include:

  • Registration and receipt of the necessary documents.
  • Purchase of equipment.
  • Purchase of furniture and office equipment.
  • Indoor renovation.

But in addition to the above costs, you need to pay monthly costs until the enterprise reaches the level of self-sufficiency. These include: staff salaries, purchase of raw materials and consumables, rent, advertising, etc. The total amount is about 7-8 thousand dollars, and the financing period can be from 2 to 6 months.

What equipment to choose for brewing?

It is better to use equipment with high production rates. This allows you to significantly reduce the time for brewing beer. How to choose the right type of equipment and how to purchase it? So that there are no problems in this issue, you need to move towards your goal in stages:

  • Purchase of equipment for your mini brewery. At the same time, it is better to buy equipment from trusted manufacturers (franchise), European or Chinese. For comparison, let's give the cost of breweries from large suppliers.

The majority, of course, purchase domestic equipment. The first reason why they do it is its cost. After all, domestic equipment is much cheaper than the same equipment only made in China or European countries. It should also be noted that the equipment produced in the Czech Republic is considered the highest quality for mini-breweries. No less high quality German and Austrian. The only difference with Czech equipment is its cost, which is much lower.

  • In addition to the main equipment, you will need to purchase:
  1. packaging for transportation and storage of finished beer. If these are kegs, then they also need to be purchased in full. When choosing a material, preference should be given to food grade plastic;
  2. for pouring finished beer into kegs, a filling installation is needed;
  3. containers for washing containers.

Now all that remains is to find out what size the premises should be in order to locate your mini-brewery.

Preparation of documents required for the legal operation of the brewery

The solution of paper issues must begin with the registration of an LLC. In this case, the procedure for issuing documents for a legal entity includes: payment of state fees, formation of a statutory fund, resolving an issue with a legal entity. address, preparation and notarization of constituent documents, as well as registration with the Federal Tax Service, statistics bodies, PF, social and health insurance funds. In the process of registering an LLC, you need to select an activity code according to the all-Russian classifier (in this case, it is OKVED 15.96).

For the production of beer it is necessary to obtain permits:

  • Fire inspection.
  • Energonadzor.

It is imperative to agree on the issues of water supply and sewerage (as a rule, with representatives of local housing offices), as well as sign an agreement on garbage disposal. In some cities of the Russian Federation, this activity is subject to licensing.

Choice of taxation regime

Beer producers have practically no alternative in terms of choosing a taxation system. If you decide to start this business, get ready to work on a general basis. The main thing that you need to decide in this situation is to find a good chief accountant. A qualified specialist saves the employer an amount that is several times higher than his salary. Therefore, there is no need to save on this expense item.

Choosing a room

Choose a room, a basic and serious process. For a beginner individual entrepreneur, it is better to rent a room for setting up a brewery. Since there will be more than enough costs to start, and there is no need for extra costs. What it will be in terms of area depends on the volume of production.

When choosing a room, keep in mind that all equipment operates on a three-phase meter. This means that the premises should not be residential. Having bought or issued a lease, you need to take care of safety and fire safety, as well as observe all SES requirements... Without this, it will not be possible to obtain permission to open an enterprise.

Staff recruitment: where and how to choose?

Undoubtedly, the franchise, according to which all the working moments are discussed, obliges to have the exact number of employees available. For high-quality work of the enterprise, the following specialists are needed:

  • director;
  • specialist chef;
  • electromechanic;
  • manager;
  • accountant;
  • service personnel.

Recruiting can be started immediately after obtaining permission to open a mini-brewery. It is better if the selection of personnel is carried out at the time of receipt of the equipment. Typically, if there is a franchise, the supplier will provide training to employees regarding the operation of the supplied equipment.

And the last very important step

The main thing is to pay attention to the following important things. It is necessary to conclude an agreement with the equipment supplier, according to which the franchise was signed. And, of course, check its service warranty period. Having made the purchase of the necessary equipment, you need to start at least important issues, this is the purchase of materials for production.

In order to competently build and develop your business, if you have a franchise, you need to decide on four main factors:

  1. Method of brewing beer.
  2. The scale of the planned production.
  3. The quantity and type of raw materials for the bottling process.
  4. Suppliers.

If the second point is solved at the very beginning, then the purchase of raw materials directly depends on the method of brewing beer. But regardless of the complexity of the recipe, you must use malt, yeast, water and hops.

  • Malt. There are 3 classes. The price range depends on the company, if you buy malt in Russia, it will cost you 7800 - 9000 rubles. You will have to pay more expensively for imported malt, about $ 360 per 1000 kg, but the efficiency of using such raw materials is much higher than that of domestic ones.
  • Hop. There are dozens different varieties hops, but type 90 is most suitable for brewing. As a rule, if there is a production franchise, then the varieties have already been discussed.
  • Yeast can be purchased from the factory or from private breweries. It is also worth noting that for the preparation of such products as beer, you need to use horse and grass-fed yeast.
  • If you want to improve product quality, you need to use filtered water.

Do I need a permit to open a brewery?

But in order for your brewery to work, you need to obtain permits from the authorities:

  1. SES, Energonadzor, PGI.
  2. Licensing Department of the State Tax Inspectorate.
  3. A certificate that guarantees confirmation of hygiene standards for products. To obtain this certificate, an assessment of the products will be done, even if you have a franchise, it does not exempt you from the quality control procedure.

An important technological point is the verification and adjustment of equipment by the supplier company. It must be installed and tested before starting the robots. All raw materials must be fresh, and the purchase is carried out just before the opening of the plant. By adhering to such simple and not complicated recommendations, it is very easy to achieve the results you need. Especially if there is a franchise agreement, according to which you work under an already well-known brand, and even with low turnovers, potential customers will quickly pay attention to you.

The idea of beer production is not new, but the wide possibilities that open up with modern equipment make it relevant and profitable. Large breweries only a few varieties of the drink are produced, their main advantage is the scale of production. Beer mini-factory

A small mini-factory can produce more than a dozen varieties, satisfying the tastes of a large number of consumers. You can regularly update the assortment, making the products interesting for connoisseurs of real beer.

The mini-brewery has a number of other advantages over large enterprises:

What are the mini-factories

Small breweries are of two types:

  • microlines, for home use, with a capacity of up to 1000 liters per day;
  • restaurant equipment with a capacity of up to 3000 liters per day.

Many restaurants open their own breweries, thus attracting more visitors.

How to open your own microbrewery

The most popular are the beer production lines of the German company Speidel. The Braumeister for a restaurant has the following technical characteristics:

Bavaria 70L mini-brewery for home use (Germany).

Specifications:

  • productivity - up to 200 liters;
  • power - 2.5 kW;
  • boiler volume - 70 l;
  • control - automated, 10 recipes;
  • cost - 60,000 rubles.

Electric brewery Grainfather (China), specifications:

Description of production equipment

A mini-factory for the production of various types of beer should have the following components:

You can add to the production line:

  • water filters (50,000 rubles);
  • installation for washing kegs (250,000 rubles);
  • kegs (3000 rubles for 1 piece).

It is necessary to pay attention to the material from which the main production elements are made. In order for the equipment to serve for a long time, it is worth giving preference to stainless steel of the AISI 304 brand or corresponding to GOST 5632.

Today, high-quality steel for equipment is produced by the Italian company Ital Inox and the German company Thyssen Krupp.

The cooker must be well insulated to ensure the best possible performance in the finished product.

For the production of a filtered beverage, it is necessary to include a frame or diatomaceous earth filter in the line. Frame provides better filtration and is slightly cheaper than diatomaceous earth.

If you are producing beer for sale, it is imperative to have cleaning and disinfection equipment for kegs.

Manufacturing process

The technological scheme for making beer using a small brewery is as follows:

Raw materials for production

There are a large number of recipes for making, many manufacturers select unique compositions and make a branded product. Regardless of the recipe, the main ingredients of beer are the following:

The taste, aroma, color, foam stability and aftertaste of a beer drink depend on the malt. One type of beverage can contain up to seven different types of malt. To produce 100 liters of product, 18 to 25 kg of malt are needed. The most common types of malt are:

The hops in the drink provides specific taste and aroma, affects foaming and increases shelf life, and is used for clarification.

How is beer brewed in Russia and what is added to it?

The most commonly used granular hops are of the following types:
  • traditional;
  • atetsky;
  • Istra;
  • Northern Brewer.

Yeast is one of the main components, they also come in different types:

  • bottom fermentation;
  • top fermentation;
  • yeast with spicy-peppery tones;
  • for a drink like Trappist;
  • for a drink like lager;
  • dry classic.

Statistics confirm that the amount of strong alcohol consumed in Russia is constantly decreasing. It is replaced by beer. But there is very little quality beer on the territory of the Russian Federation, although the demand for it is high. That is why beer production as a business is a highly profitable and promising direction, which in the future may develop into the opening of its own chain of craft bars.

Business registration

Since beer contains alcohol, you will need to register a full-fledged legal entity. The easiest way is to open your own limited liability company and an authorized capital of 10,000 rubles.

Beer has many recipes and can be brewed in a variety of ways.

Additionally, you will need to obtain a license. Just two years ago, a license was not required to produce the intoxicating drink, but in 2015 the government changed the rules of the game. To obtain a license, you need to submit an application to the local tax office.

Note: the term for obtaining a license is 2-3 months, so you need to apply for it immediately after registering an LLC.

You will also need to obtain a hygiene certificate, which is issued for finished products... It also takes 2-3 months in the sanitary and epidemiological station.

Additionally, the following documents should be drawn up:

  1. Business permit from the fire inspection.
  2. Permission from energy supervision.
  3. Permission from the sanitary and epidemiological station.

These permits are issued subject to the availability of premises for work, so you will need to either draw up a lease agreement or purchase the necessary space.

Brewery equipment

Ready-made sets of equipment for a mini-brewery are produced by many companies. They also carry out its installation, adjustment and carry out the first brewing. What kind of equipment to choose? It all depends on how much beer you are going to produce.

There are two types of breweries:

  1. Microbrewery that produces 50 to 500 liters per day.
  2. Mini-brewery producing from 500 to 15,000 liters per day.

At the same time, the cost of equipment for brewing can vary from 5 to 600 thousand dollars.

Note: it is economically profitable to open a brewery with a capacity of at least 200 liters per day. Usually, novice brewers start with this figure, and then, as they gain experience and connections, they acquire a second device for 1000-5000 liters per day.

The average price of equipment for the production of beer for 200 liters is 35 thousand dollars. On the market you can find installations from American, Czech, Austrian, German, Russian and Chinese manufacturers. We recommend that you buy domestic or Chinese equipment - it has a very affordable price, all the necessary set of documents and good performance characteristics.

There are two types of breweries:

  1. Top fermentation (ales).
  2. Bottom fermentation (lagers).

Ales are much easier and quicker to brew and taste richer than classic lagers, but require a long aging. For example, classic red Pale Ale is aged for about 2-3 weeks after fermentation, while Stout can be infused for up to six months. A top-fermented brewery will allow you to create many interesting beers, including craft beers, but the volume of their production will be small.

Breweries of bottom-fermentation produce classic lagers - in them the beer matures longer, but immediately after bottling it is ready to drink. You will only need to adjust the production cycle and reach the desired level - no insistence or changes in the recipe will have to be carried out.

What kind of equipment to choose? We'd recommend taking a bottom-fermented brewery first. Craft beers and ales are more suitable for themed bars rather than mass consumption, while lagers are popular.

Note: usually the companies that sell the equipment provide training for the personnel of the future brewery. They also give you the rights to produce certain beers according to approved recipes, which allows you to quickly obtain a hygiene certificate.

Selection of premises

What kind of room is needed for a brewery? It all depends on how much beer you will be producing. Look for a location that you don't have to move from in the future if you decide to expand and establish a larger brewery.

There are two options for the development of events:

  1. Purchase a room.
  2. Rent it out.

For beginners, the second option is more suitable. Look for a space of at least 150 m2, with water, sewerage and three-phase power lines supplied to it. This should be a detached or non-residential building located at some distance from residential buildings. 150 m2 is quite enough to organize a workshop with a capacity of 200-300 liters per day - 90 m2 will be occupied by the equipment itself, 40 by a warehouse, 20 by an office and a utility room. The premises can be found somewhere on the outskirts in order to pay for it as little as possible.

The room for a microbrewery must be spacious enough

Raw materials

Lamps consist of 4 elements:

  1. Water.
  2. Malt.
  3. Hop.
  4. Yeast.

Malt can be classified by grade as well as by degree of roast. Its main indicators are:

  • humidity (should not exceed 7%);
  • extractivity;
  • the amount of protein;
  • Kolbach's number, which shows how much protein will dissolve during cooking.

Malt is produced abroad and in Russia. Russian malt is cheap, but its quality is rather low, so it is better to use imported malt. It allows you to get a higher beer yield from the same amount of grain. Hops and yeast should definitely be bought either American or European.

Note: American and European manufacturers sell their products in large wholesale. You probably won't need as much malt, hops and yeast, so you will need to find local vendors or organize joint purchases with other breweries.

Another option is to buy yeast and hops from breweries. They often sell the surplus at an affordable price. Remember that yeast is top-fermented and bottom-fermented. Horsebacks are used to brew ales, dark and wheat beers, and grassroots are used for lagers. Horse yeast is usually supplied in granular form, grass-fed yeast - in the form of pressed briquettes or thick molasses.

Where to get water? Most domestic factories take water from a water pipe without even purifying it. This is a completely wrong approach that affects the taste and quantity of the beer. Water for a frothy drink should be soft - you would be better off purchasing special filters than making a low-quality product.

The more beers you make, the more loyal customers you will have.

How to make beer

The classic beer production technology is quite simple - learn how to brew good drink not difficult. It is necessary to do the following steps:

  1. Wort grout. The malt is ground in a special mill and poured into hot water, which washes out the necessary sugars and trace elements from it.
  2. Filtration. Solids are removed from the wort.
  3. The wort is boiled for about 2 hours, hops are added to it in 2 passes (the first time for bitterness in the middle of boiling, the second for aroma 10 minutes before the end).
  4. Additional filtration on a hydrocyclone. This process removes all microparticles from the wort, due to which it is clarified.
  5. Fermentation. The wort is cooled to a predetermined temperature, saturated with oxygen and yeast is introduced into it. The wort ferments in a few days and is poured into special barrels for infusion.
  6. The finished beer is filtered and pasteurized once more to extend its shelf life.

Beer production as a business is rapidly developing in our country. This is a popular and everyone's favorite drink. Using the example of a ready-made plan for a mini-brewery, we will take a closer look at the production process.

The main advantage of a fresh drink over a bottled long-term storage is in its special taste characteristics. High-quality local beer will always be in demand in restaurants, clubs, bars and cafes. Before starting a business and purchasing the necessary equipment, the volumes of future production are calculated. Small breweries can do:

  • 50-500 liters per day (micro-production);
  • 500-15000 l (mini-brewery).

Enterprises that produce 1000 liters of beer per day are in demand.

Equipment

The prices of Chinese, Russian, Czech and international manufacturers differ. The equipment of the Inyegral-Geha company with a capacity of 1000 l / day costs $ 650,000, and Russian manufacturer CJSC "Moscon" offers a similar one for $ 170,000. The best option is to buy an inexpensive model good quality... For smaller production volumes, equipment that prepares 80-100 l / day is suitable. The cost is approximately 900,000 rubles.

Features of production

A qualified technologist is required to control the brewing procedure. Also, the business owner needs knowledge about the specifics of the process. It is divided into stages:

  1. Wort preparation.
  2. Yeast fermentation.
  3. Post-fermentation stage.
  4. Filtration and pasteurization for final filling.

Keg delivery is a cost-effective option. It is more profitable to brew beer with malt extract rather than with the starting material itself. The product is not subject to certification. SES conclusion is required.

Raw materials and suppliers

For the production of the drink, hops, brewer's yeast, malt, and water are used. The latter should be soft; to improve its qualities, special devices are purchased. Raw materials are purchased in the following ways:

  • a deal with an equipment supplier;
  • purchase from a foreign company (beneficial when ordering a large batch);
  • cooperation with large factories.

The price of one beer dispenser is about $ 600. At the same time, at the initial stage, an investment of 2 million rubles will be required, which will bring a monthly income of 200,000.

Technological process

NS beer production is divided into several stages:

  1. Malt preparation. Grains of cereals are germinated (usually barley is taken), dried, and then cleaned of sprouts.
  2. Mashing the wort. The malt is crushed and then mixed with water. The taste is sweet.
  3. Mash filtration (mixture of crushed grain and water). It is distilled into a special filter, where it is separated into grains (insoluble barley residues) and unhopped beer wort.
  4. Boiling. Hops and other ingredients are put into the mixture, and then it is boiled for 1 to 2 hours. During this time, aromatic substances are evaporated, which negatively affect the taste characteristics of the drink.
  5. Clarification. To separate the remaining particles of hops and barley, the wort is transferred to a hydrocyclone. Under the influence of centrifugal force, the residues are collected along the radius of the apparatus. Then it settles for 20-30 minutes, and then it is separated from the sediment.
  6. Cooling. At this stage, the wort is pumped into a special fermentation tank. It is cooled and also oxygenated.
  7. Fermentation process. Brewer's yeast is added to the resulting composition. The solution costs several weeks. The result is an opaque liquid that does not taste like beer. Therefore, it is sent for aging (after-fermentation) in closed barrels under a slight pressure of carbon dioxide. The term depends on the type of drink.
  8. Filtration from the remaining yeast particles. Most often, the process is carried out in industrial production. Certain methods can increase the shelf life of beer by destroying its microflora.
  9. Pasteurization. It is used for some varieties. The drink is heated to a temperature of 60 to 80 ° C, which also increases the shelf life. It is believed that pasteurization negatively affects taste.

Microbrewery costs

You can start a business with a start-up capital of $ 2,500. What you need to do:

  • Paper question. It is necessary to prepare and certify the constituent documents and the charter with a notary, undergo state registration, register with the statistical and tax authorities. This will cost approximately $ 300. Next, you should obtain permission from the ZhEK, SES, Energonadzor and State Fire Supervision. A beer production license is not required, however, in some regions of our country such a requirement is present. To clarify this information, you should visit the department for the coordination of the consumer sector. Breweries' products are subject to excise duty, which can be up to 400 rubles per liter. The brewery must issue a hygienic certificate from the Sanitary and Epidemiological Supervision.
  • Purchase of equipment. Approximately 30 sq. m will be required for the production of 50 liters of drink per day, and for 200 liters - 60 sq. m. One employee can monitor the process. To make 50 liters of beer, you need 2 kg of sugar, 2 to 4 cans of concentrate and 14 g of yeast. The costs of organizing a micro-plant - $ 2500-7000. The profitability is 40%, and the payback period will be 2 months.

The costs of setting up a mini-brewery

It will take 1.5 million rubles to start production of 100 liters per day. The money will be spent on certification, mandatory permits, purchase and installation of equipment, preparation of the premises. The paperwork is similar to a microbrewery. The workshop area must exceed 60 sq. m. Staff:

  • supervisor;
  • accountant;
  • specialist chef;
  • electromechanic;
  • cleaning woman.

It is profitable to buy raw materials from large breweries. The choice of equipment is greater than in the case of a microenterprise. Devices from domestic companies can be purchased for 1-2 million rubles. A device for filling a keg costs about 150,000. Profitability - 40%, payback comes in 6-24 months. The monthly income can reach 600,000. The price of one glass of beer ranges from 100 to 200 rubles. The first year of operation will require additional investments in the amount of 4.5 million rubles. Annual income net of taxes will be equal to 2.5 million. In the next period, the business will bring 5 million rubles. The next stage in the development of the mini-brewery will be the opening of its own original pub.
