Capercaillie nest salad recipe with quail. Classic salad "Capercaillie's nest": recipes

The Capercaillie's Nest salad is interesting for its appearance. It is prepared in the form of a nest with eggs. It looks very nice on a festive table, and it tastes good.

It can be made with meat, smoked chicken, sausage, pickled or fresh mushrooms, etc. Admirers of healthy nutrition generally form a nest from cabbage.

Usually food is cut into thin strips to look like twigs in a nest. But in general, you can decorate absolutely any salad in this way, simply by folding it in the form of a nest and covering it with French fries.

Capercaillie nest - salad recipe in layers

Recently I tried the Chafan salad in a fancy restaurant, which also includes french fries, and there it was sliced as thinly as if it were on a Korean carrot grater. It was so crunchy, it felt magical. I think that for a nest this way of cutting would be ideal.

There are different ways of preparing decorative eggs to decorate this salad: they can be made from grated cheese, a mixture of yolk and any pate (for 2 yolks - 100 g of pate), or you can simply put boiled quail eggs.

By the way, if you need to make this salad urgently, you can buy ready-made fries.

Classic salad recipe Capercaillie's nest with meat and fries

This salad contains chicken, fries, and cucumber for juiciness. You can also add pickled or fried mushrooms to these ingredients. And also some corn for sweetness. But we will make a basic version, it is also very tender and tasty.

You can cut the ingredients into strips, but since our nest is formed by the decor, the salad itself may well be ordinary cubes.

According to the classics of the genre, it is the eggs made from the yolk mass that are used in this salad. But many people make it with boiled quail eggs. This is very beautiful, because the white eggs against the background of fried potatoes look contrasting. But homemade tastes better. We use both options in this salad as an example.

Serve the potatoes better to keep them crispy. The blank itself in the form of a nest can be made in advance, and already finish the decor when the guests are on the doorstep. To crunch potatoes.

Products:

  • One chicken fillet (about 250 g),
  • Cucumber - 1 pc.,
  • Onions - 1 pc.,
  • Garlic - 3 cloves,
  • Potatoes - 4 pcs.,
  • Processed cheese - 1 pc.,
  • Chicken eggs - 3 pcs.,
  • Quail eggs - 7 pcs. (not necessary),
  • Leaf salad,
  • A little dill
  • Salt, pepper, mayonnaise, vegetable oil.
  1. Boil hard boiled eggs. Salt chicken fillet and boil.

2. Separate the yolks from the whites. Cut the whites into small cubes.

3. Cut the chicken fillet into cubes.

To make the chicken fillet easy to cut into cubes, it must be boiled in advance and cooled well. It is advisable to cook it the previous evening.

4. Cut the onion into very small cubes. And either scald with boiling water or marinate. That is, either simply pour boiling water over it and let it stand for about 10 minutes. Or pour it with a mixture of cold water and 9% vinegar in equal proportions, for example, 50 g of water and 50 g of vinegar. Read more ways to pickle onions.

5. To three yolks add half of processed cheese, grated on a fine grater. Pour in a pinch of salt, some finely chopped dill and a heaped teaspoon of mayonnaise. Squeeze out three garlic cloves. Stir until smooth.

6. Make small strips of potatoes. This is difficult to do with a knife, so we use a Korean carrot grater.

When frying potato strips in deep fat, they do not need to be salted, otherwise they will turn sour. You can add salt later.

7. Making French fries. Pour in plenty of oil and heat. Divide the potatoes into 2 parts and fry in two passes. This can be done in a special mesh or simply pulled out with a slotted spoon. Potatoes roast quickly, wait until golden brown and remove. Place on napkins. Add a little salt.

8. While the potatoes are fried, drain the onion and put it in the salad. Add a pinch of salt and black pepper, two rounded tablespoons of mayonnaise. Mix well.

9. Now roll the testicles from the yolk mass.

To make the testicles the same, take the yolk mass with a heaped teaspoon.

10. Put lettuce leaves or any greens on the dish. And on them - a lot of salad. Then shape the nest by making a depression in the middle with a spoon.

11. Chop the dill finely. It is important that it is dry, so wash it beforehand and let it dry.

12. Put the potatoes on the sides of the salad, trying to hide the salad.

13. Fill the middle of the salad with herbs. And we spread the testicles.

14. Quail eggs can be added to the eggs made from yolk. Salad ready!

Capercaillie's nest salad with smoked (or boiled) chicken is my favorite recipe

This is not an entirely ordinary recipe, because in addition to potatoes, carrots are also fried, and cucumbers are also not used. But the salad is juicy and tasty. I did it with the simplest decor option, but the guests still appreciated the salad.

Then add the potatoes, carrots and onions to the eggs.

Wood grouse nest with cabbage and quail eggs - decorate step by step

Transfer the salad mixture to a dish and form a nest. Put the set aside and chopped ingredients on top (to which mayonnaise was not added).

Cover the depression with finely chopped nuts and place the quail eggs there.

To make the fries especially tasty, you can make a preparation in advance - marinate the potatoes cut into strips in water with 1 tablespoon salt and 1 tablespoon for several hours. Sahara. Beautiful filing of the Capercaillie's Nest

Watch the video, which very clearly and in detail shows the preparation of this salad and how it can be served beautifully by forming it in a ring.

Wash chicken meat, cover with water and put on fire. Cook in salted water until tender. Then cool the meat. Boil eggs and cool. Peel, wash and grate potatoes for Korean carrots. Then rinse the grated potatoes well in several waters, dry and fry until golden brown in deep fat for three minutes. Place the finished potatoes on a paper towel to remove excess oil. To prepare these potatoes, I used this recipe. Cut the pickled cucumbers into strips and put in a bowl. Cut the onion into small cubes and send to the pickled cucumbers.

Peel and divide the eggs into yolks and whites. Grate proteins on a medium grater and send to salad with cucumbers and onions.

Cut the cooled meat into cubes and add to the salad.

Salad and season with mayonnaise, mix well.

Put the yolks in a bowl.

Add some mayonnaise and a sprig of finely chopped dill to the yolks.

Mash the yolks with a fork, mix thoroughly to get a plastic mass. Roll small balls from the resulting egg mass. I got 5 pieces.

Put the salad in a slide on a suitable dish, making a small indentation in the form of a nest in the center.

Top the salad with prepared potatoes.

In the center, where we made a depression, put dill sprigs. Spread the eggs, which we rolled from the egg mass, on top of the dill.

Serve the delicious salad "Capercaillie's Nest" with chicken on the table immediately after cooking so that the potato strips do not soften on top.

Bon Appetit!

Everything is perfect in this salad - both the taste combination of products and the appearance. The dish is perfect for a festive feast and will fit well into the New Year's menu. All ingredients are easy to find in winter. The salad is very reminiscent of a capercaillie nest with eggs, the twigs in it are replaced by crispy fried potatoes called "pie". Perhaps this is the only thing in the dish that you need to tinker with. For more details, see the link. Otherwise, there is nothing complicated, in general, the preparation of the salad takes about two hours.

A capercaillie nest with chicken is being prepared; boiled fillet (breast) is better suited. Cheese and chicken are a classic combination. But the recipe has one more feature - it is pickled onion, it makes the dish just incredibly tasty. Boiled eggs add softness to the salad, while cucumbers add a pleasant sour and salty accent. Boiled quail eggs will serve as decoration of the dish; they are placed in a potato nest lined with dill sprigs. It turns out the nest of capercaillie, the classic salad recipe does not require any additions or changes. True, in some variations, eggs are rolled from crab sticks and processed cheese, or from hard cheese with mayonnaise and garlic. Here it is up to you to decide. As for the crisp, you can buy it at the store, or you can cook it at home. In the second case, the potatoes are much tastier than the store ones and remain crispy for a long time if they are not refrigerated. Well, let's cook together a delicious salad Capercaillie's Nest, a step-by-step recipe with a photo will help you figure out all the tricks.

Nutritious and delicious salad "Nest" is a decoration of any table! For you - a selection of 8 recipes.

  • Chicken egg - 3 pcs.
  • Dill - 1 handful (s)
  • Potatoes - 2 pcs. large
  • Mayonnaise - 150 g
  • Processed cheese - 1 pc. 100 g
  • Chicken fillet - boiled 250 g
  • Ham - 100 g
  • Champignons - 200 g marinated
  • Salt to taste
  • Garlic - 2 teeth
  • Black pepper - to taste
  • Salad - optional (bunch)
  • Vegetable oil - 2 tablespoons

According to the classic recipe, it is better to choose a rather large, oblong shape potatoes for the "Capercaillie's Nest" salad. We clean the tubers and rub with long straws on a grater, I recommend using a grater for cooking carrots in Korean.

Heat some vegetable oil in a frying pan, spread out some of the potatoes and fry until the straws are crispy and ruddy. We do the same with the remaining potatoes. Transfer the prepared potatoes to a paper towel to remove excess oil from the potato straws.

Boil the eggs hard-boiled for about 10 minutes and refrigerate. Rub the cheese together with the egg yolks, chop the greens, chop the garlic through a press. Mix everything together, adding a little salt and mayonnaise, so that the mass is suitable for forming eggs. Roll up small balls with wet hands, giving the shape of a quail egg. We put them on a saucer and put them in the refrigerator.

Rub the egg whites on a coarse grater. Cut the boiled chicken fillet into small pieces with your fingers and disassemble it into fibers.

Cut the ham into strips, pickled mushrooms into small slices. If the mushrooms are small, then they can simply be cut in half.

In a bowl, mix the ham, grated proteins, chicken fillet, mushrooms. Season to taste, add mayonnaise and stir.

We wash and dry lettuce leaves. We spread them in a circle on a dish. Put the prepared salad on top, making a depression for the "eggs" in the center.

We decorate the salad with potato chips, while forming our "nest". Put cheese "eggs" in the center.

It is not recommended to store such a salad in the refrigerator for a long time, otherwise the potatoes will lose their crispness and soften. If necessary, you can preform "eggs" and prepare the salad "Capercaillie's Nest" according to the classic recipe, and decorate with potato strips just before serving the salad.

Recipe 2: Delicious Salad Nest with Pai Potatoes

  • chicken breast fillet - 1 pc.
  • chicken eggs - 6 pcs.
  • fresh cucumbers - 4 pcs.
  • potatoes for cooking potatoes "Pai" - 4 pcs. very cool
  • onion - 1 pc.
  • vegetable oil
  • mayonnaise
  • salt, pepper, garlic - to taste
  • dill

Eggs, chicken breast - boil until tender, finely chop the onion and scald with boiling water.

We will not cook potatoes for this salad, but we will make Pai potatoes.

To do this, clean and rub the tubers on a Korean grater.

And fry in a large amount of vegetable oil until a characteristic golden brown crust.

Stir lightly to keep the potato strips from sticking together.

Frying potatoes is very good in a deep fryer or in a multicooker on a special mode, placing the potato straws in a special sieve.

While the potatoes are fried, cut the breast, cucumbers and egg whites into cubes or strips. Now you need to mix the chopped ingredients (chicken fillet, cucumbers and proteins) with finely chopped and scalded onions, add half of the fried Pai potatoes and mix with mayonnaise.

Place the resulting salad mass on a suitable nest-shaped dish, making a depression in the middle of the salad and place the fried potatoes on the sides.

Separately grind the yolks with chopped dill and a little mayonnaise.

We form an imitation of quail eggs.

We spread them in the middle of the salad. Thus, we get the "Nest of the wood grouse."

Recipe 5: salad Nest with cucumbers and pancakes (with photo)

This step-by-step recipe for Capercaillie's Nest salad includes an unusual ingredient - pancakes.

  • boiled beef or veal - 350-400 gr
  • raw potatoes - 2-3 pieces
  • eggs - 7 pcs
  • pickled cucumbers - 2 pieces
  • mushrooms, champignons, or any other, pickled - 200 gr
  • green peas - 100 gr
  • cheese - 70 gr
  • mayonnaise -6-7 tbsp. spoons
  • garlic - 1 clove
  • salt to taste
  • sunflower oil - for frying potatoes
  • lettuce, dill, parsley - for decoration
  • ground black pepper - optional and to taste
  • cherry tomatoes -3-4 pieces for decoration

For pancakes:

  • flour - 2 tbsp. spoons
  • milk - 100 ml
  • egg - 1 pc
  • sugar - 0.5 tbsp. spoons
  • vegetable oil - 1 tsp
  • soda - on the tip of a knife
  • salt - a pinch

Make pancake dough. Let it stand for 30 minutes so that all the ingredients are combined.

Fry 2-3 pancakes.

I have a frying pan with a very large diameter. Since everyone in our family simply adores pancakes, we had to purchase such a huge frying pan. So I only bake two pancakes. In a regular frying pan, you will need to bake three pancakes.

Cool hot pancakes a little, fold in half and roll into a tube. Then cool completely. As it cools, cut it, how we cut it into a roll, into thin circles. Then the pancake will roll out and you will get long narrow strips.

If you have pickled cucumbers - this is good, we will use them in the recipe. I also have them, and in large quantities, preserved in various ways. You can see the recipes in my articles in the "Blanks" section. But because of the two cucumbers, I felt sorry for opening a three-liter jar.

And I decided that I would pickle fresh cucumbers in a quick way. To do this, I cut the cucumbers into kegs. I added chopped dill and garlic to them, salted a little more than usual and a little pepper.

I put all this in a container with a tightly closed lid, and actively shook it. Such cucumbers will be salted within an hour. During this time, every 15 minutes they must be actively shaken.

An hour later, we open the container, and the cucumber-garlic smell, and even with the aroma of dill, just knocks down. Such cucumbers in a salad will be very useful! Delicious, zesty - this note will not be superfluous in any way. And they will be even tastier than pickled or fresh ones.

Cut the cucumbers into thin strips.

You will also need to boil the meat in advance. Simmer it over low heat. There is no need to salt throughout the entire cooking process so that the salt does not draw out all the tasty juice from the meat. Salt 10 minutes before the end of cooking. Cool the finished meat and cut into thin strips.

We try to cut all ingredients to approximately the same thickness and length. Since we will build a nest from them, it is better to cut them in the form of twigs, that is, straws.

Eggs should be boiled and also cooled. Then separate the whites from the yolks. Cut the proteins into thin strips.

We also need mushrooms. We use pickled mushrooms as they are.

So, we also cut the mushrooms into strips, to match other products.

Mushrooms, as I have already indicated, can be used as they are. Usually everyone uses champignons, and they are no worse in the salad than the rest.

Another important stage in preparation is to prepare a blank for the nest itself. And we will build the nest from fried potatoes.

To do this, cut the raw potatoes into very thin strips. Sometimes it is recommended to grate potatoes for Korean carrots.

I will say right away that I do not practice this, since the grated potatoes in this way stick together strongly during frying. And if you rub it on a larger grate, then it turns out to be large. Therefore, I cut the potatoes into strips of the size I need.

We will have a nest like a real one.

When the potatoes are cut, they must be fried. To do this, heat the oil in a cauldron or frying pan, and place the potatoes there in small portions, fry, stirring constantly.

Since the potatoes are very thinly sliced, they will cook through very quickly. And therefore, do not leave it during frying, stir it, and as soon as it becomes a beautiful golden color, immediately take it out and put it on paper towels so that all the oil is glass.

Combine cucumbers, meat, mushrooms, egg whites, and pancakes in a large bowl. Add canned green peas there, from which the brine has been carefully drained.

Add mayonnaise. If you don't really like mayonnaise, then add sour cream, or sour cream and mayonnaise 50-50%.

Mix everything gently. Is there enough salt to try. We have pickles, mushrooms, meat, green peas and mayonnaise. Therefore, I no longer salt anything. You can add one or two pinches of ground black pepper for piquancy.

Now we need to make an egg for the nest. Rub hard cheese on a fine grater, I use Russian. Chop the garlic and mix with mayonnaise. Put some mayonnaise in a small cup. Dip the yolk in mayonnaise and roll in the cheese and garlic mixture. Put on a separate plate and put in the refrigerator for the time being.

Now that we have prepared everything, we can begin to create our culinary masterpiece. Put lettuce leaves on a large flat dish or plate. Put the ingredients mixed with mayonnaise on the leaves in the form of a small pea. We make a small depression in the center, where we will put the eggs.

Cover the entire surface of the laid out ingredients with French fries. Do not forget the edges, spreading them on them, slightly press down the potatoes so that they do not fall.

Here is what a beautiful and cozy "nest" we have.

In the center, where we formed the bowl, carefully put the eggs. Spread dill or parsley sprigs around them. Or both together. We also decorate the gaps between lettuce leaves with twigs.

Now you need to let the salad infuse so that all the ingredients are saturated with each other's juice and aroma and mayonnaise. To do this, you need to put the salad in the refrigerator for 3-4 hours.

Remove the prepared salad from the refrigerator, decorate with halves of cherry tomatoes and put on the festive table. A must-see for our wonderful culinary masterpiece. And eat to your health!

Not a single meal is complete without a salad, and the guests' assessment for the hostess is absolutely empty plates. Previously, housewives traditionally cooked Olivier and herring under a fur coat, but now everyone wants something original and unusual. If you really want to surprise and feed your guests, then you can prepare the Capercaillie's Nest salad. At first glance, it really looks like a capercaillie nest in the grass and looks unusual on the table, but after trying the first spoon, it cannot stop.

The design idea is that the salad is laid out on a green pillow of lettuce, dill or parsley. The salad, laid out on a green pillow, is shaped like a bird's nest, and then covered with very finely cut French fries on all sides. As a result, a bird's nest should come out, and inside the filling. Ingredients for her may be different: chicken, veal, seafood, mushrooms, liver, cheese, prunes. The list can be continued indefinitely, as far as imagination suffices. The testicles in the center of the nest are a must for the salad.

If possible, make sure that the number of eggs in the "nest" matches the number of guests, so that everyone gets an egg with the salad.
