How to make egg liqueur at home. Egg liqueur "Advocate" at home: simple and fast

Advocate(Advocaat - gol.) Is an egg-milk liqueur based on grape alcohol or ordinary cognac brandy, generously flavored with sugar or honey. The strength of the drink ranges from 14-20 degrees. The rich yellow color of industrial versions of the liqueur is achieved not only by the presence of a fair amount of egg yolks in it, but also by the addition of special dyes.

The main producers of the drink are Warniks, Lucas Bols, De Kuyper and Verpoorten.

The history of the drink Lawyer

In the middle of the 17th century, Dutch colonists who settled in Suriname were able to briefly seize a number of neighboring territories that were part of Portuguese Brazil. During their short reign, the Dutch adopted from the local Indians the recipe for a drink made by mixing fire water, milk and avocado pulp. The idea quickly caught on in Suriname, and then the liquor reached the metropolis. But no matter how hardworking Dutchmen tried, they did not succeed in growing overseas fruits in the cool climate of their native country. In this regard, some craftsman thought of replacing the avocado with egg yolks, which was done with great success.

However, despite the fact that the avocado disappeared from the recipe itself, it remained in the name of the liquor. The common Spanish name of this exotic fruit at that time: "aguacate" for the European ear turned out to be consonant with the familiar name of the legal profession. It's funny that even in the official encyclopedias of the late 19th century, the "legal" name of the liquor was explained by its beneficial effect on the throat, allowing lawyers to make long speeches in court.

Varieties of liqueur Advocate

The drink we are interested in is divided into two categories:

    Thick Advocate is popular in Holland, as well as in Austrian Tyrol, where the liqueur later found its next homeland. Its density is such that a teaspoon is often needed when consumed.

    Liquid Advocate is usually exported. In its consistency, it resembles Baileys.

How and with what they drink Advocate

This classic dessert drink, in its thick hypostasis even replacing a dessert, is enjoyed by the sweet tooth in its pure form at the end of the meal. In this case, ordinary liquor glasses are used, and, if necessary, a small spoon. Undiluted Attorney can save room temperature or be slightly chilled; but without ice.

If the pure drink seems too cloying, it can be served in a wide glass, mixed with cream and sprinkled with grated chocolate.

In addition, it is widely practiced to add this liquor to coffee and hot chocolate.

Finally, Advocate is a welcome ingredient in many dessert cocktails, for example: the flag of Ukraine.

In all of the above cases, ice cream, chocolate and sweet cookies will serve as a pleasant addition.

Egg liqueur - an emulsion based on spirits, eggs and sugar syrup... Sometimes, to enhance the taste, additional ingredients are added to it: vanilla, milk or cream. Initially, the drink was prepared on the basis of herbs, roots, fruits, spices, and then no one could imagine that an animal product could be added to the recipe. The modern egg liqueur was invented by the Dutch colonialists. While exploring Brazil, the natives treated guests to a thick drink made from brandy and avocado.

The Dutch liked the drink so much that it was decided to bring it to Europe. After writing down the recipe and returning home, they realized that finding an avocado is a difficult task and an urgent need to find a replacement for this ingredient. A good option turned out to be the yolk, which gave the drink that very thick Brazilian drink.

But a tropical tree did not take root on a continent that was cold for him, because exotic fruit they decided to replace it with egg yolk, instead of honey, they began to use sugar, and instead of alcohol they began to add.

In order for the drink to work out, you need to follow several rules:

  • Egg whites should not get into the cooking dish, even a drop of protein will spoil the taste, so carefully separate the protein part of the egg and make sure that only the yolk gets into the bowl.

  • First of all, you should monitor the temperature, do not overheat the mixture, otherwise you will get fried egg yolk with vodka. You need mathematical precision, the mixture must be heated to a temperature of 62 degrees Celsius.
  • Second important point: preparing a drink in a water bath. Water is poured into a saucepan, heated to a temperature, a bowl is installed on it, in which the base of the future liquor will be prepared. Pour enough water into the pot so that the bowl does not touch the hot liquid.

Cooking process

  • At the first stage, the yolks are separated from the whites, whipped thoroughly with a whisk.
  • Further, sweetness is added to the yolks (sugar, powdered sugar, honey, condensed milk) and also whipped.
  • Carefully pour in hot milk or cold cream, add vanillin, if you wish, you can drop a few drops of your favorite flavor. Beat the mixture thoroughly again with a whisk so that even the smallest lumps do not remain.
  • Pour in an alcohol-containing liquid (vodka, rum, cognac, brandy) and mix again.
  • To avoid lumps, it is advisable to pass the finished drink through a sieve.
  • Pour into a prepared clean container and leave for several days to acquire the desired thick consistency.

Egg liqueur recipe

We continue the series of simple homemade emulsion liqueurs. There are several recipes for such a drink, based on condensed milk or chicken eggs. Today I use good homemade eggs, egg yolks act as an emulsifier (or thickener).

Egg liqueur tastes like mogul with a slight alcoholic note. It can be infused not as long as, for example, mint or coffee liqueurs.

Egg liqueur can be drunk simply as an aperitif, or you can make a cocktail based on it.

Egg liqueur is often added to chocolate candies... If you have time, you can experiment in this regard.

This homemade egg liqueur recipe is similar to both Advocate and Baileys. Of course, ladies and men with a sweet tooth will love him more likely.

To prepare 2 bottles of this homemade liqueur You need 30 minutes of time and 2 weeks for the infusion of the drink.

Ingredients for the "Egg Liqueur" drink

- chicken eggs - 2 whole + 3 yolks;
- whole milk 3.2% - 1 liter;
- granulated sugar - 150 grams;
- vanilla sugar - 1 teaspoon;
- vodka - 300 milliliters.

How to make egg and milk liqueur

We buy everything you need. Choose vodka good quality, milk is better homemade. It is also best to buy chicken eggs homemade or store-bought, but always of the highest quality.

Pour milk into a metal pan (an enamel pan is undesirable, either Teflon or stainless steel will do)

We put it on the stove. Turn on medium heat. Bring to a boil with the lid open. Make sure the milk does not escape.

Wash eggs well in soapy water, rinse. Chicken eggs(3 pieces) are divided into yolks and whites.

Break 2 more whole eggs to the chicken yolks.

At this time, the milk boiled. You can turn off the stove. Remove the milk from the stove and place in the cold. The milk should cool completely.

Let's get ready to whip the base of the liqueur. Chicken eggs should be at room temperature.

Add granulated sugar and vanilla sugar to the eggs. Beat for 3 minutes at high speed.

From the cold (I usually put the pan on the balcony) we take out the milk. Add cooled milk to the egg mixture.

We continue to beat with a mixer for another 3 minutes.

We pour in vodka.

Beat all ingredients together with alcohol for the last 3 minutes.

We pour the finished liquor into cans or bottles. Cork tightly and put in a cool, dark place for 2 weeks.

Then pour the egg liqueur into bottles and serve.

It is quite difficult to drink a lot of such liqueur, so serve it in small cognac glasses.
