Cooking process:

Remove the butter (or margarine) from the refrigerator in advance so that it softens slightly by the time you start cooking and makes it easier to work with. After a little time, you can start preparing the dough.

In a bowl, mix the butter, sugar, cut into pieces and grind with a spoon or fork, then add the egg and stir until smooth (in this case, you can use a mixer or blender with the appropriate attachment).

Next step. Peel the tangerines and remove the seeds. Do not discard the peel. Place it along with the peeled tangerines in a blender bowl.


Grind everything until smooth. Add this tangerine mixture to the previous ingredients.

  • Flour - 170 grams,
  • Mandarins (with peel) - 2 pieces,
  • Egg - 1 piece,
  • Margarine or butter - 100 grams,
  • Soda - 0.5 teaspoon

  • Powdered sugar for dusting.

Cooking process:

Remove the butter or margarine from the refrigerator beforehand so that it is not very hard. When it lies down a little and becomes a little soft, you can start making the dough. Pour the required amount of sugar into the bowl and spread the butter, cutting it into pieces. If it has been with you for a long time, then you will not have to cut it into pieces, it will mix well with sugar anyway. But you don't need to melt it.

Tangerines need to be thoroughly washed and dried. I cooked the muffins with the rind, so the tangerine flavor is richer. There was no bitterness in ready-made cupcakes... The main thing is just to take out the seeds, there are very bony citrus fruits. We clean tangerines, divide them into wedges. We put in a blender bowl together with the peel, but without seeds. Wipe until smooth.

One mold was missing and I made a cupcake in a metal cupcake. I will say right away, remove from metal forms ready-made baked goods harder than silicone, but quite possible. Do not forget to grease it with oil. The dough is in tins, all that remains is to bake the tangerine muffins.

We heat the oven to 180 degrees. We put the molds in a preheated oven. Cook until golden brown, checking readiness with a toothpick. If the dough doesn't stay on the stick, then the cupcakes are absolutely ready. You can leave them to cool in the mold, or put them directly on a wooden board. It can be seen that the bottom of all is beautiful and even.

So today we will cook delicious tangerine muffins with sour cream for the whole family!

Ingredients

  • tangerines - 4 pieces
  • flour - 350 g
  • sugar - 220 g
  • butter - 120 g
  • eggs - 2 pcs.
  • sour cream 20% - 200 g
  • icing sugar - 100 g
  • baking powder - according to the instructions

Step by step cooking process at home

  1. All ingredients are very simple. It's up to you to make the glaze or not, but I liked the idea of ​​using it. Well, let's start!
  2. First you need to thoroughly wash the tangerines, because in this recipe we will use both pulp and zest. Do not worry, it is almost impossible to overdo it with tangerine zest, because it is not bitter at all, but what a flavor it will be!
  3. Now we need to grind the tangerine slices. In some recipes, I met an instruction to chop tangerines in a blender, but since these citrus fruits are incredibly juicy, I thought that the dough would become too liquid, and did not dare to take such a step. Instead, I just cut the slices in half. If these pieces seem too large, cut into 3 pieces.
  4. Highly important point: if you are going to make the frosting: squeeze the juice from 2-3 tangerine halves into a separate bowl. We use it to mix the glaze. About 2 tablespoons should be collected. Well, then I also threw the squeezed slices into the dough, since there was still a lot of pulp left there.
  5. Chop the tangerine skins. Perhaps the most convenient way to do this is in such a blender, but you can just chop it very finely.
  6. Now we will knead the dough. Grind heated butter, sugar and eggs.
  7. Add sour cream and tangerine pieces along with the zest.
  8. Finally, add the flour and baking powder.
  9. All this is thoroughly mixed and laid out in molds. It is very convenient to use paper molds, because I only have 8 silicone molds, and I had enough dough for 20 muffins. And yet, try to tamp the dough a little, otherwise unpleasant cavities may form on the finished muffins. After baking in an oven preheated to 190 ° for 20 minutes, remove the muffins.
  10. Mix the glaze: our amount of juice will take about a hundred grams icing sugar.
  11. Its amount must be adjusted depending on the consistency: the glaze should be a little fluid, but thick. It will look something like this.
  12. Lubricate the cupcakes with icing using a brush. You can try with a spoon, but I just couldn't get it to smear the edges.
  13. And we serve for tea. Pets will be simply delighted!
