I had some pickle and decided to make pancakes.

Ingredients:

Preparation:

  • We prepare all the ingredients.
  • Put soda, sugar, egg in a bowl.
  • Beat the mixture, pour in the brine.
  • Mix the resulting mass.
  • Add flour to the brine and egg mixture.
  • Stir until smooth, without lumps of flour. This should be done by rotating the whisk strictly in one direction. The porous dough is ready.
  • Add more vegetable oil, mix, and so we proceed to frying.
  • Fry pancakes on both sides. For the first pancake, pour 1 tablespoon into the pan. vegetable oil, for the rest, the oil does not need to be added to the pan.
  • Rub the cheese directly onto the pancake.
  • We turn it into an envelope. Put in a hot skillet with vegetable oil, fry.
  • Put the fried pancakes on both sides on a plate.

In fact, the recipe for brine pancakes is very convenient when you do not know where to put the liquid with canned cucumbers... You shouldn't pour it out. It turns out that amazing pancakes are cooked on it, they will be thin, fragrant.

Components: 1 tbsp. brine; 0.5 tbsp. water; 1 tbsp. flour; 2 pcs. chickens. eggs; 0.5 tsp soda; 1 tbsp Sahara; 3 tbsp rast. oils; 50 gr. tv cheese (take Dutch).

The preparation of the ingredients is really important, because you need to sift the flour. You don't need to add salt to the dough, since the brine is already salty, plus everything, the filling will also be cheese.

When the pancakes are ready, you need to put the filling in them, and then fry in a pan so that there is a golden crust. It turns out to be unrealistically tasty!

Cooking Algorithm:

  1. I put chickens in a bowl. eggs, I introduce sah. sand, interrupt into foam using a whisk.
  2. I add 0.5 tbsp to the mixture. water and plant. butter. I pour in the cucumber pickle, quench the soda in it. I add flour, but very carefully, and then beat the dough with a whisk. We exclude salt, as I mentioned above. The result is a homogeneous dough in consistency.
  3. I bake delicious pancakes. The frying pan must be greased the first time. butter. You don't need to lubricate anymore, since the dough already contains rast. butter.
  4. Rub the cheese on a large grater. I put the filling in the center of the pancakes and fold its edges into the middle. I roll the pancakes into a roll. I do the same with each pancake.
  5. I put cheese pancakes in brine in a frying pan, the seam should be at the bottom. I start baking to get a fragrant crispy crust.

To bake unusual pancakes in brine, you will need:

  • pickle from cucumbers or tomatoes - 250 ml,
  • warm water -120 ml,
  • wheat flour -1.5 cups,
  • a tablespoon of sugar
  • 1/2 teaspoon of baking soda
  • 3 tablespoons of starch
  • vegetable oil,
  • 2 eggs,

For pancake filling:

  • 150 grams of cheese
  • garlic - 3 cloves,
  • mayonnaise to taste
  • greens.

How to cook pancakes in brine with starch stuffed with cheese

We knead the dough for pancakes as usual, but not with milk, but with pickle from a cucumber. Pour into a bowl wheat flour, sifting it through a sieve to enrich it with oxygen (every housewife probably knows about this), pour in a glass of cucumber pickle, half a glass warm water, 2 tbsp. tablespoons of vegetable oil, mix everything and grind the lumps.

Then add 3 tablespoons to the pancake dough. tablespoons of starch, a tablespoon of sugar, 2 eggs, quick soda, mix everything, pancake dough can be kneaded in a blender.

Now let's get down to baking pancakes in brine with starch. Pour the dough into a well-heated, greased frying pan at the very beginning with a ladle and distribute it over the pan. Fry pancakes in brine and cook at the same time cheese filling for them.

To do this, mix the mayonnaise with grated garlic, grate the cheese on a coarse grater and chop the herbs.

On the second day of Shrovetide, I also decided to cook pancakes with cheese in brine. For their preparation I use a pickle from home canned tomatoes which is quite tasty and sweet.

You can use absolutely any brine for making pancakes according to this recipe: cucumber, cucumber-tomato, watermelon, pickle from pickled zucchini, etc.

I suggest stuffing such pancakes with soft cheese and herbs, this filling is very suitable for savory pancakes.

For a recipe for delicious brine pancakes you will need:

Ingredients:

For the pancake dough:

  • Pickle (I use tomato) - 500 ml.
  • Water - 120 ml.
  • Eggs - 3 pcs.
  • Sugar - 2 tablespoons
  • Salt (I use sea salt) - 1 tsp
  • Soda - ½ tsp
  • Starch - 4 tablespoons
  • Vegetable oil - 5 tablespoons
  • Flour - about 1.5 tbsp. (I add enough flour to make a pancake dough with the consistency of cream, as I like to bake thin pancakes... If you like thicker pancakes, add a little more flour).

For filling:

  • Soft cheese (Fetake) - 1 pack. (500 gr.)
  • Greens (dill, parsley, cilantro) - 1 bunch each,
  • Garlic - 2 cloves.
  • Mayonnaise - if necessary, add to the filling for better spreading of the cheese (I did not use it, since the Fetake cheese is quite soft)

Cooking process:

Pour brine, water into a deep bowl, break eggs, sugar, salt, soda, vegetable oil. We mix everything.

We introduce flour and starch gradually (sifting through a strainer). Mix the pancake dough with a whisk so that no lumps form.

I bake thin pancakes, so the amount of flour is needed so that the dough is watery. Like liquid sour cream.


We heat the pan for baking pancakes, grease it with a brush with vegetable oil (you can also use half an onion, potato or a piece of bacon), put the dough in a ladle, pour it into the pan and level it evenly over the surface.

Fry pancakes in brine on both sides.

From this amount of brine dough, about 35-40 pancakes are obtained.

When the pancakes are all ready, we begin to stuff them.

On one side of the pancake, put cheese, cut into cubes along the entire length, sprinkle with chopped herbs mixed with squeezed garlic.

Roll the stuffed pancake with cheese tightly.

You can also use Fetaki cheese (for filling pancakes, you can use any soft cheese and even melted) spread over the entire surface of the pancake, sprinkle with herbs and garlic on top

and also roll tightly into a roll (cutting, you get beautiful rolls of pancakes with cheese).

Both are good!

The pancakes are very tasty, have a salty taste, since the cheese is quite salty.

Very good such stuffed pancakes in brine with salted cheese and garlic combined with sweet tea or a cup of coffee.

Pour brine into a deep bowl. It must be filtered through a fine strainer so that peppercorns or mustard seeds do not get into the dough. Add chicken egg.

Add salt, sugar and vanilla sugar.

Pour in vegetable oil, mix thoroughly and add sifted flour. Add all the flour at once (in one portion) and beat the dough thoroughly for 5-7 minutes with a whisk. You can also use a mixer. The dough should be smooth, without a single lump. In consistency, it will resemble liquid sour cream: lifting the whisk up, the dough will easily run down.

Soak a silicone brush in vegetable oil and grease a preheated pan with it (no need to pour in oil!). After 1 minute, pour in a ladle of dough, while making circular movements with the pan, helping the dough to spread evenly over the surface. Fry the pancake over medium heat.

After 1 minute, gently pry off the edge of the pancake and quickly turn it over to the other side and continue to fry. Remove the pancake from the pan after 30 seconds. Grease the pan with oil as needed (you do not need to grease the pan after each pancake).

Pancakes cooked in brine are tender, soft, tasty and perforated.

They can be served immediately after removing them from the pan. After all, it will be hard for your household to resist incredible aroma scattered throughout the house from the kitchen as these wonderful brine-mixed pancakes are made.
