Ilya Loevsky: In fact, we create the infrastructure of Russian winemaking, consumption culture. There are many consumer myths - about wine material, powder wine. What is it at all?

Ilya Loevsky: From Soviet times you got a living word - a wine material. What it is? It is a wine that is not yet poured into a bottle. And after it is poured there, the wine material becomes a consumer product - wine.

Some manufacturers honestly write on the labels of the "Sukhoi wine material". And for some reason everyone thinks we are talking about powder. And in fact, it means that there is no sugar in the wine material and it turned out after bottling into a bottle into ordinary dry wine. These are technical terms of winemakers, and they have nothing to do with falsifications and "powder wines". When the bottle is written "dry wine", you do not think that inside the powder.

How will the study be held?

Ilya Loevsky: Together with colleagues from the ministries, we determined that only wines from Russian grapes will fall into the project, first of all, guilt of protected geographical indication. So, we had to explore vineyards. Our first task when working on the "Wine Guide of Russia" is to conduct an audit of the manufacturers and understand whether there is a grapes in general from which wine is produced in Russia. Our experts visited 42 enterprises in 4 regions of Russia. The total area of \u200b\u200bthe vineyards that we appreciated - more than 40 percent of those 89 thousand, which are in Russia. In fact, this is the main volume of high-quality, modern vineyards that are in the country. We know their varietal composition, yield. Now we, for example, can with a high commitment to say that the most common red varieties on Russian vineyards are Cabernet Sauvignon and Merlot, as well as around the world. This year, winemakers have collected one of the best yields over the past ten years - 540 thousand tons.

In addition to the audit of the vineyards, we used the Rosal acceleration data on the EGAIS system to understand how much fault was released in Russia and sold.

Then they selected wines for research and purchased them in ordinary stores. Manufacturers did not know where and when wines will be purchased for research.

What criteria were wines taken?

Ilya Loevsky:One main price. Wines should have been available. Moreover, other robust research has shown that there is no direct relationship between price and quality. There are products inexpensive, but high-quality. And dear, but worst quality. We focused on the price category from 200 to 1000 rubles per bottle.

The second criterion is the circulation, mostly wine with a circulation of 50 thousand - 100 thousand bottles. But there are deviations: the largest wine in the study is more than a million bottles, about 15 percent - wines with a circulation of 30-50 thousand bottles. In total, we explore wine more than 300 brands.

Who and how to evaluate their quality?

Ilya Loevsky: Quality is estimated in the process of impartial and maximum responsible tasting. Wine can be high-quality, comply with GOST for the content of alcohol, sugar, other parameters, but it may not fit the organoleptic at the same time.

We collected high-level experts and made a tasting commission from them. It included 24 specialists, including two from Italy, one of them - the laureate of the Nobel Prize in the field of climatology. The second is the representative of the largest laboratory in Italy, which annually makes about a million samples on fault. Among the Russian tastors included in the commission, there are experts, sizel champions of different years, teachers of wine schools, people who are certified as teachers not in Russia, and in the UK, where there is a very authoritative Institute Wine & Spirits Education Trust (WSET). Tasting takes place in the quality center of quality - the sole in Russia of a specialized laboratory for conducting organoleptic studies of wine products. We wrote a special regulation on how everything should be rigged. It is based on four Russian gostas and advanced techniques, including foreign regulations of the International Vintage and Wine (OIV).

In the laboratory, complete silence, individual booths, no exchange of views between experts in the tasting process, a person stays alone with a glass of wine (whose name is unknown to him, only cipher) and his opinion. It evaluates a total of 12 parameters of four groups: appearance, aroma, taste and overall impression. The computer translates the rating to the numbers, the points believes and evaluates the work of the expert. The system constantly monitors the expert, checks the convergence of results. For example, an expert can several times, for example, with an interval of several hours or days, to file the same wine and compare its assessments.

Did you have a preliminary "sampling" of the experts? After all, their well-being, perhaps, taste preferences can affect the results?

Ilya Loevsky: All procedures are clearly prescribed in the regulations. You can not come to tasting with perfume, drinking coffee, smoking. Before starting work, we conducted the "paying" of experts. I will give an example: Initially, the taster must recognize the basic tastes (six) in different degrees of the concentration of reference solutions. This, by the way, is not so easy. The bitter taste from the metal is very difficult to distinguish. Then it is proposed to recognize the reference aromas in the impersonal test tubes. This confirms sensory sensitivity. Of course, we knew that our testes were professionals, but the rules are rules. Its expert need to prove. In addition, there are a number of tariff, reference samples, with pre-known indicators, and the tastor only then becomes calibrated when they appreciate them with certain accuracy.

There are "deceptions" when the wine consciously flies. For example, caffeine or other substance add to it, and a person should determine it.

In addition, laboratory experts were able to translate in a digital view. That is, as you know, tasting is a subjective assessment that is descriptive in nature. We "digitized" of each taster and with the help of statistical and mathematical methods of analysis were able to evaluate the general tasting panel.

What will the result of this work? About bad wines tell?

Ilya Loevsky: Those manufacturers who experts are audited in the summer have already entered the program of promoting the "Days of the Russian Wine", which we organized together with the Ministry of Industry and Communist Party and the Ministry of Agriculture. This program will be regular - special events for the support of Russian wine will be held in the country's retail chains twice per year. Only domestic wines will be investigated?

Ilya Loevsky: Not. We focused on organoleptic evaluation, like our colleagues around the world. Wine is not about basic indicators, but about history and unique tastes.

Ilya Loevsky:Such things a professional can define the taste, to evaluate whether sugar, water and other unnecessary ingredients have been added. For this, we checked our tasters on "cheating".

How has the industry changed lately? Can we become a wine-making power?

Ilya Loevsky:Since the beginning of the 2000s, a serious technical re-equipment is undergoing in Russian winemaking. We see large investments in grape processing techniques. Modern stainless steel tanks, cold systems, pneumatic press for processing grapes. This is all very important for quality. But if you consider the industry more carefully, the most beautiful equipment will not make a high level wine from low quality grapes. The last decade passed under the sign of investments in the vineyards themselves. An important role was played by the Ministry of Agriculture. From 2013, 4.5 billion rubles were invested in the framework of the state program of the Ministry of Agriculture. In 2019, the state support of the wine industry will grow up to three billion rubles against 1.4 billion in 2018. The industry shows a positive trend. This was largely due to the state support of viticulture: over the past three years, it has grown more than five times, and next year its volumes will grow even more than twice. Does Russia supply its wine for export? Can it compete in overseas markets?

Ilya Loevsky: Basically, our wine manufacturers are focused on the domestic market. Although there are exporters. For example, our wine has a good reputation in China. There it is also perceived as a romantic drink.

What is the main problem of Russian wine? In the fact that his just no one knows?

Ilya Loevsky: I think yes. In addition, we have limitations - the law on advertising, which with great difficulty allows us to talk about Russian fault. One of the tasks of the Working Group of the Wine Guide of Russia, including the dialogue with the Federal Antimonopoly Service and with the regulators of the advertising market, so that there are preferences in the Communication part of Russian wines.

Even buy wine to research in stores seemed to us a difficult task. Wines had to look. Since few people know about them, they are not very large parties to the supermarkets, and they are not put on the most noticeable places. The popularity of domestic wines should be increased.

Ilya Loevsky:Of course, because every year - new grapes, other weather conditions, all this is reflected in fault.

Will you explore the same wine brands alone?

Ilya Loevsky: Partly yes. Wine can not be equally the same. Russia is a climatically complex region for viticulture. We have a clear concept: good or bad year, so the same Cabernet from grapes from the same vineyard may differ from year to year. So many wines will be repeated again. Plus - new ones will be added.

"Wine Guide of Russia" - a joint annual draft of Roskkaya, Ministry of Industry and Communist Party and the Ministry of Agriculture of Russia. Based on the global experience of compiling wine ratings, an expert group from leading domestic and international experts, sommelier and tastors estimated 320 samples of wines from the Russian grapes of five main categories available at the price and widely represented in retail.

The study included wine 24 producers who represented the largest wine-making regions of the South of Russia (Republic of Crimea, Krasnodar Territory, Rostov region). Wine was chosen from the mass price segment - from 200 to 1000 rubles.

Wine was estimated at a 100-point system in accordance with the International Scale of the World Wide Organization of Grapes and Wine (OIV). In accordance with the Russian GOST "Good", wine is considered to be of the amount of points at least 71. The expert commission of Roskachka for the wine guide of Russia was adopted by an elevated level - 78 points. This is the average value between the guest "good" and "very good" (86 points).

All wine-making products, which took the quality assessment, was divided into five groups: sparkling and pearl wine, grape red wines, white wine wines, wine grape pink wines, liqueur wine. Inside all categories were considered including the fault of a protected geographical indication and a protected place of origin.

From the initial brand list in 926 names, 486 items were chosen, which meets the principles of price and availability. Of these, 320 wines were purchased, the most widely represented in retail.

The study contained 51 names of sparkling wines, 104 white names, 19 pink items, 114 names of red wines; 32 names of liqueur wines.

Excellentby the quality of the existing GOSTS:

1. Of the 114 samples of the red wine 78, the score ≥78 points (68%) was obtained;

2. Of the 104 samples of white wines, 56 received a score ≥78 points (54%);

In each of the studied categories, high estimates of wine in the price group from 200 to 500 rubles were noted. The price is not necessarily a quality marker: a number of samples with a higher price lost to the estimates of democratic positions.

White wines increase their popularity: if according to the Union of Sommelier and experts of Russia, several years ago, consumers in 6-7 cases from 10 preferred red wines, now the ratio is approaching parity. In the summer season, light and fresh white wines are often fascinated by the popularity of red. At the same time, it is very difficult to achieve freshness and purity of the flavor and taste of white wine.

According to the results of the study only 10% of the studied white wines of Russian production are not reaching the lower border of the GOST.
