I prepared this cake specially for its beginning.

I bake such a cake very often, not even during fasting, because I do not like it very much
rich and moderately sweet pastries ...

For the preparation of the cake, a recipe known in the vastness of culinary sites was used quick test"Dough in 15 minutes."
I have been using it with minor changes for a long time, for any baking,
it rises well and always works !!!



"Basic recipe" Dough in 15 minutes ":
3 glasses of water, 100 g of regular yeast, 4 tbsp. granulated sugar, 8 glasses of flour, 1 glass of vegetable oil, 1 tsp. salt. This is a large dose, for 3-4 round cakes.
Incl. dough-leaven: 3 glasses of warm water + 4 tbsp. sand + 6 tbsp. flour (slightly with a slide) + yeast.



For 1 round cake (form d = ~ 26 cm) 1/4 (or 1/3) of basic recipe.

So, for 1 round pie today I take 1/4 of the basic recipe, namely:
0.75 cups warm water, 25 g pressed (raw) yeast, 1 tbsp. granulated sugar, 2 cups flour, 1/4 cup (this is 6 tablespoons) vegetable oil (I have a native sunflower), a little salt.
Incl. dough-leaven: 0.75 cups of warm water, yeast, 1 tbsp. granulated sugar, 1.5 tbsp. flour.



Preparation:
* in a bowl, mix 0.75 cups of warm water, yeast, 1 tbsp. granulated sugar, 1.5 tbsp. flour. Stir, stand for 15 minutes, until everything rises with a hat.
When finished, add salt and vegetable oil, mix.
* Immediately pour this mass into the sifted flour.
Knead (~ 5 minutes, the dough will be elastic, not sticky).

Everything. The dough is ready. You can bake. This is in the original recipe. But I still let the dough come up 1 time, knead and immediately form the products on a baking sheet, stand a little warm, after doubling their size, bake (~ 30 minutes at 190 ° C).

Pie shaping:
Put the prepared dough, without rolling it out, in a greased form (I’m on baking paper), stretch it with your hands along the bottom of the mold, forming a side + filling of dried apricots + chopped almonds (more if desired) + sprinkle with a streusel (today I have a lean streusel).

I give a little distance in a warm place (I have a heated oven), after doubling it
size - bake for ~ 30 minutes at 190 ° C.



Filling for 1 round pie:
* 200 g of dried apricots - this is ~ 18-20 pcs (pre-soak it, cut it into cubes into ~ 6-8 pieces with kitchen scissors, depending on the size, or into strips, like I have today, simmer a little in water, you can add butter ~ 5 minutes), before I chopped dried apricots to gruel, but now I do this only, it is soft enough and does not spoil the taste of the pie,
* 1 - 1.5 tbsp. granulated sugar (I do not put it, because I use large and fleshy dried apricots, and they are usually sweet),
* 1 tbsp vitamin "Inverted lemon, in sugar" (gives a very tasty sourness in the pie) -

* 1-2 tbsp chopped almonds (mix the filling with almonds or put nuts on top, on the filling).



Lean streusel for 1 round pie:
4.5 tablespoons flour + 3 tbsp. sand = stir, only then + ~ 4 tbsp. vegetable oil (I am sunflower oil) - add it gradually by 1 tablespoon, do not pour, otherwise it will be difficult to pour a very oily streusel onto the cake. You can cook more streusel.

Note:
Before displaying this cake, I tested such a streusel in other baked goods for some time. exact recipe I didn’t, and with it the top is not as fried as with butter.

Therefore, I still prefer the streusel on butter:
3 tbsp flour + 2 tbsp. sand + 40-50 g butter.
This is a small dose, for those who like more sprinkling, I advise you to increase it by ~ 1.5 times.

Preparation

  3. In a separate bowl, dissolve the sugar in a warm boiled water adding honey and stirring the mixture thoroughly.
  4. The vegetable oil is slightly warmed up and mixed into the total mass.
  5. For the dough, flour is sifted and mixed with baking powder, sprinkle with cinnamon and salt in the amount indicated in the recipe.
  6. All the necessary components are mixed until smooth, so that there is not a single lump. The dough should resemble sour cream. If the dough turns out to be too thick, then you can fix it with 1-2 tablespoons of boiled water.
  7. The time has come for nuts and dried apricots, which are mixed with the dough.
  8. We prepare a baking dish, lubricating with vegetable oil over its entire surface.
  9. In principle, all the preparations have been completed, there is little left to do. The oven heats up to 180-190 degrees. The dough is poured into a mold and evenly distributed.
  10. The pie will be baked for 40-50 minutes. Above should form golden brown, and the readiness of the filling can be checked with a toothpick, if the dough does not stretch, then it can be served.
