Steamer what you can cook. Dietary steamer recipes

No restrictions on the amount of food! Eat as much as you want and forget about exhausting hunger. And the steam diet has no contraindications. Try delicious steamed dishes and lose weight!

This diet, also known as a gentle diet, is successfully used to improve the health of the body and correct weight. The steamed diet receives the most positive reviews from both specialists and patients. Unlike most methods for losing weight, the steam diet has no age restrictions; even children and the elderly can use it. It also has no contraindications; on the contrary, such a nutritional system serves as one of the elements in the treatment of many diseases.

The steam diet is not one of the “quick” methods for weight loss; the rate of weight loss depends on the characteristics of the body and the initial build of the person losing weight: the more extra pounds, the sooner they will go away. On average, following a dietary regimen for three weeks, body weight decreases by 3–5 kg.

Physically and psychologically, eating steamed foods is easy to tolerate, so it quickly becomes a habit. The minimum duration of the steam diet is three weeks, but the ideal option is to adhere to such a healthy way of life constantly.

Advantages and disadvantages

The steam diet is one of the safest for health. It is used in the treatment of diseases of the liver, kidneys, gastrointestinal tract, diabetes, cardiovascular pathologies, and is prescribed for colds and skin diseases, during the rehabilitation period after operations. This type of gentle diet has a huge number of advantages:

  1. Since most nutrients are retained in food, following a dietary regimen helps not only to lose weight, but also to increase immunity, rejuvenate the body, and improve the condition of the skin and hair.
  2. The diet menu is varied, products are available.
  3. Using a steamer you can cook several dishes at the same time.
  4. The calorie content of the daily menu is low, at the same time the body does not experience hunger, since restrictions exist only on the method of preparing food, but not on its quantity.
  5. Due to the balanced diet, additional vitamin intake is not required.
  6. Slow weight loss ensures the stability of the result - a sharp gain in body weight after stopping the diet regimen is excluded.

The disadvantages of the diet include some difficulty in organizing meals. Food cooked in a double boiler will have to be brought to work or college in containers, and not everyone can quickly wean themselves off fried foods. And the usual disadvantage for “long-term” diets: you won’t be able to lose weight very quickly using this technique.

Principles and rules

Weight loss is achieved through a calorie deficit: the amount expended in the process of life exceeds the amount received from food. To get the missing calories, the body is forced to burn fat reserves. Weight loss occurs with a gentle load on the digestive system; dietary restrictions apply only to fats and simple carbohydrates.

Catering

  1. The diet is based on boiled, stewed, baked dishes; it is allowed to add a small amount of vegetable or butter to them. Frying is excluded.
  2. You should eat food 5-6 times a day. Portions for three daily meals should be approximately 250-300 g, snacks and dinner - 150-200 g.
  3. You need to have dinner no later than 2 hours before going to bed so that the food has time to digest.
  4. Protein meat and fish should not be combined with carbohydrate cereals; the break between their consumption should be about 4 hours.
  5. It is advisable to cook cereals without salt; it can be replaced with soy sauce; you can also add herbs, fruit or vegetable sauces, vanilla, and cinnamon to porridges.
  6. If it is difficult to do without sweets, include fruits baked with honey or stevia in your menu. It is better to eat sweets in the first half of the day.
  7. The average energy value of the daily diet should be from 1700 to 2200 kcal, it depends on your body weight. You can calculate the amount of energy that the body receives when digesting food using food calorie tables.

It is recommended to eat food warm or cool (first and second courses warmed to 40 - 50°, drinks at room temperature). This requirement is explained by the fact that chilled food slows down digestion, and hot food irritates the gastric mucosa.

Drinking regime

Water is vital for the normal functioning of the body, and doubly so during weight loss. With its deficiency, food takes longer to digest and fat is not burned as efficiently. In addition, drinking water before meals reduces appetite. The total amount of liquid, including soups, should be 2-3 liters per day, at the rate of 30 ml per 1 kg of body weight.

While following a dietary regimen, it is recommended to drink 150-200 ml of pure still water half an hour before meals. You should not drink any liquid during or immediately after a meal. Even if it is a dessert - jelly or compote, it is better to drink it half an hour after eating.

Permitted and prohibited products

The diet is based on protein and carbohydrate products:

  • cereals;
  • pasta, biscuits, dry biscuits;
  • bread (preferably rye or white from coarse grains);
  • lean meat, dairy sausages, fish;
  • dairy products (kefir, curdled milk, yogurt, low-fat sour cream, cottage cheese, hard cheese);
  • insipid yeast-free baked goods;
  • vegetables;
  • berries and fruits, as well as marshmallows, mousse, jelly, jelly, compote made from them;
  • eggs (no more than 1 piece per day);
  • weak tea, chicory drink;
  • honey (2–3 teaspoons per day).

The consumption of foods that are difficult to digest, cause increased secretion of gastric juice or bloating, increase cholesterol levels, and contain simple carbohydrates is limited or completely eliminated. These include:

  • fast food, semi-finished products, canned food;
  • fat meat;
  • animal fats, margarine, butter substitutes;
  • hot sauces, mayonnaise, mustard, garlic;
  • baking from yeast dough;
  • coffee, cocoa;
  • chocolate, pastries, cakes, butter cookies;
  • legumes, mushrooms, radishes, sorrel that provoke fermentation;
  • alcohol;
  • carbonated drinks and sour kvass.

Despite the fact that green tea is considered useful for weight loss, it can cause pain in some diseases of the gastrointestinal tract or pancreas. During the period of exacerbation of pancreatitis, anacid gastritis, peptic ulcer disease, it is better to drink teas from mint, lemon balm, currant or raspberry leaves.

Features of cooking

Since the temperature during steaming does not exceed 100°, the products retain their natural color and taste, and their vitamins are almost not destroyed. However, despite the apparent simplicity of the technology, the “steam kitchen” has its own characteristics that should be taken into account.

  1. Only environmentally friendly products are allowed to be used - during steam treatment, pesticides, nitrates and additives for accelerating growth do not disappear anywhere.
  2. Vegetables should not be overripe so that they do not lose their shape when cooked.
  3. It is better to cut vegetables or meat into pieces of the same size, so they will be ready at the same time.
  4. It is not recommended to place too many layers of food, as this will lengthen the cooking time.
  5. If you are preparing several dishes at the same time, it is better to place meat on the lower tier of the steamer (it will get hotter steam), and place vegetables on the upper tier.
  6. You should follow the cooking mode and time specified in the recipe so that instead of a healthy and tasty dish you do not end up with biologically inert, unappetizing porridge. Thus, the cooking time for root vegetables is approximately 30 minutes, green vegetables - up to 5. Beef and pork are cooked for 1.5 hours, poultry and rabbit meat - approximately 45 minutes, fish - 15-20.
  7. It is not recommended to cook pasta in a steamer - it will boil and stick together.

Menu

The proposed menu for the week is indicative. You can make it yourself, using your own recipes, but taking into account the requirements of the steamed diet regarding the separate consumption of proteins and carbohydrates. It is advisable not to cook dishes that combine protein and carbohydrate foods (for example, peppers stuffed with meat). Do not forget also about the cooking methods: boiling, stewing or baking.

Dish recipes

Cream soup with pumpkin

Peel and cut into small pieces 1-2 potatoes and 0.5 kg of ripe pumpkin (its flesh should be yellow-orange in color and its peel should be hard). Pour in chicken or meat broth until it covers the mixture. Cook over low heat until the potatoes are done. Grind in a blender until smooth, add salt and spices. Serve with sour cream.

Rice soup with cod fillet in a slow cooker

Peel the potatoes, cut into cubes, chop the onions, grate the carrots, rinse the rice thoroughly. Place all ingredients in a multicooker bowl and cook in “soup” mode for 15–20 minutes. Add cod fillets cut into small pieces, herbs, salt and spices. Cook for another 10 minutes. When serving, sprinkle with chopped green onions.

Vegetable stew in a double boiler

Ingredients: potatoes, carrots, white cabbage, onions, tomatoes. Grate the carrots, chop everything else coarsely. Mix vegetables, add salt, add Italian herbs seasoning and place in a bowl for rice. Cook for 40-50 minutes. This stew can be used as an independent dish or as a side dish for meat.

Peppers stuffed with meat and rice, steamed

Remove the seeds from the bell pepper, cut off the stem and place in a steamer for 5 minutes. Mix equal amounts of lean minced meat with unpolished (brown) rice, boiled until half cooked. Add finely chopped onions, grated carrots, salt, ground pepper, and a little vegetable oil. Fill the cups of peppers with the mixture, place them in a steamer bowl and cook for 30–40 minutes. Serve with sour cream or tomato sauce.

Stewed beef with sweet and sour sauce in a slow cooker

Cut 0.5 kg of beef tenderloin into small elongated pieces, add salt and pepper, and place in a multicooker bowl greased with vegetable oil. Place finely chopped carrots, onions, and parsley root on top. Pour in the broth so that it completely covers the mixture, cook in the “stew” mode for about an hour. Mix 2 tbsp. l. tomato paste, 1 tbsp. l. flour, 1 tbsp. l. sugar, 1 tsp. lemon juice or fruit vinegar, tomato paste, a few peas of allspice, bay leaf. Dilute the mixture to a liquid state with broth from the multicooker and pour the resulting sauce into the bowl. Simmer for another 10 minutes.

Tired of spending your days in the kitchen and want to make your food healthier? A convenient and modern steamer can make your life much easier, become a faithful housekeeper and open up a whole world of tasty and healthy food.

Steamed food has a million advantages. This method of heat treatment allows you to preserve maximum nutrients, and requires minimal effort from the housewife. A steamer is a godsend for busy (or lazy) cooks. All you need to do is load the food into it, and the smart device will do the rest itself (it can also warm up the food when you arrive). Food in a steamer will never burn or dry out. This technique is easy to clean and easy to use. Steam dishes are also the basis of any dietary menu, so they are recommended for children, pregnant women and the elderly, as well as those who have stomach problems or are overweight.

However, there is one caveat - this almost ideal method of cooking is not suitable for all categories of products. In a double boiler, you cannot cook anything that requires long-term heat treatment (for example, meat steaks), as well as anything that needs to be cooked in intensely boiling water (for example, pasta).

Eastern past

Pots with metal perforated inserts are a legacy of the Soviet past, which is still relevant today

The queen of dietary cuisine has come to us from the East. Of course, its “ancient” version was far from a modern kitchen appliance - it was a basket woven from bamboo straw with a lid. It is generally accepted that steaming was first introduced in China, although many believe that the Chinese borrowed this method of processing food from the Arabs, and those from the indigenous population of North Africa.

In the West and in Russia, steamers were not in great demand. In extreme cases, a water bath was used for gentle cooking - for example, for puddings.

The first prototype of a modern steamer appeared in Soviet times. It was a special pan with a perforated insert on which food was placed. This, by the way, can still be seen in hardware stores. This unit, of course, will not replace a full-fledged, mains-powered steamer, but it is quite suitable for preparing simple dishes.

How to choose

The classic multi-tier electric steamer consists of three parts. Firstly, this is the base - water is heated in it, which serves as a source of steam.

Electronic steamers are more functional, mechanical steamers are easier to use

Secondly, steam baskets are containers with a perforated bottom where food is placed. There can be several baskets, in which case they are placed one on top of the other. The top one must be closed with a lid. The kit may also include a bowl and a tray for boiling eggs (yes, eggs can be boiled in a double boiler - this is very convenient).

And thirdly, the tray: it is designed to collect condensation and juice flowing from food. Important detail: the tray must be deep enough. It is good if its depth is approximately 2-2.5 cm, otherwise it may cause inconvenience: you will have to pour out the condensate formed right during cooking. It’s also a good idea if the tray has handles, otherwise it’s easy to get burned when pouring out the hot broth.

Decide on power. For most modern steamers, it ranges from 600 to 2000 W. And although this is far from the main indicator, the cooking time in a double boiler will depend on its power, among other things.

To understand how large a steamer you need, consider how often you will use it and how many people you will be cooking for. Three baskets will allow you to prepare more dishes, but you will also have to spend more time on it - due to an increase in the total volume that needs to be filled with steam.

Pay attention to the control system. “Electronic” steamers are more functional; for example, they provide the ability to delay the start of cooking. They will also be able to make sure that dinner remains warm until you arrive. Well, mechanical control, although inferior to electronic control in many respects, is much easier to use. By the way, an important advantage of a double boiler over a conventional stove: when the time set on the timer expires, the device will automatically turn off.

The range of prices for steamers is quite large - from 1 to 10 thousand rubles, so you can find this household appliance for every taste and budget.

Important to remember:

  • To avoid burning your face or hands with steam, follow basic safety rules and open the steamer roof away from you.
  • Place food on each steamer rack in a single layer. Fish, meat or juicy products - on the lower level so that moisture from them does not drip onto the products below.
  • Foods that take longer to cook should be placed on the lower level, while those that cook faster should be placed on the upper level.
  • It is usually not recommended to salt dishes during the process, although the instructions for the purchased device should be your best advisor in this case.
  • The steamer cannot be washed in the dishwasher. Plastic, no matter how durable it is, can crack even from careless “hand” washing.
  • If you are cooking in a metal perforated steamer that fits into a saucepan, make sure the steamer is at least 2cm above the water level.

Steamer ideas

Ingredients for 2-3 servings: 150 g cheese, 1 egg, 1 small zucchini, 1 eggplant, 1 sweet pepper, a little herbs (parsley), salt to taste.

Preparation. Cut the vegetables into small cubes, beat the egg into them and add grated cheese. Mix everything, place in a rice bowl, cover with foil on top and cook in a double boiler for 25-30 minutes. After this, sprinkle the finished casserole with chopped herbs.

Note. Focus on the readiness of the eggplant - it “steams” the longest. Cooking time in a double boiler directly depends on the power and quantity of loaded products.

Steamed vegetables with butter and herbs

Ingredients for 4 servings: 350 g broccoli, 1 bunch of green onions, 1 peeled red onion, 350 g green peas, 1 tablespoon butter, 1 tablespoon mixture of chopped herbs: parsley, thyme, chives, tarragon; a little lemon juice, salt and black pepper.

Preparation. Cut the broccoli into pieces, the red onion into slices, and chop the green onions. Place all vegetables in a steamer basket. Cook until done for 15-20 minutes (after 10 minutes you can check readiness). Meanwhile, melt the butter and mix it with the herbs, lemon juice and seasonings. Pour this sauce over the vegetables, stir and serve immediately.

Note. You can make a lot of herbal butter at once and then freeze it for future use. To do this, you need to put the butter in film and shape it into a “log”, and then wrap it in cloth or a bag and put it in the freezer. You can always cut off the desired size piece from such butter.

Oriental salad

Ingredients: 300 g broccoli, 2 red and 2 green sweet peppers, 2 tomatoes, 1 red onion, 1-2 tablespoons, 1-2 tablespoons vegetable oil, salt to taste.

Preparation. Peel, wash and chop the vegetables. Cut the peppers into pieces, peel the tomatoes and cut them into slices. Then steam everything except the onion separately. Peel the onion and cut into thin half rings. Mix vegetable oil in a glass container with soy sauce. Place all the vegetables in a bowl, season with a mixture of vegetable oil and soy sauce, mix, and put in the refrigerator. When serving, place in portioned plates and add salt if necessary.

Note. Tomatoes should not be cooked for too long, otherwise they will not taste good.

Cutlets “With a surprise”

Ingredients: 800 g turkey fillet, 2-3 slices of white bread, 2 eggs, 2 onions, 3 cloves of garlic, 150 g hard cheese, 200 g canned champignons, 1 teaspoon turmeric, milk, ground black pepper, salt.

Preparation. Season the turkey with salt, pepper and ground turmeric. Add onions (1 pc.) and mince. Soak white bread in milk. Finely chop the remaining onion, squeeze out the garlic. Add everything to the minced meat. Beat in the eggs and mix thoroughly. Form into flat cakes on your palm. Place mushrooms and a piece of cheese in the middle and make cutlets. Wrap each cutlet in foil. Place in a steamer and cook for 20-25 minutes.
