  • 1 cup finely chopped vegetables (broccoli, mushrooms, tomatoes, bell peppers, chili peppers, asparagus, onions, spinach... don't limit yourself to this list, get creative or use what you have in the fridge)
  • 1/4 cup milk or cream
  • 100 grams of grated hard cheese (for example Parmesan)
  • A teaspoon of vegetable oil (preferably olive)
  • Teaspoon of flour
  • Salt and pepper, as usual, to taste.

Preparation

Using a whisk, whisk together eggs, milk/cream, vegetable oil, flour and salt and pepper in a large bowl.

Place vegetables in muffin tins. Try to distribute them evenly.

Pour the egg mixture over the vegetables. It's okay if it doesn't reach the edges of the pan.

Sprinkle grated cheese on top.

Bake for 15-20 minutes in an oven preheated to 180 degrees.

Instructions:

Cut the peeled and washed onions and peppers into small pieces. Cut the ham into cubes. After heating a spoonful of olive or sunflower oil in a frying pan, add the chopped vegetables along with the ham and fry for 3-4 minutes until the vegetables are soft.

At the same time, beat the eggs with milk, salt and soda in a deep bowl with a fork. You can add ground pepper and finely chopped herbs. We take silicone muffin molds and place a spoon and a half of vegetables and ham on the bottom of each one.
