  • 1 loaf;
  • 100 gr. butter;
  • 1 can of canned fish;
  • 1 onion;
  • 3 boiled eggs;
  • 1 bunch of fresh herbs;
  • spices to taste;
  • oil for frying.

Cut off both ends of the loaf. We take out the crumb and the remaining central part and two cut tops.

Finely chop the onion and fry it until golden brown in vegetable oil. Add the crushed crumb to the finished onion and mix. Remove the pan from the heat. Add finely chopped herbs and mashed canned fish to the onion with bread crumb. Finely chop the boiled eggs and add to the filling. If the filling is a little dry, add the juice remaining in the can.

Soften the butter by keeping it warm for about 20 minutes. Grind the butter and mix with the rest of the filling ingredients. Fill the loaf from both sides, compacting the filling with two spoons.

We also fill the cut tops with filling and put them in place. Wrap the loaf in foil and put it in the refrigerator for several hours.

Appetizer with beets and herring

This appetizer option is one of the versions of the famous salad “Herring under a fur coat,” so we will prepare the filling with salted herring.

  • 1 loaf, it is better to use a French baguette;
  • 1 herring or 2 pcs. cleaned herring fillet;
  • 100 gr. processed cheese;
  • 2 eggs;
  • 50 gr. butter;
  • 1 beet;
  • 1 small bunch of greens (dill);
  • 10 gherkins or 3-4 pickled cucumbers;
  • salt, ground black pepper to taste.

Cook the beets and eggs in advance. We clean the herring, remove two fillets, removing small seeds. Grate cheese and boiled eggs on a fine grater. Let the butter soften, rub and combine with the egg and cheese. If you use lightly salted herring, you can add a little salt and pepper to the oil mass. Set the third part of the prepared mixture aside.
