Somehow I forgot about such a dish as dumplings with cottage cheese. On my site there are recipes for lazy dumplings, there is, but with cottage cheese, the first recipe. But there are a lot of recipes for making such dumplings.

Dumplings are cooked with cabbage, potatoes, cherries with many other berries and even fruits. I hope that we will cook most of them with you.

Many people think that dumplings are a Slavic dish, and it was born in Ukraine. Let the Ukrainians excuse me, but this is not entirely true. Indeed, this dish is known as a national Ukrainian one, because it is too tasty they are prepared there and a huge variety of fillings. But it came to us from Turkey.

I think that it does not matter where it is from, now it is ours, and its name is Slavic. And the name was probably given by the Ukrainians, let all the other Slavs not be offended. So let's cook and not hesitate.

Well, let's start preparing the most famous dumplings - these are dumplings with cottage cheese.

Menu:

  1. Dumplings with cottage cheese and choux pastry

Ingredients:

For choux pastry:
  • Chicken eggs - 2 pcs.
  • Milk - 0.5 liters
  • Sugar - 1 tsp
  • Salt - 1/3 tsp
  • Flour - 750 g.
For filling:
  • Cottage cheese - 400 g.
  • Sugar - 3 tablespoons

Preparation:

1. Break eggs into a saucepan, shake a little with a whisk, pour in half a liter of milk, stir, add a teaspoon of sugar, a third of a teaspoon of salt and stir again.

By the way, this dough is suitable for dumplings and dumplings and other similar products. So if your filling is not sweet, you do not need to add sugar to the dough.

2. Gradually mix the flour into our milk and egg mixture, sifting it through a sieve,

until the consistency of pancake dough.

3. Put the pan on medium heat and heat the dough, stirring constantly, until it thickens. Remove from the stove as soon as you feel that the dough has thickened. Small lumps form in the dough, that's okay. They will knead when kneading.

4. Do not think that the dough will become very thick, like on pies. No, it will remain quite liquid, but thickened, with lumps, compared to the previous state.

5. We stir this custard mass well with a whisk, trying to break the lumps. I remind you once again that if small lumps remain, it's okay. They will knead when kneading the dough.

6. We begin to gradually add and stir in flour, remembering to sift it through a sieve. Add flour until the dough is already difficult to stir further with a whisk.

7. Pour a substantial portion of flour on the table and spread it on it, while the batter is still, which is simply impossible to knead. Sprinkle flour on top of the dough.

8. Now, as if picking up flour for the dough, we gain the thickness of the dough, adding a little flour to the table. The dough has absorbed flour, add a little more, etc. Until the dough absorbs flour and becomes so thick that you can knead without a lot of flour.

9. Knead for a long time, until the dough is soft, smooth and does not stick to the hands and table. Gradually, the amount of flour added will decrease, and then the need to add flour will disappear altogether. The dough can be kneaded on a dry table.

10. The dough easily falls behind the hands, not very steep, easily cut with a knife. Uniform cut.

In total, we needed 750 grams of flour for kneading. You may need either a little less, or a little more. It all depends on the flour.

11. Round the dough and leave to rest. To do this, sprinkle some container with flour inside. Distribute the flour with your hand along the side walls. We will send our kolobok into this container. Sprinkle a little flour on top of the dough, cover with a lid or a towel and set aside for a while to rest.

Cooking the filling

12. Our cottage cheese is crumbly, dry. Today we will only add sugar. You can, if you want, add sour cream, beat in an egg, add melted butter. Knead the cottage cheese a little with a fork and add 3 tablespoons of sugar to it. Knead everything thoroughly and mix.

Just make sure that the curd is not runny. If you find it a little thin, you can add a little flour.

13. Our cottage cheese is ready. The consistency we got is not liquid, it is easy to mold.

14. Sprinkle a little flour on the table. We take out the dough, cut off a piece and roll it out. You can make it a little thinner or thicker. In any case, the dumplings will be soft. I love when the dough is thin.

15. With a glass, cut into circles from a rolled flat cake. We collect scraps. Then we will also make circles of them and then dumplings.

16. Put a spoonful of the filling in the center of each mug. If the filling is liquid, then there will be problems with sculpting the dumplings.

17. Usually dumplings are molded with a scarf. First, we connect the edges over the filling, making sure that the curd does not get between the layers of dough at the junction.

18. Then we catch the edge from below and bend the first corner at an angle.

20. This is how we make all the dumplings. Dumplings can be sculpted for future use. Stick, put in the freezer, when you need to cook something urgently, you can cook without defrosting. Throw frozen into boiling water and cook until tender.

21. If you are preparing dumplings for future use, you need to sprinkle a plate or plate with flour, place the dumplings on it so that they do not touch each other and also generously sprinkle them with flour and put them in the freezer.

22. When the dumplings are frozen, remove them from the plate, put them in a plastic bag and store them in the freezer in this form.

23. Well, now we are starting to cook dumplings for ourselves. Dumplings are boiled in a large amount of salted water. Dumplings are laid out in boiling water. We twist the water, as it were, lowering the dumplings (we make a whirlpool).

24. Dumplings are very tender. You cannot mix them like potatoes, otherwise we can break them, so we twist the water a little so that the dumplings spin in the pan and do not stick together.

25. After the dumplings have surfaced, cook for another 2-3 minutes and they are ready.

26. Gently take out of the water with a slotted spoon and put on a plate. To prevent the dumplings from sticking together, pour them with a little melted butter.

Serve dumplings with sour cream, honey, jam.
