I do not really like transparent and completely not rich soup with meatballs. Therefore, through experiments, I found for myself the perfect recipe for this dish - creamy meatball soup... The soup turns out to be hearty, tasty, and, thanks to the greens, also aromatic.

Ingredients

To make a creamy meatball soup, we need:

500 g pork;

40 g butter;
2 potatoes;
1 onion;
1 carrot;

1.5 liters of broth (or water);
granulated garlic;

200 g of cream (I took cream with a fat content of 30%);
greens, salt, pepper.

Cooking steps

Melt the butter in a saucepan, fry the grated carrots and finely chopped onions on it until golden brown, stirring occasionally.

Add the chopped potatoes and simmer (for a few minutes) in the oil with the vegetables, stirring occasionally.

Pour the broth into a saucepan with vegetables, add salt, pepper and cook until the potatoes are tender.

Pass the pork through a meat grinder, add salt and granulated garlic. Mix everything and form meat balls from the minced meat - meatballs.

Dip the meatballs in boiling vegetable soup and simmer over low heat for 5-7 minutes.

Then add cream and finely chopped herbs to the soup, cook for 5 minutes and turn off the heat under a saucepan. Creamy meatball soup turns out to be appetizing, satisfying and very tasty.

Honestly, as a child, I just hated meatball soups. Everything seemed so banal and those floating meatballs only annoyed. And almost everywhere that this soup had to be tasted, it tasted the same. Ingredients

  • 1 onion, finely chopped
  • 2 prongs garlic, squeeze
  • 30 gram butter
  • 1 carrots, grate
  • 2 medium potatoes, peel, dice

  • 200 ml cream 30% (can be replaced with homemade sour cream)
  • Salt to taste
  • Ground black pepper

For the meatballs:

  • 200 grams of minced pork
  • 200 grams of ground beef
  • 2 tsp granulated garlic
  • 100 ml of water
  • Salt to taste
Cooking time: 40 minutes

1) Heat butter in a 3-liter saucepan, add onion and garlic. Season with salt to taste and simmer until the onion is soft.

2) Add carrots and simmer all together for another 2-3 minutes.

3) Add potatoes and broth and bring everything together to a boil. Boil the soup until the potatoes are tender.

4) In the meantime, mix all the meatball ingredients and mix well. Stir until the mixture becomes sticky.

Creamy Meatball Soup Recipe

To make creamy soup you will need:

  • Minced meat (pork + beef) - 500 g
  • Onion - 2 onions
  • Potatoes - 7 pcs.
  • Tomato - 1 pc.
  • Garlic - 2-3 cloves
  • Carrots - 1 pc.
  • Processed cheese - 60-80 g
  • Sweet paprika - 1 tablespoon
  • Fresh herbs (dill, parsley, cilantro) - 1 bunch
  • Bay leaf - 1-2 pcs.
  • Vegetable oil - 60 g
  • Salt and black pepper to taste
  • Water - 3.5 l

Cooking Creamy Meatball Soup:

  1. We pass one onion through a meat grinder, mix with minced meat, salt and pepper, mix well and intensively. The minced meat should be smooth and slightly sticky.
  2. From the finished minced meat we form a bun, and then "pinch off" pieces the size of a quail egg from it, roll these pieces into balls, put them on a damp cutting board, cover with foil. We leave the meatballs for a while.
  3. Peel and chop the potatoes into "convenient" pieces.
  4. Peel and finely chop the onion and garlic.
  5. Peel the carrots and pass through a coarse grater.
  6. Remove the skin from the tomato and cut it into small pieces.
  7. Heat the pan and fry the carrots, onions and garlic in vegetable oil. As soon as the onion is browned, add the tomato, paprika, black pepper, a little (purely symbolic) salt. Simmer for 2-3 minutes.
  8. Bring the water to a boil, add the meatballs to boiling water. Stir after the last meatball is in the water. We wait until the water boils and remove the heat to medium. Cook for about 8 minutes, periodically skimming off the foam.
  9. Add potatoes and fire. As soon as the soup boils, reduce the heat to medium and cook the potatoes until half cooked - about 10 minutes.
  10. Add the vegetable dressing to the pan, mix and cook for another 3-4 minutes.
  11. In small portions (a teaspoon each) add cream cheese to the soup, stir until each portion of cheese is completely dissolved. Cook for another 2-3 minutes.
  12. Add bay leaf and chopped herbs to the soup, salt and pepper, cover and simmer over low heat for 5 minutes.
  13. We remove the soup from the heat and let it brew for 15-30 minutes.

For vegetable soup with meatballs you will need:

Chicken breast for minced meat (250-300 gr)
- 1 large onion
- 1 egg
- 1 small broccoli (can be substituted with cauliflower)
- dill greens
- 2-3 potatoes
- 1 carrot
- 200 ml cream
- salt, spices to taste
- butter for sautéing

Grate the carrots with strips. Finely chop half of the onion. Melt some butter in a saucepan. First, fry the onion for a couple of minutes, then add the carrots. Saute on low heat for 5-7 minutes.

Cut the potatoes into small cubes. Disassemble the broccoli into inflorescences.

For the meatballs:
- mince the chicken breast and the remaining onion
- add an egg
- salt and season with spices
- add finely chopped dill
- Stir the minced meat thoroughly until smooth.

Form small balls (the size of a walnut) from the minced meat.

Pour water into a saucepan with sautéing and bring to a boil. Season with salt, add bay leaves, peas and dip the chopped potatoes. Boil until half cooked (about 10 minutes)

Add the broccoli to the soup last, along with the meatballs.

Since minced chicken has a very soft texture, it is more convenient to pick it up with a wet spoon, shaping it into a ball, and immediately dip it into the soup - in boiling water, the balls immediately grab.

To prevent the chicken meatballs from getting tough, it is important not to overcook them. After they come up, it is enough to boil for 5-6 minutes at a quiet boil.

When the soup is almost ready, pour the cream in a thin stream. Bring to a boil again and turn off the heat immediately. Sprinkle the prepared soup with herbs and let it brew a little.
