Kurnik (the recipe with the photo is attached, as always) is one of the most curious dishes of Russian national cuisine. If you have not prepared it yet, then you should definitely do it. Although it will take time and effort to make a chicken, the pie will become a favorite. Can't help but become. After all, he is a “father pie”.

In the old days, chicken was served only on the festive table, and to the tsar's table too. He was sure to be at the wedding feast, and they baked it in two houses: they made it “with figures” for the groom, and decorated with “flowers” for the bride.

What is kurnik? About the ingredients of the chicken recipe

Kurnik is a multi-layer cake. Initially, the layers were not separated and only dough was used. Cereals, millet, buckwheat were used as the filling.

Now it is a complex structure, in which, in addition to the dough, pancakes are also involved, separating the layers. And the filling can be very different. Of cereals, mainly rice, necessarily boiled chicken meat (hence the name), in addition, mushrooms and any vegetables, including potatoes.
What to expect if you decide to cook kurnik (short course for a young fighter)

Cooking several types of fillings (there are three of them in the recipe: from rice and eggs, mushroom and chicken);
- preparation of yeast dough;
- cooking pancakes;
- pie assembly;
- baking;
- expectation.

However, don't be alarmed. Some stages can be completed in advance. For example, make toppings and bake pancakes. Then collecting and baking the chicken will be a fairly quick affair, and the pleasure of achieving the goal is so jubilant that it can only be compared with the pleasure of the taste of the chicken. And it is, without exaggeration, all-embracing - believe me! No one is left indifferent!

How to cook kurnik - recipe step by step

A kurnik recipe is a whole series of actions, so detailed instructions will be required.

Cooking chicken filling

In fact, there is not one filling, there are three of them. Consider making three pies at once - this is exactly what a puff chicken pancake on yeast dough is like (although the other chicken is the same).

Kurnik is a complete improvisation. You can easily make any yeast dough (in my recipe for kurnik it is unopened) and even use a purchased one, and even a puff one. Puff pastry chicken, by the way, is great! And on sand - crunchy, brittle - just fabulous.

Pancakes also cook those that you know and are able to. Moreover, they can be baked from any flour, for example, with the addition of buckwheat. The taste of the finished cake, of course, will be different.

The filling for the layers is your personal improvisation again. And their number, by the way, too. If there are 3 types of fillings, then you can make 3 layers, or you can make all 6 (laying out half of the finished filling in one layer). One of the most famous options is chicken and potato chicken.

And a little of the history of the pie

Kurnik is chicken pie by definition. Everything else is optional. But.

Don't be surprised if you come across chicken chicken with meat (ground beef, for example), fish, eggs and even chicken chicken with berries! The thing is that, as they say, "what are they rich in." And if in the Stavropol Territory you will be treated to a chicken coop with chicken, then in Karelia, the country of lakes, one of the layers will be fish. And in the North, Russians are served kurnik with cranberries.

So that's it. Be sure to try everything. But start with ours.
