Ghee, thanks to the light caramelization of the protein sediment, has a faint hint of nutty flavor and aroma, emphasizing and thereby intensifying the accent of walnuts, which in turn contrast very well with the soft, viscous consistency of ready-made brownie dough, due to the addition of an additional egg to the dough. Here is such an interesting, I would even say, a stunning tandem turns out! And if you are as inveterate an experienced chokaholic as I am, then you must definitely try it!

We need:

  • butter - 200 g
  • sugar - 300 g
  • cocoa - 95 g
  • water - 1 tablespoon
  • salt - 1/2 tsp
  • vanilla extract - 1.5 tsp
  • egg - 3 large or 4 small
  • flour - 85 g
  • walnuts (peeled) - 200 g
  • vegetable oil for lubricating the mold

How to make ghee:

Cut 200 g of butter into small pieces and put in a small thick-bottomed saucepan.


Melt the butter over medium heat and continue heating it with constant stirring (about 6-7 minutes) over low heat - first, a white foam will appear on the surface of the butter, and upon further heating, the butter stops foaming and a white precipitate forms at the bottom of the pan. The oil becomes transparent, acquires a golden-amber color and a creamy aroma with a nutty note.


Remove the pan from the heat as soon as the sediment at the bottom begins to darken and turn brown.

Immediately add 300 g of sugar, 95 g of cocoa, 1 tbsp to the ghee. water, 1/2 tsp. salt, stir until smooth and set aside for 5-6 minutes.
