Option 1: Classic Whole Grain Oatmeal with Butter

A variation on a simple oatmeal porridge. It does not need to be pre-soaked. Dish on the water with oil. If desired, you can make a sweet version, the amount of liquid will not change, you just have to add sugar. Cooking takes a long time, it is advisable to take a good pan with a thick bottom.

Ingredients

  • 100 g whole oatmeal;
  • 500 ml of water;
  • 25 g of oil;
  • 0.3 tsp salt.

Step by Step Recipe for Classic Whole Grain Oatmeal

Sort the grain, rinse, put in a pan for cooking porridge. Add water, put on the stove to heat up.

When boiling, foam will appear on the surface, and small specks may float. Remove with a spoon. After that, reduce the fire, cover the pan. Cook oatmeal for about 50 minutes. Periodically, you need to lift the lid and remove the jelly foam that will float up. It is viscous, can spoil the finished dish.

Ten minutes before the end of cooking oatmeal, you need to add salt. In the sweet version, pour granulated sugar. Water by this moment should already be almost completely absorbed into the grain, the mass will increase by about three times.

Put the butter into the finished porridge, stir quickly, cover, let the oatmeal brew a little. If desired, add pepper, herbs, any spices. For a sweet option, granulated sugar is enough.

This dish can be seasoned with honey, add nuts and dried fruits to it, pour in a little condensed milk or jam. Whole oatmeal porridge can be used in dietary nutrition, as it contains a large amount of dietary fiber. If necessary, you can replace butter with vegetable oil or completely exclude fats.

Option 2: Quick Whole Grain Oatmeal Recipe

To cook whole oats quickly, the grain must be pre-soaked. It is best to leave it in cool water overnight. It is undesirable to use warm or hot liquid. Also, do not add a lot of water, as valuable substances will come out into it.

Ingredients

  • water;
  • salt;

When boiling, remove the gray foam with a spoon. Cover the saucepan. Remove the fire, cook the porridge until the grain is completely soft. The exact time will depend on how swollen it is.

At the end, add butter or vegetable oil to the cooked porridge, stir.

This whole oatmeal dish can also be cooked in a slow cooker. Groats are prepared in the same way, laid, water is immediately added, which will slightly cover it. You can use the program of pilaf, buckwheat or just cereals, it all depends on the multicooker model used.

  • 300 g of champignons;
  • 35 ml of oil;
  • 2 onions;

Send the oil to the pan. Turn on the stove. You can take a saucepan or a cauldron. Chop the onion heads, add to the oil, fry until transparent for about five minutes.

Wash mushrooms. They can be cut into arbitrary pieces, such as cubes or slices. But you do not need to make large pieces, small slices are better. Add the mushrooms to the onion, fry together over moderate heat until tender, salt and pepper.

Combine cooked porridge with mushrooms fried with onions. Mix everything well, cover and heat for a few minutes. The tastes of the products should connect.

This dish can be cooked in the oven in pots, but only after pre-boiling the grain until half cooked. If the mushrooms are dried, then before frying, they must be soaked in cold water and boiled for at least 15 minutes.

  • 1 onion;
  • laurel;
  • 3 peppercorns;
  • salt;
  • 2 tbsp. l. oils;
  • 1 carrot (optional)

Soak the oatmeal, let stand a little in cold water while the meat cooks.

Rinse a piece of meat, pour a liter of water, add a bay leaf, crush the pepper and pour it into the broth. Boil until done. Remove the meat from the broth, let it cool.

Drain the water from the grain, pour it into the meat broth, cook until soft.

While the porridge is cooking, cut the meat into cubes. Also chop the onion. You can also use carrots if you like. Cut it into the same cubes or grate.

Warm up the oil. First, put the vegetables in it, fry until almost cooked, then add the chopped pieces of meat, heat together for another five minutes. Season with spices.

Porridge also add salt, add prepared meat with vegetables, stir. Cover the pan, turn off the stove, leave for half an hour.

Why are oat grains so useful?

Oats are a gluten-free whole grain and an excellent source of vitamins, minerals, fibers and antioxidants important for health. Studies show that porridge made from this cereal has many beneficial properties. These include losing excess weight, lowering blood sugar levels, and reducing the risk of heart disease. The benefit of porridge from oats also lies in the fact that it is incredibly nutritious, and its chemical composition is well balanced. These grains are a good source of carbohydrates and fiber, including the powerful beta-glucan. They also contain more protein and fat than most other grains.

Oat grains include a lot of soluble and insoluble fiber, so you get a double benefit. Insoluble fiber travels along the digestive tract, taking water from the intestines, adding weight to the waste material and making it easier to pass through the digestive system. Soluble fiber turns into a gel-like consistency that slows down digestion and makes you feel full for a long time.

One of the main soluble fibers found in oats is beta-glucan, which slows down the absorption of food, making it take longer for the body to digest it. This means that you get a feeling of satiety for a long time. One serving of oatmeal contains about 5 grams of fiber. Adults should get 25-38 grams of fiber daily, so eating this porridge every morning is a good health boost.

Reduces cholesterol levels

Not only do oat grains have a crucial impact on the health of the digestive system, but they are also directly linked to the maintenance of heart health. So, beta-glucans are indigestible, so they have to pass through the entire gastrointestinal tract. Thanks to this, they capture and remove molecules of harmful cholesterol from the body.

Great for preventing and treating diabetes

Since oatmeal is a good source of fiber, it can slow down the digestion of sugar. Beta-glucans ensure that glucose is not absorbed too quickly by the body. This lowers blood sugar and keeps it stable. According to some studies, the fibers found in oats help improve glucose metabolism.

Helps in losing excess weight

One serving of oatmeal has less than 150 calories and only 2 grams of fat (regardless of which oatmeal recipe you use). This is surprising, but this calorie content is only beneficial. Because oats are so high in fiber, they really help keep you feeling full for longer. When you feel full, you will not have a constant desire to snack. Therefore, you will not overeat. If you're trying to lose weight and limit your calories a bit, oatmeal is the perfect snack to help you get past your diet time.

In addition, one serving of oatmeal contains about 5 grams of protein, which is a lot. If you're on a diet, it's best to use low-calorie oatmeal as an alternative to other protein options.

For example, make the oatmeal porridge from the recipes above and top it with some cheese, red beans, salsa, and a poached egg. This healthy breakfast contains over 10 grams of protein. Nuts will also add extra protein to your oatmeal.

Prevents cancer

Oat grains contain enterolactone, a compound with phytochemical properties that acts as an antioxidant and helps prevent and fight cancer. Antioxidants neutralize free radicals caused by our environment that damage cell DNA and can lead to cancer. There have been several studies linking the high fiber content of oats and colon health with a reduced risk of colon cancer.

Whole oat porridge is a slow digesting carbohydrate and protein-rich source of energy for your body. Oatmeal is full of healthy carbohydrates that make your body feel great.

Sugar is released more slowly from oatmeal than from other foods (such as processed sugary cereals), so your energy level stays the same. According to one study, eating a low-glycemic cereal like oatmeal three hours before a run builds a person's endurance. Eating oats at night can be a great source of nutrition until the morning.

Is oatmeal gluten free?

Oats are gluten-free on their own, but sometimes they are processed using equipment that has previously held other gluten-containing products. If you have celiac disease, or want to avoid gluten for another reason, look for certified cereals that do not contain this compound.

How to make porridge tastier?

Any recipe for oatmeal porridge can be subject to additions, since not everyone likes the taste of grain without additives. One of the simplest and most affordable fillers is jam. But sometimes this is not enough, especially if whole milk was not used in the preparation of porridge. From time to time, you can eat oatmeal in its pure form, but with daily use it can become boring. Whatever it was, you can diversify this dish indefinitely.

One such trick is to add a banana to the boiling grits. So it slowly melts and turns the grain into a pudding-like porridge. Natural sweetness is a bonus here. Adding a banana does not require the use of additional sugar. Plus, a medium banana gives you 3 grams of extra fiber. This fruit also contains 422 mg of potassium, a mineral and electrolyte that many of us don't get enough of.

As noted above, adding a protein product to a serving of porridge doubles its benefits. You can use any of these products, but almond butter or a tablespoon of tahini per serving of oatmeal are optimal additions. Shredded coconut pulp can also be a good filler.

Among all healthy breakfasts, oatmeal undoubtedly occupies the first position. Whether you're active or not, how you start your morning determines your entire day.

Oatmeal is an excellent source of energy in the morning: it is low in fat, high in protein and fiber. So, what is the benefit and harm of oatmeal in the morning, is it good to eat oatmeal every day?

Each of us has heard about the cleansing of the body, "fasting days." Surely, most of us practiced them on ourselves: someone does it systematically, someone tried it a couple of times, and some still recall with horror their single attempts. One way or another, fasting days cause stress in our body, which is also not favorable. But is it really necessary to abandon all attempts to remove toxins and toxins? Of course not. And today I would really like to tell you about how to cleanse your internal organs, tone yourself, improve your well-being in a gradual, but dozens of times more effective way than a “cucumber”, “kefir” or “watermelon” day. So. I would like to tell you about oats.

Oats are native to China and Mongolia. It appeared more than 4000 years ago, mentions of it are present in the medical treatises of India and Greece (even in the treatises of Hippocrates), and the grains were found in ancient burials.
Why our story about him? Let's start in order.

It is no secret that in order to bring the body into tone, you need to take a step towards proper nutrition. Eating right, consuming a large amount of nutrients, we feel an improvement in mood, increased efficiency, lightness in the body.

Cellulose
Modern man is sorely lacking fiber in the body. Fiber is the indigestible part of plants. The secret of its action is that it reduces the time that food spends in the digestive tract. And the longer the food is digested, the more it decomposes, and the processes of decay and fermentation begin, which are fraught with the deposition of fats. Cellulose is of two types. Insoluble fiber accelerates intestinal motility (and as a result, fewer fats and carbohydrates have time to be absorbed into the blood), helps to remove toxins from the body. It restores the intestinal microflora, and when it swells in water, it accelerates the cleansing of the stomach like a sponge. Soluble fiber (beta-D-glucan) - the most useful component of oats - was discovered relatively recently. This is a unique sorbent that binds and removes many harmful substances from the body, mainly cholesterol. Beta-D-glucan controls fat metabolism, contributing to the normalization of body weight, and has a tonic effect. It can not only bind and remove poisons, but also slow down the absorption of sugar, reduce the secretion of gastric juice, and can also reduce the risk of developing heart disease. A small bowl of oatmeal contains a quarter of the daily requirement of soluble fiber.

Starch and carbohydrates
Oat grains contain up to 50% starch. Oat starch is digested and absorbed slowly. A portion of oatmeal is useful for those who want to lose weight or are afraid to gain weight. Oatmeal will give you a long-lasting feeling of satiety even from a small portion (thanks to beta-D-glucan). Oat fiber carbohydrates do not decompose in the upper part of the digestive tract, so it does not provide extra calories. As a result, extra pounds disappear in the most natural and effective way.

Protein
The amino acid composition of oat protein is very close to the composition of human muscle protein, which makes it a valuable product. Oat protein, which makes up 10% of the mass of dry grains, is able to dissolve in water, which ensures its high digestibility. In short, oat protein has two of the most valuable dietary qualities - a good amino acid composition plus solubility. That is why oats have always been recommended to debilitated patients who could not digest heavy food.

Antioxidants and vegetable fat
Oats are an excellent antioxidant, in addition, they contain about 5% vegetable fat, which can prevent atherosclerosis, reduce the risk of heart disease, increase the body's resistance to various infections and environmental influences (radionuclides, salts of heavy metals, stress). In other words, slow down the aging of the body. It is not for nothing that oatmeal has become a favorite dish of the British, and what they don’t eat is happily smeared on their faces.

Phosphorus, calcium, magnesium
Phosphorus is essential for the normal structure of bones and teeth. It promotes growth and recovery of the body, provides energy and strength by helping the metabolism of fats and starches, reduces the pain of arthritis, and helps keep gums and teeth healthy. Calcium and phosphorus together support healthy bones and teeth. Calcium and magnesium promote cardiovascular health. Calcium is involved in the processes of nervous tissue excitability, muscle contractility, blood clotting processes, is part of the nucleus and membranes of cells, cell and tissue fluids, has anti-allergic and anti-inflammatory effects, prevents acidosis, activates a number of enzymes and hormones. Calcium also acts opposite to sodium (salt).

Iron
Oats are very rich in iron! 100g of oats contains 5.5 mg of iron. Iron is necessary for life, for the formation of hemoglobin, myoglobin and some enzymes. The two main nutritional deficiencies in women are iron and calcium deficiencies. Iron is excreted in the urine (about 0.5 mg per day), as well as sweat glands (sweat contains 1-2 mg of iron). The use of oats is an excellent prevention of anemia.

potassium and sodium

Potassium together with sodium regulates the water balance in the body and normalizes the rhythm of the heart. Potassium is involved in the process of conducting and transmitting nerve impulses to organs. Promotes better brain activity, improving its oxygen supply. It has a positive effect in many allergic conditions. Potassium is essential for skeletal muscle contractions.

Potassium deficiency can cause constipation, salt and fluid retention, growth retardation, low blood pressure, fatigue, insomnia, muscle weakness and cramps, thirst, depression, nervousness, blurred thinking, sugar intolerance, high cholesterol, palpitations. 100g of oats contains approximately 10-20% of the daily requirement of potassium and only 1% of sodium (the use of which, by the way, is recommended to be reduced everywhere). Increased intake of sodium (salt) causes the accumulation of fluid in the body, edema, increases blood pressure.

Zinc
100g of oats contains 3.6 mg of zinc, which is 25% of the daily value. Zinc is essential for bone formation and helps heal hard-to-heal wounds in diabetics or people with poor circulation. Zinc speeds up wound healing. Zinc has an antiviral and antitoxic effect. Acne vulgaris can be treated with zinc. It has been established that the appearance of white spots on the nails in most cases occurs due to zinc deficiency. Zinc helps eliminate loss of taste, helps in the treatment of infertility, promotes growth and mental activity, and helps reduce cholesterol deposits.

You can list for a very long time, but I think I've tired you anyway. Therefore, I will finish the list of useful substances briefly:
Vitamin E (antioxidant, stimulates muscle activity and gonadal function, prevents the formation of free radicals)

For an elderly person, there is nothing better than starting your morning with a bowl of oatmeal! After all, it’s not for nothing that the word “oats” translated from Latin means "to be healthy"

It is curious that in England - the country with which this popular dish is traditionally associated - oats originally brought by the Romans as feed for horses, and only in XVI century, they began to cook from it so beloved all oatmeal.

In the middle of XIX century, the unique properties of oats began to be studied by the chief medical adviser of the British army, Frank Buckland. He conducted one of the first large-scale studies, involving recruits from various regions of the country, and proved that Scottish soldiers fed on oatmeal were much stronger and more enduring than the British.

However, in Rus', oats were well known. The diet of our distant ancestors has always included many dishes prepared on its basis. All kinds of kissels, pies, pancakes, casseroles and other delicacies were certainly served at the table every day. Oatmeal was an indispensable dish during wedding feasts, Christmas holidays or christenings. In monastic books XVII century, it is mentioned that oatmeal porridge was an integral part of ancient Russian cuisine. It is impossible to imagine the days of Orthodox fasts without oat dishes. It took extremely little time to prepare them, and the result exceeded all expectations - satisfying, tasty, and healthy.

About one hundred and fifty years ago, the Swiss physician Bircher-Benner chose oats as an ideal base. for the so-called "healthy food" he invented and became widespread, known as "muesli". Easily digestible and softening oatmeal with milk or yogurt, various additions of fruits and nuts, honey and dried fruits have become a classic breakfast dish all over the world, which is especially loved by supporters of a healthy diet.

Storehouse of nutrients

The grains of this unique cereal contain up to 55% starch, 24% fiber, 11% fat and 20% protein with a high content of essential amino acids ( tryptophan and lysine).The amino acid composition of oatmeal is the closest to muscle protein, which makes it a particularly valuable dietary product, because protein is necessary for the body to grow and repair tissues. There are also saponins, carotenoids, vitamins, various sugars, essential oils, and minerals in oats. It contains much more than other cereals, iron (4.2 mg per 100 g), a lot of sulfur, silicon, phosphorus, potassium, magnesium, chromium, manganese, zinc, fluorine, iodine.

Vitamins and minerals of this cereal are involved in important metabolic processes in the body and reduce the risk of numerous diseases. For example, due to the presence of vitamins of the group IN, the inclusion of oatmeal in the diet restores the rhythm of cardiac activity in the elderly, and the silicon contained in oats prevents hair loss.

Starch provides the body with "slow energy", which helps to avoid a sharp increase in blood sugar, which is especially useful for diabetes. Soluble fiber, when consumed regularly, lowers blood cholesterol levels, protecting the entire cardiovascular system.

Biologically active substances in oats improve the functioning of the liver and pancreas. Not so long ago, an enzyme was found in oat grains that acts like amylase (pancreatic enzyme), it helps to quickly and efficiently digest carbohydrates. The specific substances present in the cereal - polyphenols - contribute to the proper metabolism of fats.

And thyreostatins have a positive effect on the activity of the thyroid gland.

Oatmeal is an excellent remedy for chronic inflammatory processes. It is no coincidence that oatmeal is widely used for acute inflammation of the gastrointestinal tract. For people who have had serious illnesses, as well as for asthenia and anemia, various dishes are prepared from oatmeal as a general tonic. By the way, the green grass of oats is not inferior to grains in terms of medicinal properties. Its infusion has diaphoretic, diuretic and antipyretic effects.

Hercules giving strength

The "younger brother" of oats, or rather its derivative, is the well-known hercules. Unlike many popular cereals, it is made from whole grains of oats by flattening.The basis of hercules is oat seeds, devoid of a hard indigestible shell. Hercules is especially useful for the elderly, as it is well absorbed by the weakened gastrointestinal tract.

However, flake manufacturers still fail to completely get rid of the remnants of this shell. But this has its own plus. Passing through the intestines, they literally “scrape” its walls to a shine. Even modern medicine cannot offer a more effective and, importantly, inexpensive means of cleansing the intestines.

In recent years, scientists have proven that oatmeal is an important source of antioxidants. preventing the formation of malignant tumors. In addition, antioxidants actively slow down the aging process of the body.

Thanks to the gluten content (or gluten), moderate consumption of finely chopped oatmeal is useful for stomach ulcers. Gluten envelops the inflamed areas, weakening all painful sensations and promoting the healing of ulcerative lesions. Moreover, in this case, not only oatmeal porridge is useful, but also raw oatmeal in the form of muesli, but they still need to be used with great care, since solid particles for an inflamed stomach can be difficult to digest.

We are treated with oats

Hippocrates wrote about oats as an excellent remedy for general exhaustion and weakness of the body and advised drinking an infusion or decoction of oats without any tricky recipes - like tea. It's useful for almost everyone. to strengthen the nervous system, heart, lungs, improve blood composition and metabolism . The infusion is prepared as follows: unpeeled oats are ground in a coffee grinder, poured into a thermos and poured with boiling water at the rate of 1 tbsp. spoon to a glass of boiling water. Infuse for 12 hours, then strain and drink.

For normal liver function you can make this decoction: c I began to lower a silver object into 1.5 liters of water, bring the water to a boil and remove this object. Then pour 150 g of oats in the husk into the water, simmer over low heat for 15 minutes, leave for 2 hours, wrap in a warm blanket, strain. Within 10-15 days, drink a decoction 3 times a day, 0.5 liters 30 minutes before meals. During this period, eat light food, exclude fatty, fried foods and solid foods.

Oatmeal porridge stewed in a pot

Whole oats - 250 g; water - 1 l; With olive oil - 80 g; With ol, sugar to taste.

The traditional preparation of porridge is to simmer it in a pot in a hot oven. Such porridge turns out to be much tastier and healthier and more crumbly than the one that was cooked in a saucepan on a gas stove.

Sort out whole grain oats, rinse with water, put in a saucepan, pour boiling water and cover with a lid. Leave for about 8 hours at room temperature. Then transfer the oats along with water into a clay pot and place in an oven preheated to 100 degrees. Keep for about 2 hours.

Remove from oven, add salt, sugar and mix thoroughly, add butter. For dietary purposes, you can season porridge with yogurt.

I like whole grain oatmeal more than Hercules, and even more so flakes that do not need to be boiled at all. Probably, also from the fact that I read a lot about the benefits of whole oats. And the passion for grain oats began with the fact that a very long time ago at one of the Tashkent bazaars, in the ranks of cereals, I saw a seller with a bag of oats. "Why is he?" I asked. In broken Russian, the seller began to explain that they were being treated, and he had many regular customers taking him. And what if I buy this oats, wash them, fill them with water in a glass, and drink the next day, then I will become zhuda yam chiroili (very beautiful) and skin - zur, hair - zur. (Zur is a type of excellence - slang) And leaning towards me, he whispered so that my husband would not hear: “There will be no female sore. 70 years will be - you can give birth! Wow! - I thought, - this is how many children you can give birth to on one oat. Finally, the seller said that the soaked grains should not be thrown away, boiled or added to the cake. There were no diabetic patients among my acquaintances, which is why I probably did not come across grain oats before. I will not write for oat miracles for health. written without me. Type in the search "oats medicinal properties" and read out.

Well, after that meeting, I began to read a lot about oats. Well, the Makropulos remedy, I concluded. Use and live forever.

Now we are talking about a delicious viscous gelatinous porridge made from infused oat grains, boiled in the same water in which they were infused. One thing in such a mess is bad - completely discourages appetite. And this is sad. And I don't want anything but her. So, it performs some processes in the body. Therefore, if there are any chronic sores, first read about the properties of oats. Although serious contraindications to oats have not yet been identified, there are people with individual intolerance.

We sort out the oats, clean them from foreign grains. Rinse well with running water. For soaking, I use a liter jar. I pour a quarter of the jar and add boiling water to three quarters of the height of the jar. Thus, the ratio of oats and water is approximately 1: 3. I leave it to infuse overnight.

I pour the oats along with water into a thick-walled saucepan, put it on the stove and wait for it to boil. As soon as it starts to boil, reduce the heat to a minimum. Do not bring to a boil. A thick infusion will foam and “run away” worse than milk. From that, the pan should not be closed with a lid. In general, it is best, of course, it is better to simmer such porridge without boiling in the oven.

So, without boiling, the porridge is evaporated for 40-50 minutes. You need to periodically approach and stir it (to the porridge), removing the accumulated jelly from the walls. This infusion turns into a thick jelly, the grains boil soft. This jelly, by the way, is very good for using a face mask. You can add honey. Remarkable effect.

Salt almost ready-made porridge. You can add raisins, chopped dried apricots or prunes. Slightly steam dried fruits in porridge. Turn off the stove. We close the saucepan with a lid and leave to cool to a temperature at which porridge can be eaten without burning. It's on an electric stove. If the stove is gas, then wrap the saucepan with a towel and let the porridge cool slowly.
Sugar and butter should not be added to such porridge. She's amazingly good as it is. Moreover, it turns out to be jelly-like, and there is no need to soften it.

Another time I’ll write about oatmeal in a cast-iron, or about cakes. I also think a lot about haggis.

Warning the questions of Tashkent friends, I will say that our local Asianfood began to produce whole grain oats in yellow-blue packs, and it is sold in many stores - you just need to pay attention.
