My daughters are very fond of carrot cookies, the recipe for which I will post later. I have never made cookies from beets before. Valentine's Day, February 14, is coming soon, and these heart-shaped cookies are also pink in natural color, I mean without dyes, it will come in handy. I'm posting the recipe in a category.

I've already baked it twice. It turned out very tasty, the beets are not naturally felt, the daughters ate with great pleasure. The second time I remembered and added vanillin, I think you can still add lemon zest. But so delicious, I will bake again and again.

The texture is not crispy, but quite soft. It made 2 baking sheets of cookies. When I baked for the first time, as stated in the recipe, I grated the beets on a grater, the dough was a beautiful pink color, but when the cookies were baked, it changed color, it became almost the usual brown color, slightly with a pink tint.

Then for the second time I decided to grind the beets with a blender, for uniformity and indeed the cookies remained pink after baking. Now you can cook these beetroot cookies for Valentine's Day. It will be not only beautiful, but also useful. I wrote about the benefits of beets in the recipe

You can offer it to children from two years old, not earlier, because there is quite a lot of butter. If you want earlier, from 1.5 years old, then replace half of the butter with sour cream. In order not to have to add more flour, put the dough in the refrigerator for one hour and only then roll it out on a table sown with flour.

You will need to make beetroot cookies:

2. 200 g butter; (if from 1.5 years old 100 g of butter and 100 g of sour cream);

3. 2 small boiled beets;

4. 4 tbsp. l. Sahara;

5. 3 - 3.5 st. flour;

6. 1/3 tsp. soda

7. a little lemon juice (to extinguish soda)

Cookies with beetroot recipe

1. Melt the butter and set to cool. Whisk eggs with sugar.

2. Add melted chilled butter to the eggs, mix.

3. Peel and grind the beets with a blender.

4. In the egg-oil mixture, add beets, and soda slaked with lemon juice. Let's mix everything.

5. Add flour and knead the dough.

6. Roll out the dough into a layer. Cut out cookies with a cookie cutter.

7. Fold the cookies with beets on a baking sheet at a short distance from each other. You can not grease the baking sheet with oil, the cookies do not stick to it. I cooked on a silicone mat and without it.

8. Bake cookies at 180 degrees for 15 - 20 minutes.

The ratio of vegetables in this salad will be something like this: for 1 large beet you will need 2 eggplants, 2 sweet green peppers, 1 onion and 2-3 cloves of garlic.

Grate the peeled raw beets on a coarse grater and simmer for a few minutes in a pan with vegetable oil. When it has steamed a little, add the pepper, cut into small pieces, and simmer for another 5 minutes. Peel the prepared eggplants, finely chop and mix with beets and peppers. In the resulting mixture, add finely chopped onion and garlic, a tablespoon of vinegar, salt and pepper - to taste.

Choose vegetables in the proportion you are used to when cooking meat soup.

Peel 200 grams of champignons, cut into small pieces and dip in boiling water. After 15 minutes, add a few sliced ​​potatoes to the broth. Throw chopped carrots and onions there, after frying them in vegetable oil. And after 10 minutes, put the beets in the broth. As soon as the soup begins to boil again, add chopped cabbage, salt, spices to the borscht and cook for another 5 minutes.

Stuffed beets

Put the beets to boil and in the meantime prepare the minced meat. Mix chopped stewed beef or lamb with boiled rice and lightly fried onions. Salt and pepper the mince.

In the boiled and peeled beets, cut out the middle and lay the minced meat there. Place the stuffed beets in a pan with fat or vegetable oil, top with the broth left after stewing the meat. Simmer everything on low heat for half an hour. Serving to the table, pour sour cream.

Knead the dough from boiled beets. For 2 beets you will need 300 grams of sour cream, half a teaspoon of vanillin, 3 tablespoons of sugar, a third of a teaspoon of cinnamon, a half teaspoon of soda and 100 grams of flour. Grate the beetroot and mix it with the rest of the products until a homogeneous dough is obtained. Put it in the refrigerator for an hour.

On a baking sheet greased with butter, put dessert spoons of the dough so that equal portions are obtained. And bake in the oven.

  • premium wheat flour 150 g + for sprinkling,

  • thin oat flakes 100 g,
  • eggs 2 pcs,

  • butter 100 g,
  • ground ginger 2 teaspoons,
  • ground cinnamon 1 teaspoon,
  • ground cloves 1/3 teaspoon,
  • ground cardamom 1 teaspoon,
  • baking powder 1 teaspoon,
  • powdered sugar for sprinkling.

If whole wheat flour is not available, you can replace it with the same amount of oatmeal or plain flour.

Boil the beets, cool and grate on a fine grater or chop in a blender. You can use canned Bonduelle beets , without liquid.

Mix flour, oatmeal, ginger, cinnamon, cloves, baking powder, cardamom.

Beat slightly softened butter with sugar.


Add eggs and beat again.


Then add chopped beets and combine everything with bulk components.


Knead the dough. It will be soft and sticky. Remove the dough in the refrigerator for 1 - 1.5 hours.



The dough will firm up a bit, but still sticky and soft. Therefore, divide it into about four parts and work with it in turn, put the rest in the cold. Roll out one part as thin as possible, using flour for sprinkling, and use small molds to make figures.


Bake at 180 degrees for 8-10 minutes. Sprinkle the finished cookies with powdered sugar.

At school, we collected acorns for various crafts. I also heard that wild boars are very fond of them, and from my grandmother's stories I knew that during the war, thanks to acorns, the villagers were saved from hunger. But I never thought that you can cook something delicious with them. Once, out of interest, she tried to bite off a nut hidden under the shell and immediately spat it out - it was so bitter.

Last year we went with friends to the forest for mushrooms. The wife of one of them gathered a basket full of acorns instead of mushrooms. We thought for medicinal purposes or crafts. But it turned out that she cooks different dishes with them - from a "coffee" drink to porridge and pastries. When asked how one can eat such bitterness, she replied: “This is the secret - you need to properly prepare acorns for eating, and then they will not only be tasty, but also very healthy!”

There are really a lot of benefits in acorns. They are rich in easily digestible carbohydrates, quickly replenish energy losses. Acorns normalize blood sugar levels. Thanks to tannins, they soothe the stomach and intestines and help with gastritis and colitis. They are very high in quercetin, a useful compound for strengthening the immune system and cardiac activity. But in large quantities, it is toxic, so you need to get rid of most of it. At the same time, bitterness will also go away.

Peel fresh acorns, cut into quarters. Pour clean water and soak for 2 days, changing the water three times. On the third day, rinse, add water again and bring to a boil. Drain the water through a colander, and grind the acorns into a mass, which is laid out on a baking sheet and dried in a slightly heated oven. It turns out acorn flour.

You can cook a lot of delicious things with it. I add it to cereals, it gives them a nutty flavor. If you fry it a little and pour boiling water over it, you get a delicious drink that tastes like coffee, but does not increase pressure. I also make tea cookies with this flour.

It needs 2 cups of wheat and 1 cup of acorn flour, 1 cup of sugar, 0.5 packs of butter, 1 tsp. soda and 1 tsp salt. Beat butter with sugar, mix flour with soda, then mix everything together. Shape the dough into balls similar in shape to nuts, put on a greased baking sheet. Bake in the oven for 10 minutes at 180°.

I decorate the top of the cookies with icing sugar and lemon zest. I highly recommend trying! In general, you can make any pastry with acorn flour. By the way, if you brew green coffee and drink it with acorn cookies, then all toxins are removed from the body. It is also good for weight loss.
