The appetizer is prepared very quickly - only 15 minutes, and the dish turns out to be unusual in appearance and delicate in taste. For cooking, you will need the following products:
- pasta in the form of large shells;

- any cheese, preferably with blue mold;

- walnuts.
You need to start by boiling the shells in very well-salted water, then put them in a colander and pour over cold water. Put the walnuts on the grill, cook for about 3 minutes. To make the appetizer look beautiful, you need to put it on lettuce leaves, and sprinkle more nuts on top. Serve immediately, otherwise the taste will dull a little.

Pike stuffed


If there is stuffed fish on the table, it’s definitely a holiday in the house. Since ancient times, this dish has taken pride of place, both in the festive and New Year's menus. To cook stuffed pike, the first step is to clean it and remove the skin. To do this, we make cuts in a circle near the head, without touching the giblets. So you, simply by pulling on the head, will pull out all the giblets without suffering and without spoiling the skin of the pike. Peel off the skin gently with your fingers. Near the fins, you can help yourself with a knife, only so as not to damage the integrity of the skin. Separate the flesh of the fish from the bones and make minced meat out of it. Add minced meat to it (preferably fatty), its volume should be approximately the belly of the stuffed fish. Finely chop 1 large onion and saute in sunflower oil until golden brown. Also take a large carrot, peel, grate on a medium grater and lightly fry. Mix the minced meat, onion, carrot, loaf and season everything with salt and pepper to taste. Stuff the pike as well as the head after removing the gills from there. Sew the head to the body of the stuffed pike. Lubricate the fish with sour cream for a beautiful and tasty crust, then bake the pike in the oven at 180 degrees for about 2 hours. Put the finished fish on a dish next to the greens and sprinkle with mayonnaise on top when it has completely cooled down.

Snacks using salted red fish are very popular now. They are tasty, salty and tender. To prepare our appetizer you will need:
- fillet of slightly salted salmon;
- fresh cucumber;
- cream cheese;
- thin pita bread;
- greenery.
You can either buy salmon or cook it yourself. Most importantly, it should turn out lightly salted. Cut it into slices. Depending on the thickness of the slice, you will get a different amount of snack: the thinner, the more.
The cucumber should be cut into thin and long strips. If the skin is hard, it must be removed. Greens can be added or not - a matter of taste, the type of greens can also be chosen independently.
Let's get straight to cooking. We spread the pita bread in full width, grease it with cheese, much attention should be paid to the edges. Then you need to put pieces of salmon and cucumber into it, and then we turn the pita bread so that nothing spills. It turned out a long tube, which we cut into pieces with a sharp knife (a blunt one will simply break the pita bread and flatten the contents).
Greens can also be put inside the pita bread before laying out the fish and cucumber.


Balls with crab sticks - resemble snowballs and are perfect as a New Year's snack. For cooking you will need: a glass of boiled rice, two boiled eggs, 150 - 200 grams of crab sticks, mayonnaise, tomatoes and lettuce. Mix rice and grated eggs, salt and season with mayonnaise. Roll this mass into balls of the same size. Grate the crab sticks and roll each ball in this shavings. Arrange lettuce leaves on a platter. Wash tomatoes and cut into circles. Shrimps are wonderfully combined with citrus fruits, and in our case there will even be several types of them. So, we will need:
- boiled-frozen shrimps;
- grapefruit;
- orange;
- tangerine;
- salad;
- cherry tomatoes;
- Bulgarian pepper;
- hard cheese (preferably Parmesan).
Salad in time takes more time to prepare than the cooking process itself. It will take about 1.5 hours in total.
Shrimp should be thawed by the time of cooking. We fry them in oil, sprinkled with our favorite spices. We do this for a short time - a few minutes.
Arrange lettuce leaves on a flat dish. Peel and divide citrus fruits into slices, remove the film. The pulp of an orange should be cut with a knife, and the juice remaining on the skin should be squeezed into a container. We will still need it.
Put the slices on the salad. After that, we cut the tomatoes into circles, and the pepper into small cubes, and put them on top of our citrus fruits. And on top of all this we lay out ready-made shrimp.
Mix orange juice with olive oil, salt, pepper and pour over the salad. And we can decorate and add flavor with the help of grated cheese. Serve immediately after preparation.

Potatoes in salads are quite common, and fish is often used. Try this delicious and memorable dish. It includes:
- fillet of cod or other white fish;
- garlic;
- potato;
- bulb;
- lettuce and other greens.
Fish fillet should be cut into pieces, put in a flat container. Three garlic on a fine grater, mixing with salt, pepper and lemon juice. Pour this sauce over the fish and leave in the refrigerator for 3 hours.
In the meantime, mix olive oil with mustard and a small amount of marinade, which was used for fish.
We cut the onion into half rings, tear the lettuce with our hands, and finely chop the other greens. Cut the potatoes into slices of medium thickness. All this must be mixed and pour mustard dressing. The real fish must be laid out on top of the resulting dish.

New Year's salad

We make a salad in the form of a New Year's wreath. To do this, place a glass or jar in the center on a flat dish, around which our wreath will be. We take 2 large pieces: beets, carrots, potatoes and eggs. Boil food until cooked. We also prepare 200 grams of smoked chicken, a handful of walnuts and mayonnaise. We proceed to the assembly of the salad, where we grease each layer with mayonnaise. We cut the chicken meat into cubes and place the first layer on the dish. Next, potatoes grated on a coarse grater, followed by chicken eggs and beets. Sprinkle nuts on top and decorate the salad as in the photo or as New Year's inspiration tells you.

New Year's salad "Candles"

This salad can be prepared not only for the new year, but also for other Christmas holidays. Its appearance, as it were, is conducive to comfort and warmth, which is symbolized by candles.

Boil 300 gm. chicken fillet and cut into cubes;

4 hard-boiled eggs and grated;

200 gm. Fry mushrooms with onions, salt and pepper;

250 gm. cut fresh cucumbers into strips;

200 gm. grate hard Dutch cheese on a medium grater.

For decoration, prepare: green dill, pomegranate seeds, boiled carrots and bell peppers.

Of course, we have a whole tradition of preparing this wonderful and easy-to-prepare salad. But everything comes with time. Olivier is no exception. If in your house this salad is no longer considered anything special, then you need to think about it. Maybe something newer? For example, salad with ham. Very tender and delicious salad is very easy to prepare. In addition, it is safe to say that ham in a salad is very tasty and inexpensive, since it is sometimes a pity to spend money on meat, but it can always be replaced with ham or sausage.
To make a salad with ham you will need:
- 200-300 grams of ham;
- 2 medium onions;
- pancakes that we will cook ourselves;
- greenery;
- mayonnaise.
For pancakes you need:
- 2 chicken eggs;
- 2 tablespoons starch (corn or potato);
- 2 tablespoons flour;
- spices or herbs;
- vegetable oil.
Let's start making pancakes. To do this, beat the eggs with salt with a whisk, then add starch and flour, add herbs and spices if desired. We leave the dough for 10-15 minutes, when the flour swells a little, fry the pancakes.

Cooking.

  1. Cut the green onion into pieces.
  2. Pass the garlic through a press.
  3. Grind the nuts with a meat grinder or grind them in a mortar. 1–2 tbsp. l. set aside for decoration, and add the rest to the minced meat.
  4. Following the nuts, send green onions, garlic, sugar, spices, starch, 3 tbsp. l. soy sauce and 1.5 tbsp. l. vegetable oil.
  5. Salt everything and knead well.
  6. In 50 ml of pure water, dilute 2 tbsp. l. soy sauce, pour in 0.5 tbsp. l. oils and all honey. Stir until smooth.
  7. Peel the carrots and, together with the celery, cut into large strips.
  8. Wet your hands with cold water. Take a little minced meat and knead it in the palm of your hand into an oblong cake.
  9. Put a few sticks of celery and carrots in the center of the tortilla and wrap them with minced meat so that you get an oblong cutlet with filling protruding from both sides. Do the same procedure with the remaining minced meat.
  10. Put the cutlets on a frying pan greased with vegetable oil and fry on all sides until golden brown.
  11. After 10-15 minutes, when the meat is baked, pour the soy-honey sauce into the pan, reduce the heat and simmer the dish for another 10-12 minutes.
  12. To serve, place the patties on a flat plate with chives or lettuce and sprinkle the nuts set aside for garnish on top.

In Korea, royal oyster mushrooms or daikon radish, cut into thin sticks, are added to celery and carrots.

New Year's meat ball

Do you want to surprise and please the Dog for real? Treat her to a spectacular pork meatball with cheese filling. You will need:
  • pork fillet - 300 g;
  • chicken fillet - 100 g;
  • carrots - 1 pc.;
  • champignons - 5–7 pcs.;
  • bulb - 1 pc.;
  • garlic - 3 cloves;
  • hard cheese - 80 g;
  • a bunch of cilantro and parsley;
  • Italian herbs;
  • pepper;
  • soy sauce - 2 t. l.;
  • mustard - 1 tsp;
  • vegetable oil - 2 tbsp. l.;
  • juice of 1 lemon.

Cooking

  1. Using a whisk, combine soy sauce with lemon juice, mustard and oil.
  2. Arm yourself with a hammer and beat the pork well, and cut the chicken into finger-thick ribbons.
  3. Sprinkle both types of meat with dry herbs. Pepper and fill with spicy dressing from the first paragraph.
  4. Let the meat brew, and in the meantime, peel and grate the carrots, chop the onion and pass half of the garlic you have through the press.
  5. Carefully separate the caps from the mushrooms and throw them in boiling water for 3-4 minutes, and finely chop the legs.
  6. Lightly fry vegetables (except mushroom caps) in oil until onions are golden brown.
  7. Use the press again to mash the garlic you have left and mix it with the finely grated cheese.
  8. Fill mushroom caps with odorous cheese mass.
  9. Line the bottom of a semi-circular bowl with foil, and overlap the pork so that its edges hang freely outward.
  10. Put half of the browned vegetables on the pork.
  11. Spread mushroom caps "with a surprise" on top.
