Wash the zucchini, peel and cut into circles or halves of circles, up to half a centimeter thick, you can thinner - 3-4 mm.

Pour a little vegetable oil into a baking dish (glass, ceramic or even disposable aluminum) and distribute it along the bottom, grease the sides a little.

We spread in the form of zucchini. You don't even need to salt them, since vegetables will be soaked in juice and spices when baked with chicken. By the way, instead of zucchini, you can put sliced ​​potatoes, bell peppers, pumpkin or even apples down. So far I've only tried the zucchini version. First of all, the fillets should be marinated. It is prepared, cut into cubes and placed in a deep bowl, where it is poured with lime juice mixed with grated ginger and chopped chili. The bowl is tightly closed and put in a cold place for 3-4 hours. For a slightly shorter period, wooden skewers are left in the water - they will absorb moisture and will not let you down when baking.

Vegetable oil is poured into the pan, put on fire. Put onion rings and garlic gruel in the oil, fry for 2-3 minutes over medium heat, after which slices of other vegetables are added to the pan: zucchini, bell pepper, zucchini. Frying is continued for another 5-7 minutes, adding curry paste, soy sauce and sugar in the process. All large layers remaining after frying are strung on skewers, alternating with pieces of pickled fillet.
