  • garlic;

  • allspice and black peppercorns;

For brine, the following components are required (per 1 liter of water):

  • 2 tbsp. l. salt;
  • 1 st. l. Sahara;
  • 1 tsp vinegar 70% per 1.5 liter jar.

Preparing vegetables

First you need to wash the vegetables, put in a bowl of water and soak for 8 hours. Then cut off the ends on both sides.

Peel the garlic, rinse the herbs thoroughly.

Coriander cucumbers do not require the addition of other aromatic spices, as cilantro will kill their flavor.

Pickled cucumbers with coriander

Cooking steps:

  1. At the bottom of each jar, put two cloves of garlic, bay leaf, 4 peppercorns, dill umbrella and coriander seeds (you can on the branches).
  2. Fill each jar tightly with cucumbers.
  3. Pour boiling water over cucumbers. Leave for 20 min. Drain the water.
  4. Prepare the brine, boil, pour into cucumbers, hold for another 20 minutes, pour the brine into a saucepan and boil.
  5. Pour the resulting brine into jars, add vinegar and immediately twist.

Spicy appetizer with garlic

The composition of a spicy snack with onions and garlic includes:

  • 4.5 kg of small cucumbers;
  • 250 g of vegetable oil;
  • 1 cup 6% vinegar;
  • 100 g of salt;
  • 250 g sugar;
  • a bag of black ground pepper;
  • 1 tsp ground coriander;
  • 1 onion cut into rings.

For a couple of hours, the main product is soaked in water, then the ends are cut off and cut into slices of arbitrary size. Add the rest of the ingredients, mix and leave for three hours. After that, they are transferred to clean prepared jars and sterilized for 10-15 minutes. (depending on the volume of cans). Then they are rolled up, cooled and transferred to a permanent storage place.

Method without sterilization

In order for cucumber blanks to be stored for a long time, without causing any concern, it is better not to use methods without sterilization. It is this process that will protect the blanks for a long time and help to avoid unpleasant incidents.

Crispy cucumbers with coriander without sterilization

The ingredients are the same as in the first recipe.

The cooking method is slightly different. Such cucumbers are prepared according to the same principle, but the difference is that sterilization is not needed, after the last filling with a solution, they must immediately be rolled up, turned over and wrapped in a blanket until completely cooled.

Storage rules

Storage rules - protecting jars of cucumbers from direct sunlight and providing them with a cool place.

If the latter is not possible, then the banks should be removed as far as possible from heating sources.

Coriander is often added to pilaf. The recipe for pickled cucumbers with coriander came to us from the Caucasus. Coriander or, in other words, cilantro, is a healthy spicy herb with a specific aroma that gives the dish, be it meat or pickled vegetables, a special piquancy. But, I would like to make a reservation right away, not everyone will like cucumbers with coriander. Opponents of cilantro are unlikely to be able to eat such cucumbers.

So, pickled cucumbers with coriander do not require additional seasonings like peppercorns, bay or cherry leaves. You can safely take only seeds or coriander greens. To get started, try making one or two jars of pickled cucumbers - for testing. All of a sudden you don't like it. Otherwise, the recipe for the classic cucumber pickling scheme - after boiling water, add sugar and salt, stir the marinade. Add vinegar and pour boiling marinade over the ingredients in a jar. Banks may not be pre-sterilized, but, in my opinion, it is more reliable. Well, let's start cooking.

Cooking pickled cucumbers with coriander

For one three-liter jar of cucumbers, we need:

  • 2.5-3 kg of fresh cucumbers
  • 1 teaspoon coriander seeds
  • 5-6 garlic cloves
  • 20 gr green cilantro
  • 20 gr dill greens
  • 1 young horseradish leaf
  • for brine, taking into account 1 liter of water: 1 tablespoon of salt, 2 tablespoons of granulated sugar and 50 ml of vinegar 9%

Cooking:

Step 1. Wash the cucumbers thoroughly with cold water and soak for 2-3 hours, periodically renewing the water.

Step 2. Prepare jars and lids. Wash the jars with soda and sterilize in a way convenient for you (you can do without sterilization). Wash the lids and boil for 2-4 minutes in boiling water.

Step 3. Rinse the greens and spread them on a towel, let them dry a little. Peel the garlic and divide into cloves, you can cut into slices.

Step 4. Put the cucumbers in jars, shifting with spices, and pour boiling water over them for 5-10 minutes.

Step 5. After 5-10 minutes, drain the cucumber water from the jars into an enamel pan, boil, add sugar and salt. Stir the composition until the crystals are completely dissolved, turn off the gas and add 9% vinegar.

Step 6. Pour cucumbers in jars with boiling marinade. Put the jars in a prepared large saucepan or an enamel basin on a towel, pour water. Sterilize jars with cucumbers from the moment the water boils for 25 minutes.

Step 7. After 25 minutes, remove the jars from boiling water, turn them over onto the lids, wrap them in a blanket and let them cool slowly.

Today's my recipe for cucumber salad with onions for the winter - with a very beautiful name: "Latgalian". I won’t say that this is how it is prepared in Latvia (Latgale is the eastern part of Latvia), but I know for sure from my experience that it turns out to be a very tasty preparation - cucumber slices with onions for the winter.

I confess, when I first read the recipe for Latgalian cucumber salad, I was first of all bribed by the fact that you can use large cucumbers for it, not necessarily even even ones. And it happens to me that just such specimens grow on the plot - you miss it in the garden by accident, and in a day it is already some kind of hero, not a cucumber.

Such large cucumbers are not very suitable for both food and canning as a whole, but for this salad for the winter of cucumbers with onions - quite. There will be nothing unusual in the preparation itself, everything is quite simple and fast. The only point: coriander is included in the marinade for such a Latgale cucumber salad.

This spice gives the salad a special taste, emphasizing the main ingredients very well. So do not ignore coriander when you prepare a salad of cucumbers and onions for the winter, this seasoning will not be superfluous there at all.

Ingredients:

  • 2.5 kg of cucumbers;
  • 1 kg of medium-sized onions;
  • 100 g of sugar;
  • 100 ml 9% vinegar;
  • 100 ml of vegetable oil;
  • 1 tablespoon coarse salt;
  • 3 teaspoons ground coriander;
  • 8-9 tablespoons chopped parsley

*The indicated amount of ingredients makes approximately 3.5 liters of salad.

Canned cucumber salad with onions for the winter:

Cucumbers for this salad should not be very small, you can use not quite even ones. Wash cucumbers thoroughly, cut off both ends. We cut the cucumbers into rings about 0.5 cm thick. We clean the onion from the husk, wash it. Cut the onion into large rings, disassemble into separate rings.

Put the prepared onions and cucumbers in a saucepan of a suitable volume. Add coarsely chopped parsley, sugar, salt, vegetable oil and ground coriander.

Mix all components gently.

Cover the saucepan with the salad and place over medium heat. After 1-2 minutes, when a characteristic “hiss” is heard, reduce the fire to a minimum and cook for 10-15 minutes. During this time, gently mix the salad a couple of times. By the end of cooking, cucumbers begin to change color.

Pour vinegar into the salad, mix again and arrange in sterilized jars. When laying out the salad, gently shake, tamp down to fill the volume as much as possible. Pour the reserved marinade on top.

We cover the filled jars with boiled lids and seal hermetically. Turn the lettuce jars upside down and wrap well. Let stand until salad is completely cooled, about a day.

Pickled cucumbers with coriander There are many different ways to prepare pickled cucumbers, so it's worth choosing your own recipe and proceeding with its implementation. To make it easier for yourself to find the right recipe, you must, first of all, decide what exactly you should get as a result. Be sure to remember which spices you like and which do not suit you, whether you prefer crispy cucumbers, whether the brine must be transparent. Having decided on all your preferences, you can start choosing a recipe. Among the many ways, we can separately recommend pickled cucumbers with coriander. They turn out very tasty, crispy, and thanks to coriander they will acquire an interesting taste! And such cucumbers always get a transparent marinade! For pickling cucumbers, you can safely take only coriander from seasonings, along with vinegar and classic ingredients - sugar and salt. For the first time, you can close a few cucumbers according to this recipe for a test, because, nevertheless, coriander is an amateur seasoning. You can diversify the recipe by adding other seasonings and spices to it to get an even richer taste and aroma. Pickled cucumbers with coriander A set of spices for a three-liter jar: one garlic clove in the husk (more may soften the cucumbers and they will not crunch); dill umbrella; three or four leaves of cherry, black currant; a third of a teaspoon of coriander; three pieces of lavrushka; 4-6 cloves; half a teaspoon of ground black pepper; 120 ml of vinegar. The components of the marinade (per liter of water): 120 g of granulated sugar; a couple of tablespoons of salt (take a slide). Preparation process: First of all, prepare the containers - wash, sterilize. In each jar, place currant leaves, cherries, dill umbrella, lavrushka, coriander, garlic clove, cloves. Now the washed cucumbers are tightly packed in jars. Pour vinegar into each jar. Next, it's time to start preparing the brine. A three-liter jar accounts for about 1-1.2 liters of marinade. Pour water into the pan, into which we pour granulated sugar and salt. We are waiting for the liquid to boil. Now we fill our cucumbers with hot marinade and set them to be sterilized. For sterilization in a saucepan, we heat water somewhere up to 70 ° C, put a kitchen towel on the bottom of the container (you can just use a wooden plank). We put a jar of cucumbers in a saucepan, cover it with a clean lid. After boiling, the jar should stand in the water for another fifteen minutes. After that, we take out the jar, roll it up and wrap it in a blanket. After cooling, cucumbers with coriander are stored in a dark place.

A few years ago I tried very tasty and fragrant pickled cucumbers at a party. I took the recipe and now I close several jars of these delicious cucumbers with a spicy coriander flavor every year. Try it, you won't regret it!

Cucumbers in this appetizer are cut into slices, insisted for 3 hours in the marinade, and then quickly sterilized. The taste of cucumbers in coriander is very pleasant, slightly sweet with a slight spice and barely noticeable sourness.

Composition and proportions

on 4 kg of cucumbers (it is better to take not very large ones, it will be tastier)

  • Vegetable oil - 250 g (1 cup + 1 tablespoon);
  • Garlic - 2-3 cloves (passed through a press or finely grated);
  • Table vinegar 6% - 250 g (1 cup);
  • Salt - 100 g (3 tablespoons + 1 teaspoon);
  • Sugar - 250 g (1 cup + 1 tablespoon);
  • Ground black pepper - 1 sachet;
  • Coriander - 0.5 tablespoons;
  • Small onion - 1 (cut into thin rings), but onions are not necessary.

How to preserve

  • pickle cucumbers: cut cucumbers into slices (cutting off the tips), small ones can simply be cut in half. Put in an enamel bowl or pan and add all the other ingredients. Mix well and leave to marinate for 3 hours. Stir occasionally so that the cucumber slices are evenly saturated with the released juice.
  • sterilize: Transfer the salad to prepared clean jars. Cover with boiled lids. Sterilize jars of 0.5 l - 10 minutes, 1 l - 13-15 minutes (put the jars in a pot of water, where a cloth lies at the bottom for stability, the water should reach the shoulders of the jars). Then carefully remove it from the water without moving the roof, roll it up, cool it down and send it to storage.

After sterilization, cucumber salad can be stored at room temperature, unless, of course, your home is not very hot.

It is better to lay out cucumbers in small jars with a volume of 0.5-0.6 liters, so it is more convenient to eat them in winter, so that they open and have enough salad for 1 time for the whole family. If you have a very large family, then close it in liter jars, but this is the maximum container size for a salad. Then it is necessary to sterilize 13-15 minutes
