In general, everything that was recommended for dyeing creams for cakes in Soviet times can be dyed by the herring cream I offer.

It is important to understand here that the herring itself, if it is skinless, is almost colorless and is well pureed with other products, and the resulting mass lends itself to staining. The color is not very attractive without dyes, but with the addition of the same beets or the other natural dyes I have listed above, what is needed is obtained.

Puree herring, grated beets, melted cheese and egg yolks in cream. If we see that the cream turns out to be too thick, then add a little mayonnaise. It should be about the same consistency as cake cream.

Let the cream sit in the refrigerator for about an hour. We place it in a planting bag or in a syringe. The rest depends on the set of your pastry nozzles, your skills and imagination.

I've used a tulip nozzle, and I've got such flowers.

If several hours pass before serving, then it makes sense to keep the eggs stuffed with herring in the refrigerator. If an hour or two, then both this cream and the leaves of basil or parsley are able to stand at room temperature without drying out or withering.

5. Cook the beets, you can do it in advance. You can also bake it in foil in the oven. Rub it on a fine grater. If the beet mass turns out to be too juicy (watery), then you can squeeze it slightly. Transfer the grated beets to a bowl.

Boil the beets until tender. Can be baked in the oven in foil. I always boil more vegetables for the holidays, some of them I use for salads, and some for snacks.

Now we need to separate the yolks from the whites. Separate yolks, whites separately.

My herring is Norwegian, I bought it in advance, peeled it, divided it into fillets, removed the bones and cut it. My pieces are 1-1.5 cm.

The eggs were used by the village. Yalta onions, but you can replace the usual ones, or use green onions (it will be bright and beautiful).

Salt and pepper optional. There is no mayonnaise in the photo, but I use some mayonnaise for the dressing. I have homemade mayonnaise, I made it at home, I cook mayonnaise on yolks.


Boiled eggs, peeled, cut in half. We take out the yolk, we need halves of proteins for cooking lazy herring under a fur coat.

Boiled beets, cooled. I rubbed it with a Korean carrot grater.
