Several decades ago, Italian housewives poured olive oil when cooking, as they say, heartily. Well, then it was a necessity, a consequence of the poor post-war time. The opportunity not to save on oil did not appear immediately, and everyone wanted to excel, to show their well-being. Then this excess became a habit, and until recently, all stews and baked dishes, sauces, vegetables, etc. literally floated in oil. Fortunately, a healthy lifestyle has become prevalent. And now the oil, despite its undoubted benefits and role in the Mediterranean diet, is used in reasonable amounts. However, there are still dishes in Italian cuisine that cannot be prepared with just a few drops of "olive gold". These include, for example, octopus or dried cod, or even meat stewed in a large amount of oil at a low temperature, or such squid.

STUFFED SQUID RECIPE

NECESSARY:

8 small squid (can be frozen)
2-3 slices of bread (crumb)
1 clove of garlic
1 small hot pepper
A small bunch of parsley
Salt
100 ml olive oil
1 glass of dry white wine

HOW TO COOK:

1. Prepare the squid for a start - pour boiling water over them and peel them from the film, then rinse in cold water, cut off the tentacles and chop finely.

2. Also finely chop the garlic and parsley.

3. Soak the bread crumb in a little wine, knead it with your hands, then add chopped tentacles, garlic and parsley to the bread, salt and mix well.

4. Stuff the squid carcasses loosely and secure with wooden skewers.

5. Pour the oil into a low wide saucepan, place the squid in it, add the pepper and pour in the wine.

6. Cover and simmer over low heat for 30-40 minutes, add salt to taste.

7. Serve the squid warm with a green salad and drizzle with the remaining oil.


Once upon a time, these wonderful stuffed squid seemed to me one of the most difficult dishes of Italian cuisine, but only one lesson in the kitchen with my mother-in-law and the art of squid stuffing has been mastered. The dish turned out to be delicious, easy to prepare and always in the center of the guests' attention. I recommend it not only for holidays, but also for simple family gatherings.

Ingredients for 3 persons:
1.4 squid with tentacles or 5 frozen
2.one large carrot
3.Half an onion
4.a glass of white wine
5.2 cloves of garlic
6.2 stalks of celery
7.salt
8. olive oil
9.1.5 tablespoons of grated crackers
10. A sprig of parsley.

The first step is to peel or defrost the squid.
Peel and cut vegetables:

Finely chop carrots, parsley, onions, garlic, celery and squid tentacles in a food processor, salt and put in a skillet:

Fry for 3-4 minutes. over high heat, then add half a glass of wine and simmer until tender (usually 15-20 minutes)

Add grated crackers to stewed vegetables and mix well:

Chill the mixture and fill the squid with it. Do not fill them too much, or the squid will not close.

Stick the top of the squid with skewers and pierce them with a fork in 2-3 places, otherwise the squid may explode.

Put the squid in a skillet with heated oil, add salt and pour the second half of the wine into it, cover and simmer for 15 minutes, turning once.

Then chill the squid completely and cut them cold. Reheat the squid in a skillet and pour over the sauce from the skillet before serving.

How to cook squid in Italian

  1. Cut fresh squid into separate parts: separate the head, tentacles, remove the so-called tooth from the body of the squid, remove the films. Rinse the resulting semi-finished product under running water, carefully remove all the insides remaining for some reason.
  2. Cut the squid carcass into rings about 1 cm thick, and leave the tentacles intact. Pour olive oil into a saucepan, heat, add peeled and chopped garlic, let it fry and leave its aroma in the oil. Remove the remaining garlic with a slotted spoon and add the squid prepared for frying. Fry them for 2-3 minutes, then add white wine and let it evaporate, stirring over low heat.
  3. At the end of cooking, add the juice and lemon zest, season to taste with salt and pepper and leave for a couple of minutes to saturate the squid with the lemon flavor.
  4. Put the Italian-style squid with garlic on a plate, let it cool slightly, sprinkle with finely chopped parsley and serve slightly warm.

Experiment options

If you are not very fond of wine taste, you can not add white wine. All the same, the squid will be tasty and aromatic.

To make the dish very light, the amount of olive oil can be slightly reduced.

If you prefer squid with a side dish, you can not cut the carcasses into rings, but lightly fry them, fill them with some vegetables or boiled and seasoned rice. This is how you can make a whole squid dinner.

Another great option is squid stew. To prepare such a dish, it is enough to add several types of vegetables as an addition to the ready-made squid - diced and blanched zucchini, eggplant, bell peppers (paprika), carrots, tomatoes and onions. However, you yourself can dream up and give free rein to creativity!

Squid in Italian

For those who like Italian cuisine. And it will be squid stuffed with tomatoes.

They look delicious, don't they? Well, for us, the dish sounds somewhat unusual in terms of the range of products. Cooking time: 60 minutes, calories 360. Required: 8 medium squid, 8 medium tomatoes, 1 egg, 4 tablespoons of olive oil, 2 cloves of garlic, 1 glass of dry white wine, 40 g of bread crumbs, 1 sprig of tarragon, 1 bunch of parsley , 1 sprig of sage, 1 sprig of rosemary, salt, pepper, 5-step recipe.

1) Peel the squid by cutting off the top, rinse and dry.

2) Finely chop the garlic, fry it in a saucepan with 2 tablespoons of oil, add the chopped and finely chopped tops of the carcasses, fry for 5-7 minutes.

3) Wash and finely chop parsley, sage and rosemary; add bread crumbs, egg, salt and pepper to a bowl of herbs and fry (from step 2). Stir.

4) Cut off the cap from the tomato, peel the seeds and liquid from the tomato, season with salt, fill them with freshly prepared mixture.

5) Put the tomato in the squid carcass, chop it with toothpicks, and put it in a saucepan with the remaining oil, sprinkle with chopped tarragon, add wine. Cover the pot with a sheet of aluminum foil and bake in the oven at 180 ° C for 20 minutes.

How to cook "Italian Stuffed Squid"
