In general, chicken pie is much easier on the stomach than other meats. For those who are preparing chicken for the first time, it is best to use chicken.

This recipe uses a version of the pie with kefir dough.

And for a reason, because this type of dough has many advantages: it does not stale for a long time, it is easy to digest, it contains fewer calories than yeast, for example.

However, remember: in no case should you make the dough too tight, but you shouldn't make it sticky either. To achieve the golden mean, we do not add all the flour at once, but little by little.

Now we will describe in detail all the stages of preparing a delicious chicken with potatoes and chicken according to the recipe with visual photos.

You can knead the dough for our chicken poultry quite simply and quickly. To begin with, pour a small pinch of soda into kefir, then heat the butter (or margarine) in a metal container to a soft but non-liquid state.

Then all this must be mixed until a homogeneous consistency. Then for 1.5-2 hours at a temperature of 15-20 ° C, leave the resulting dough to lie down in a cellophane bag.

Now let's start filling. Wash and peel the vegetables, cut them, cut the chicken into small pieces.

Then you need to spread out the rolled dough on a baking sheet, oiled in advance, or in a special form. The filling is usually laid out in layers:

  1. Lightly peppery and salted chicken;
  2. Potatoes, salt, pepper;
  3. Pieces of butter.

But if the chef wants to mix the contents, then the taste will not be greatly affected by this.

You can decorate with various dough figurines, as shown in the photo.

Then you need to place a baking sheet with a chicken in a hot oven and wait until the crust is browned.

After that, it remains to pull out the finished chicken and grease it with sunflower oil or an egg for beauty.

Delicate puff pastry pie with chicken, potatoes and cheese

Another chicken recipe, this time from puff pastry. Almost everyone likes products made from it, because it is very tasty and pleasantly crunches in the mouth.

But the process of its preparation is very laborious, and everything may not turn out the way you want. Therefore, it is better to buy ready-made puff pastry in the store. In addition to chicken and potatoes, add cheese to the filling to add tenderness to the dish.

Ingredients:

  • 0.5 kg of puff pastry (unleavened, yeast-free);
  • 400-500 g of chicken meat;
  • One onion;
  • 100 g of cheese (hard varieties);
  • Seasonings to taste;
  • One egg.

For the filling, it is better to take chicken fillet, this part of the poultry is cooked the fastest. Cut the fillet into small cubes, add pepper, salt or other seasoning.

Grate hard cheese and cut the onion into quarters. Mix meat, cheese and onion.

Place the resulting filling on the pre-rolled dough, leveling it well. Be sure to leave space at the edges and corners to pinch the dough.

Pierce another layer of dough over the entire area with a fork and cover the filling on top. The edges must be carefully stitched together.

You can make the edges beautifully shaped, such as ribbed or braided. On top you need to grease the pie with an egg.

Then place the product for about 30 minutes in the oven, setting the temperature to 200-210 degrees. During baking, the chicken should be covered with a golden crust.

The finished chicken should stand for ten minutes to cool down. Everything, you can cut and serve the dish to the table.

Lazy chicken - simple, fast and tasty

The ingredients for making a recipe for a lazy chicken with potatoes and chicken are as follows:

Melt margarine in a bowl until soft, add flour to it, pour milk, add baking soda and salt. Mix all products well.

Chop the chicken pulp and onion, cut the potatoes into cubes. You can add a little salt, pepper or spices.

You need to take a frying pan as a form. Grease it with oil, pour part of the dough into it, which should be evenly distributed along the bottom.

Put the filling on top, align. Pour over the rest of the dough and flatten too. Set the temperature in the oven to 180 degrees and bake the pie for an hour and a half.

With this method of cooking, you do not need to roll out the dough, pinch the edges, everything happens by itself, and the chicken is no less tasty.

Ingredients:

  • 250 g soft margarine;
  • 0.5 l of fresh milk;
  • 1 tbsp sweet sand;
  • 1 tsp table salt;
  • 2 pcs. fresh eggs;
  • 11 gr. dry yeast;
  • 1 kg of wheat flour;
  • 500-800 gr. chicken fillet;
  • 400-600 gr. fresh champignons;
  • 1-2 onion heads;
  • 3-4 tablespoons homemade mayonnaise;
  • 50 gr. butter;
  • 6-8 potato tubers;
  • 0.5 tbsp. broth;
  • 1-2 pinches of salt and black pepper (for the filling).

Cooking process:

  1. At the beginning of cooking, we start the yeast dough. We heat the milk to a temperature of 38 degrees so that it is moderately warm. We dilute yeast, sugar, salt in milk. Also add half the melted baking margarine. Cover the resulting dough with a napkin, move it for a quarter of an hour to a warm place without drafts.

    You cannot dilute yeast in hot milk, because the yeast bacteria will die from the heat.

  2. When the yeast rises with a hat, drive in the eggs, the remaining margarine, sift the flour. Stir all the ingredients with a spoon, then switch to manual kneading. Leave the homogeneous elastic dough to rise for an hour, covering it with a bowl.
  3. While the yeast dough is ripening, prepare the filling. Rinse the mushrooms thoroughly, refresh the cut of the leg, clean the cap. We cut the champignons into slices or large cubes. Peel the onion, finely dice it. We spread the onion on a hot skillet with vegetable oil, fry, stirring, until transparent and soft. Add mushrooms to the pan, mix, salt and pepper. Fry the mushrooms until all the mushroom juice has completely evaporated. Place the contents of the pan on a plate to cool.
  4. We clean the potato tubers, rinse, dry them with a napkin. Cut the potatoes into thin circles.

    To prevent the potatoes from darkening before placing them in the pie, you can pour a little water over them. And dry thoroughly before sending to the cake.

  5. Rinse the chicken fillet, dry it, cut into medium cubes.
  6. Knock down the risen dough, divide into 2 parts. We roll out one half with a diameter larger than the shape to get high sides. We put a layer of dough in a refractory mold greased with vegetable oil, form sides from the dough.
  7. Now generously grease the base with mayonnaise, put half of the potato slices on top, salt and pepper to taste. For juiciness on the potatoes, occasionally lay out small pieces of butter.
  8. Lay a layer of cooled fried mushrooms on top. Cover the mushrooms with a layer of chopped raw chicken, which we season with salt and pepper.
  9. We lay out the remaining potatoes, salt, draw a thin mayonnaise mesh on the surface.
  10. Roll out the rest of the dough so that the diameter is equal to the diameter of the mold. Close the filling with the dough, fasten the edges well. We make a hole in the center of the pie, pour in the broth.
  11. We grease the chicken pie with egg yolk, send it to an oven preheated to 180-200 degrees, bake it for 2-2.5 hours.
  12. After baking, all the liquid from the chicken may not evaporate, so after the oven we let the pie brew for another 30-50 minutes.

Also cook small portioned chicken filled with potatoes, onions and chicken meat. They are formed in the form of bags or triangles. In the center of each product, holes are made into which a spoonful of chicken broth is poured. It is convenient to take such pies with you on the road or give the kids to school for a snack.

How to make dough for a chicken chicken on kefir

  1. Let's start with the test. Pour kefir into a volumetric bowl, add soda (quicklime) and stir diligently. Throw in salt next.
  2. Melt the butter over low heat or in the microwave. Cool and pour into a bowl of kefir, stir.
  3. We introduce sifted flour in small portions, stirring the mixture each time. When the mass is thickened and becomes difficult to succumb to the spoon, put the contents of the bowl on the work surface and proceed to kneading by hand.
  4. Continuing to add flour, we achieve the desired consistency. The chicken dough should not be very dense, but soft and pleasant to the touch. As soon as the mass stops sticking to the palms, we stop adding flour. Cover the dough with cling film and send it to the refrigerator for an hour, while preparing the filling.

  5. Cut the washed fillet into small pieces. Instead of chicken breast, chicken legs can also be used - in this case, the meat must be separated from the bones and chopped small.
  6. Chop the onion finely enough.
  7. We wash the potato tubers, peel and cut into circles or small slices. It is important to chop the potatoes thinly so that they have time to soften and reach readiness during the baking process.
  8. Combine chicken, onion and potato slices. Salt, pepper and mix thoroughly.

    How to bake chicken and potato chicken

  9. Lightly knead the cooled dough. Set aside about ¼ of the dough, and roll the leftovers into a thin circle and place them on the bottom of a large heat-resistant container, forming sides along the edges. Apply a mixture of chicken, onions and potatoes to the base of the pie, distribute evenly.
  10. Since we are preparing the chicken with chicken fillet, we put pieces of butter in random order on top so that the filling is as juicy as possible (in the case of chicken legs, this step can be skipped).
  11. Roll the rest of the dough into a thin circle a little less than the diameter of the mold, place it on the surface of the chicken coop. We fold the sides of the pie and carefully fasten them to the edges of the cake. For steam to escape, we form a small round hole in the center of the hen. Shake the raw yolk with a spoonful of water - grease the surface of our workpiece with the resulting mixture.
  12. We bake the chicken with chicken and potatoes for about 50 minutes at 180 degrees. We focus on the dough: it should brown evenly. After cooling a little, cut the pie into portions and serve!

Kurnik with chicken and potatoes is good both warm and completely cooled! Bon Appetit!

Kurnik is a festive cake, which was presented as a gift to the bride's family back in Ancient Russia. From the name it becomes clear that the main ingredient in the filling of the pie was chicken. She also symbolized the fertility of a young family. Today, the pie is prepared using other ingredients: potatoes, nuts, porridge. But the most popular are the chicken and potato chicken pies. We will prepare them.

Inventory: large bowl, small bowl, grater, spoon, rolling pin, knife, board, baking parchment, cling film or 2 bags, brazier.

Ingredients

Step by step cooking

Cooking the dough

Cooking the filling

We collect the chicken

  1. Take 1 bag of dough out of the refrigerator, put it on a floured table and quickly roll it into a square layer. The thickness of the dough should be 3-5 mm. If the square is not perfect, it doesn't matter. Uneven edges can be cut off and used to decorate poultry pens.
  2. Cut the dough layer into 4 equal squares. Put 1.5-2 tablespoons of the filling in the middle of each dough piece. On top of the filling, put a small piece of butter (about half a tablespoon) or a little fatty sour cream. Then the chicken breast will not be dry.
  3. To form the chicken, you need to connect the opposite corners of the dough square and pinch the dough well along the edges so that the oil does not leak out of the filling.
  4. Repeat the same with the second part of the test. Put the finished pies on a baking sheet covered with parchment. If you do not plan to bake a large portion, you can freeze some of the dough.
  5. Drive 1 egg into a bowl and loosen it with a fork. You can add a little milk or sour cream - these ingredients will give the golden brown crust a glossy sheen. Lubricate all hens with an egg. Bake at 220 degrees for 20 minutes. After that, take out the brazier and reduce the heat to 200 degrees.
  6. Grease the hens again with an egg, sprinkle with sesame seeds and bake for 30-40 minutes until tender and golden brown.
  7. Serve immediately while still hot.

Kurniks are often decorated with leaves, braids and flowers made from unleavened dough. Unleavened dough for decoration is prepared as on dumplings: from flour, water and salt. And the decorations are formed depending on the solemnity of the occasion and the fantasy of the hostess.

The subtleties of cooking

What makes a kurnik different from a closed pie? Layers of filling and dough inside. For festive large pies, 2 types of dough were prepared: pancake and unleavened. The outer "dome" and decorations were made of unleavened water, and the filling inside was shifted with ready-made pancakes... But this is too time consuming. Here are 2 express options "for the busy":

  • Prepare pancakes, chicken, potato and mushroom fillings separately. Put pancakes and filling alternately in a split form (finish with pancake), coat with butter on top and bake until cooked for 10 minutes.
  • Take ready-made puff pastry, boiled chicken and boiled potatoes. This cake will cook in the oven in 20-25 minutes. Alternatively, for the filling, you can take yesterday's grilled chicken, baked legs and leftover mashed potatoes. And the food will not be wasted, and the new dish will turn out.

With regard to the filling there are no strict canons. Can be used:

  • porridge: rice, buckwheat or wheat, mixed with butter;
  • chicken, quail, rabbit meat;
  • any fried minced meat: beef, pork, chicken, turkey;
  • forest mushrooms (chanterelles, porcini) or champignons;
  • vegetable frying: carrots with onions, sauerkraut or fresh stewed cabbage;
  • hard-boiled eggs, chopped with onions and herbs;
  • salted cottage cheese with dill;
  • add-ons like canned corn, cheese, tomatoes, peppers, garlic arrows, spinach, and chicken liver
  • any fresh herbs (cilantro, basil, parsley, dill);
  • any spices: paprika (sweet and hot), curry, coriander, rosemary, oregano, thyme, garlic.

The main thing is that the filling should be sharp and well salted.... The filling must be prepared in advance, seasoned with butter, mayonnaise, fatty sour cream or broth. The drier the meat, the more oil or fat you need to add to the filling.

Part of the wheat flour can be replaced with rye or oatmeal.... It is also allowed to use coarse flour. But there should be more in the proportion of white flour. Otherwise, the gluten-free dough simply won't hold its shape.

Meat pies were always cooked closed.... The edges were pinched to keep the filling juicy, and a small hole was left at the top. Hot broth was poured into it, if necessary.

How to serve kurnik
