Select a bowl in which to knead the dough. Pour sugar there, put sour cream and soda. Mix everything thoroughly. You can add sugar to your taste, but it tastes better when you have more of it.

Now it’s the flour’s turn, add in portions, making sure to sift the flour. And mix thoroughly.

We used 3 cups of flour in the bowl. Then sprinkle the table with flour, take the dough out of the bowl and knead it on the table with your hands, adding a little flour.

The finished dough should not stick to your hands, so you need to adjust the amount of flour by eye.

Now we make a ball, do not press it too much. Place in the refrigerator for 20 - 30 minutes, let it brew.

It is easier to divide the dough into two parts. Then roll out the first part with a rolling pin. Just not too subtle.

Now cut the rolled out dough into equal parts into triangles. It is very convenient to do this with a pizza cutter, but you can also use a simple knife, the main thing is that the dough does not bunch up when cutting.

Now let’s prepare jam, you can use any jam, preferably homemade. Place a little less than a tablespoon of jam on each triangle on the wide side, as in the photo.

Now we wrap our triangles with a roll, starting from the wide end. We slightly crease the edges from the sides.

Sprinkle flour on a baking sheet so that the homemade bagels do not stick, lay them out and leave space between them. The jam will leak out during frying, there’s no getting around it.

Preheat the oven to 180 degrees and bake for 15-20 minutes until done.

  • I want to start by choosing the toppings. The main thing is that the jam does not leak out during baking, so choose it according to the principle - the thicker the better. You can also use jam. It doesn’t matter what fruit or berries the filling is made from, use your favorite jam. If you buy this product in a store, then carefully look at the composition. It should be as short as possible. As a rule, the composition should contain fruits or berries and sugar, sometimes there may be water. It is necessary in the initial stage of cooking not very juicy fruits, such as apples. But there should be no starch in the composition. As you know, starch makes the product thicker, but jam made according to all the rules is itself very thick. Therefore, if the manufacturer adds starch, it means the jam was prepared using the wrong technology.
  • Always choose only the highest grade flour for sweet baked goods. The dough made from this flour is the most tender and rises easily during baking.
  • The fat content of sour cream and butter does not matter. The main criterion when choosing such products is naturalness.
  • Shortcrust pastry bagels can also be made with margarine. Their taste will not suffer from this.

1. In order for the baking to turn out great, you need to choose the best products - fortunately there are only three of them! Take well-chilled butter (in this recipe it can be replaced with high-quality margarine for baking) and, finely chop it, combine it with pre-sifted wheat flour. If you are mixing the dough by hand rather than in a food processor, pulse the butter and flour until the dough base is smooth and resembles fine crumbs. Next add cold sour cream. Let's choose 30 percent or homemade - the fattier the better - it will make the dough elastic and tender.


2. Combine all three components together and knead a soft dough. Wrap it in cling film and put it in the refrigerator for 60 minutes. This step is important because it will help the dough not spread and form nice bagels.


3. After the time has passed, divide the finished dough into 4 equal parts, and while we are working on one of them, return the rest of the dough back to the cold.


4. On a wooden board, roll out the dough into a thin circle, up to about 2 mm thick, and cut it like a birthday cake into 8 equal segments. Place a teaspoon of jam or jam on the base of each of the resulting triangles. I chose plum because it is both sweet and has a pleasant sourness, which will not make the baked goods overly cloying. Roll the bagels from the edges to the center.


5. Place the bagels on a baking sheet covered with parchment and place in the refrigerator for 30 minutes. Having cooled well, bake until golden brown in the oven at a temperature of 180?.


6. Such a simple but tasty dish does not need additional decoration. Just sprinkle the bagels with jam with powdered sugar before serving. Now call everyone to the table and pour the tea!
