For some reason, when it comes to meatballs, childhood is definitely remembered. But really, if you don’t always force a child to eat a cutlet, then the kids perceive delicious meat balls with a bang. So the mothers went to the trick - they sculpted meatballs.

They can be fried in a pan, and then stewed, baked in the oven, steamed. In any case, they turn out tender and juicy. Sometimes bread, cereals (usually rice), vegetables, and beans are added to minced meat. We offer to make meatballs with pumpkin and minced meat, baked in the oven.

Ingredients

  • minced meat - 400 g;
  • breadcrumbs - 2 tbsp. l.;
  • chicken egg - 1 pc.;
  • fresh parsley - to your taste;
  • pumpkin pulp - 400 g;
  • seasonings and spices - to your taste;
  • onion - 1 pc.;
  • vegetable oil - 2-3 tbsp. l.;
  • tomato juice - 2 cups.

How to cook pumpkin meatballs with minced meat

Choose any minced meat that you like best - pork, beef, chicken, turkey. It is always preferable to mix two types of meat. If you want to get diet meatballs, take chicken or turkey breast and twist it in a meat grinder.

Add breadcrumbs and a raw egg to the minced meat.

Grate the pumpkin pulp on a fine grater, put half in the minced meat.

Rinse the greens, dry and finely chop, send to the rest of the prepared products.

Sprinkle any spices and seasonings that you usually use when cooking meat dishes to your liking.

How to cook meatballs with pumpkin

Let's start cooking by grinding the chicken fillet into a homogeneous minced meat - in a meat grinder or a blender bowl. You can also chop the meat with a sharp knife into very small segments (similar to chopped meatballs).

At the same time or after, grind one onion in a blender to the state of gruel. If you cut the onion by hand, try to chop it very, very finely so that there are no large pieces left. Add it to the minced meat, mix until smooth. We leave the second onion for vegetable gravy for meatballs.

We take a pumpkin - we clean it from the peel and seeds, rub it coarsely. We divide a portion of the crushed pumpkin mass in two and send one half to the minced meat. The other half will be waiting in the wings to prepare the gravy.

We fasten the minced chicken with an egg and oatmeal (hercules). Their viscosity is quite enough to ensure that the meatballs do not fall apart during stewing in a pan.

Season with salt and your favorite spices and fragrant dried herbs, in our case, we used dried dill and seasoning for chicken cutlets, with the addition of chopped garlic cloves.

Mix again to evenly distribute the seasonings and leave the finished minced meat alone for 15-20 minutes, putting it in the refrigerator.

This should be just enough time to prepare the gravy. For her, we immediately take a pan of a suitable depth, since the meatballs will be stewed here.

From the chilled pumpkin-chicken mince we sculpt medium-sized round meatballs, put them in a pan, slightly drowning them in the gravy.

Simmer the pumpkin meatballs over low heat, covering the pan with a lid. After 15 minutes, they must be turned over for more even cooking, and then cook for another 10-15 minutes.

The dish is prepared in its own juice, turning out not fried, but, moreover, hearty and quite fatty. However, fat content depends on minced meat. If you take pork, it will be very high in calories; if beef and a little pork - less, if from chicken breast - the dish will turn out to be dietary. It is best not to buy ready-made minced meat, but to twist the meat yourself. So you will be sure that there is no fat and skins in the minced meat.


Ingredients:

For 2 dozen meatballs:

  • Minced meat - 400g;
  • Raw pumpkin - 350g;
  • Onion - 1 pc.;
  • Egg - 1 pc.;
  • Semolina or breadcrumbs - 2 tablespoons;
  • Hard cheese - 50 g;
  • Garlic - 1-2 cloves;
  • Salt - to taste (about 0.5 teaspoon);
  • Ground black pepper - ¼ teaspoon;
  • Turmeric - ¼ teaspoon.
For gravy:
  • 1-2 tablespoons of vegetable oil;
  • 1 large onion;
  • 1 medium carrot;
  • 0.5 l of tomato juice (can be replaced with mashed tomatoes, or tomatoes in their own juice, or 2-3 tablespoons of tomato paste diluted in 2 glasses of water);
  • 3-4 tablespoons of flour;
  • 0.5 teaspoon of sugar;

Instruction:

Let's make gravy. Heat sunflower oil in a frying pan. Finely chop one onion and sauté in oil over medium heat, stirring occasionally, until translucent and soft.

After cooking, do not immediately remove the meatballs from the pan, as they may fall apart. After a short cooling, the meatballs will become denser.
